If you’ve ever had legit Korean kalbi, you know it's delicious. Sweet, savory, a little sticky, a little smoky. These ar absolutely built for live fire cooking. Today we’re taking that classic flavor profile and putting a Meat Church spin on it.
We’re starting with cross-cut beef short ribs — thin sliced across the bones so you get all that beautiful marbling and maximum surface area for flavor. These aren’t low-and-slow ribs. These are hot-and-fast, grill right over live fire of Meat Church charcoal and caramelized to perfection.
I’m building a traditional-style kalbi marinade with big umami from soy sauce, sweetness to balance it out, fresh garlic, and just enough heat to keep things interesting. The key is letting those ribs soak up that marinade so every bite is packed with flavor before they ever touch the grill.
Then we’re firing up the grill with Meat Church charcoal and cooking these directly over the coals. The sugars in the marinade hit the fire and create that sticky, smoky bite that’ll have you eating them straight off the butcher block.
This cook is fast, aggressive, and perfect for a weeknight or feeding a crowd. Throw them on a platter, sprinkle with green onions, and watch them disappear.
