Here are the dry vegetables, no salt, only the taste of vegetables.
Salmon chocolate, ricotta cheese and nuts, pistachio and veal pate, a cream of bufala.
Inside we have a classic russian salad with mayonnaise, capers, carrots, potatoes and tuna
fish. We revisitation and close it with the 2d skin sugar, aromatized with capers. This is our
seaworld salad too. We keep the flowers and the color of the fish but we change the shape.
The raw meat which is battuta, basically battuta in italian means that it's cut by hands
and it's a particular meat from Piemonte which is called Fassona Piemontese. Then we serve it raw
since it's very very soft that's why we serve it like this with some black truffle, a salad made
with asparagus and sunchino. In Italy we have two of the best prawns you can find. One in Sicily
is the red prawn and one the purple is in Liguria. For us it's the best one. This one comes in every
day fresh and then we cook steam very quickly and then we season with pear, gin and lime. We put
also a little bit of bottarga of tuna, a little bit of sunchino salad and one twill of coriander
and on the bottom there's a coriander puree. It's just a coriander, we get frost with the nitrogen
okay and then we blend and make a cream with just coriander. So if you don't like coriander
it's a problem. Another classic of our chef which is an egg yolk fried accompanied with the cheese
water. Basically it's a water made with pecorino cheese and parmesan cheese. We call it water
because we took out all the fat of the cheese and we serve just the real taste of the cheese
and then with some fava beans. So here we have the marinated egg yolk spaghetti with plankton
which are a spaghetti just made of marinated egg yolk. We marinate the egg yolk for six hours
with salt and sugar. After six hours it becomes much drier so we can work on it. We mix it with
the plankton and then we make spaghetti because it basically becomes like a dough and we serve
it with some almond milk and lobster. Here we have the risotto which is a risotto alla marinara.
Alla marinara in Italian is a sauce made with the tomato, garlic and parsley. In this case we made
a classic tomato risotto with some garlic and parsley sauces. We have the kale that is filling up
with bread, paprika, spice and the fat of the pork. Wild berries dessert
accompanied with white meringue and wild berries fruits.
