This Mediterranean Sea Bass recipe is a perfect example of how some of the most memorable dishes are born from spontaneity rather than strict planning. Simple, seasonal ingredients come together effortlessly to create a dish that feels both comforting and elegant. This dish proves that good cooking does not always need complexity.
This recipe is inspired by Mediterranean flavors, combining tender sea bass fillets with risoni, cherry tomatoes, fresh thyme, olive oil, and a bright touch of lime. Everything is cooked in one pan, allowing the flavors to build gradually while keeping the fish delicate and moist. The result is a light yet satisfying seafood dish that is full of freshness and balance.
This dish takes only about 20 minutes from start to finish! Ideal for both busy weeknights and effortless hosting. It is the kind of recipe that looks impressive enough to serve to guests, yet simple enough to become part of your regular rotation. You can easily swap the protein or adjust the aromatics to your taste. A versatile, go-to recipe for anyone who enjoys quick yet flavorful cooking.

Hi everyone! Welcome to Funforno!
In today's episode I'm sharing a very quick one pan delicious meal.
It's funny how some of the best food you cook is usually the most spontaneous
and this is one of them.
Also like the chicken and asparagus dish from the previous videos.
Okay, I don't usually like to give strict time frames like 10 minute dinner or 20 minute meal
but honestly this one really does take about 20 minutes
and the best part is it looks and tastes so good
I fillet my own fish and portion my own chicken
but as I always say you can absolutely buy everything already prepped.
When I have the fillets ready I start slicing the onions and garlic and halving the tomatoes.
Then brown the onions in olive oil, add garlic and the risoni,
letting the risoni toast slightly as well.
After that I add the tomatoes and thyme,
let everything cook briefly before adding chicken stock to cook the risoni.
Some recipes I plan carefully, think through every step
and other times I just start cooking, decide to hit record
and if I manage to capture some good shots I turn it into a video and share with you.
Like this one.
Of course there are also things that I don't share
because sometimes recipes don't turn out the way you imagine
and that's just part of the cooking.
Once the liquid is almost fully reduced and the risoni is cooked,
I squeeze in some lime juice, place the fillets on top,
zest a little lime over them, season well,
close the lid and let everything steam together for about 5 minutes.
Sea bass cooks very fast so keep an eye on it.
When it's done I finish it with chopped parsley,
you can also drizzle a little extra virgin olive oil if you like.
I'm quite confident that if you try this it will become one of your go-to recipes,
you can easily swap the protein or adjust the flavours to your own taste,
just like with any recipe on this channel.
Always remember to taste and adjust the seasoning
and don't forget to remove the lime sprigs before serving.
And yes, don't put them on the plate like I did here.
Afiyet olsun!
