Hello everyone I'm Bebe
Today I'm making a braised fish maw with winter mushrooms
A festive ingredient for Lunar New Year
I've added some canned baby abalone
Very convenient
It's easy to do—let's get started right away
First prepare the fish maw
I'll use ordinary small pieces
About three or four pieces
Soak them in clean water first
Let them soak overnight
These have already been
soaked overnight and the water
changed with two slices of ginger and one
tablespoon of Shaoxing wine added then brought to a boil for two minutes—this is how it's done we put the lid on
Don't worry about it—just let
the water cool naturally
Leave it soaking overnight It'll be ready to cook the next day
If you haven't eaten it yet
take out the bird's nest portion
it into airtight bags and store it in the ice cube tray
Take it out to thaw when
ready to use—then it'
s ready to cook These have already been soaked
and doubled in size Cut
the soaked fish maw into
chunks larger pieces look better on the plate
Here are some dried mushrooms rinse them
briefly then soak in
clean water until soft
After soaking reserve the
mushroom soaking water
for later use cut off the
mushroom pieces and save
them for stewing I'll use the mushrooms rinse
them briefly with cornstarch
then discard the water
Rinse one more time to wash off any remaining residue
Marinated dried mushrooms
Add a little salt sugar and oil
Mix well and set aside
Marinating the mushrooms makes them much more flavorful
Also just a small piece
of Hua Huo ham is enough—
adding two small chunks
enhances the dish's aroma
significantly if unavailable it's fine to omit
it Additionally prepare four or five red shallots
Four or five slices of ginger a small amount of
thick slices use one of
them to cut into small pieces
You can start cooking as soon as the ingredients are ready
Start by heating the pan
add a little oil then
sauté the red onions and ginger slices first
Then add dried
mushrooms keep the heat
high and stir-fry for a few moments
Add more Jinhua
ham and ginger bits
One can of clear
chicken broth One tablespoon of oyster sauce
Cover the surface with
a little of the winter mushroom broth and simmer
over low heat for 30 minutes
Thirty minutes later you
can add the bird's
nest then pour in the dried mushroom
soaking water—add a little
more water if needed until the liquid just covers the
ingredients then add half a spoonful of Shaoxing wine
Cover and simmer over low heat
for an additional 20 to 30 minutes
Thirty minutes later check
if the fish maw is soft
Canned baby abalone
Reserve the juice first
Bring to a boil taste and
adjust to your preference
then add small abalone
followed by
cornstarch slurry
The braised fish maw with winter mushrooms is ready
Place a bed of fresh greens underneath before serving
