Hello everyone and welcome back to lounging with Lenny. My name is Lenny and today I'm making
eggnog. Very creamy and delicious Christmas drink. So stay tuned and enjoy the video. Thank you.
The holiday time is here so it's a perfect time for eggnog. I'm starting with separating eight
medium eggs. If you're using large eggs you will need only six of them. So separate egg yolks from
egg whites in a different bowl. Please subscribe to my channel, press the bell and press notify me
to get notified about my new videos. The eggs are separated some of the egg whites I will use later.
Add one cup of sugar into the egg yolks and whisk it for about two minutes until it gets lighter
color. Add three cups of milk, one and a half cup of heavy cream and stir it so everything gets
incorporated. Take a pot, put it on a stove. Make sure not to turn it on yet. Transfer your eggnog
mixture into the pot and then turn on the heat on low. Add two teaspoons of vanilla extract.
Stir it constantly until it reaches 170-175 degrees Fahrenheit. Make sure not to simmer
or boil it. The mixture will get a little thicker when it reaches desired temperature.
Remove the pot from the heat and season it. Add two teaspoons of ground ginger powder,
one teaspoon of nutmeg, one teaspoon of cinnamon, one fourth of a teaspoon of ground clove.
Mix it well. Add one fourth cup of rum, brandy, bourbon or cognac, whatever you prefer.
This step is optional. Cool it down on the ice bath for about 15 to 20 minutes.
This way the temperature of the eggnog will drop fast. And now it's safe to put in the fridge.
Cool it down for two to three hours in the refrigerator. While it's cooling down,
I'm working on the egg whites. Making a meringue. Take three fourth of a cup of egg whites
and whip it with a whisk or a hand mixer. When you see that egg whites become a little thicker,
add one teaspoon of sugar and whip it until soft peaks or it looks like old school shaving cream.
Transfer the meringue into the eggnog mixture. Mix it until fully incorporated.
Take a look how beautiful it looks. Transfer the eggnog into the glass.
Add some ice cubes and top it with some ground nutmeg.
If you want you can add some more liquid directly into the cup. Enjoy!
