Hello everyone and welcome back to Van Cuyen's youtube channel.
For a long time I stir fry broccoli I will blanch it in boiling water.
This way is very cumbersome. And it also takes time and effort.
Applying a restaurant recipe today Van Cuyen shares a delicious restaurant dish with you.
I make this dish very quickly. The broccoli is cooked crisp and tender.
But it's not mushy nor is it tough. And it stays green for a very long time.
After stir frying if I don't finish it. I can leave it until tomorrow and it will still be green.
And Van Cuyen has tried it. The shrimp is flavorful and so is the broccoli.
If any of you are interested I will stir fry it right away.
The stir fry sauce is very delicious. Now let's get started.
This is broccoli I choose the young kind. Meaning the broccoli is small not yet bloomed.
It's green not yellow. Broccoli is very good for health.
I cut off the stem like this Van Cuyen uses 320 gr.
Don't throw away this stem. Van Cuyen will share many delicious dishes with you.
Made from this broccoli stem. Then I will soak and wash it clean with salt.
Or baking soda to clean it. So that any worms inside will come out.
And then I will split it. Cut it in half or split the stem like this.
To make it absorb flavor easily. If it's large I'll split it in half.
I will set it aside. Next is shrimp.
You can use large shrimp. Van Cuyen uses shrimp size 71 90ths.
Which Van Cuyen finds to be just right. 300 gr.
Fresh shrimp would be even better. Van Cuyen uses frozen shrimp.
This is shrimp size 26 30ths which Van Cuyen also finds delicious.
But they are very large. He'll use these shrimp for other dishes.
Wait for the ice to thaw slightly then rinse quickly.
And to make the shrimp fragrant I add 1 tablespoon of white wine.
It also helps the shrimp turn red. Then I mix well.
Because these shrimp, usually don't turn red when stir fried.
Because they are white shrimp. The shells are removed.
This is the wine Van Cuyen usually uses. White wine is fine.
Then I have 3 large cloves of garlic. Shrimp and broccoli go well with garlic.
Then I'll place it to release. The aroma then mints it finely.
Like this it's ready. I have 2 stalks of spring onions.
I'll cut off the white part. And set it aside.
Then I'll cut the green leaves into pieces. Or mince them.
If you have bell peppers. Or red bell peppers that's fine too.
Van Cuyen only has this non spicy pepper so I am using it.
And remove the seeds. After quickly rinsing the shrimp.
I'll put them in a bowl to marinate. 1 teaspoon of oyster sauce.
Then 1 teaspoon of sugar. Then 1 teaspoon of sugar.
Mix well to make the shrimp fragrant then set aside.
No need to marinate. This dish is made very quickly.
This is the fried garlic oil. That Van Cuyen shared before.
Now I'll take 1 teaspoon. And mix it evenly.
Remember to mix the seasoning well. And then add the garlic oil a little later.
So it doesn't interfere with. The marinating process.
Now I'll add 1 teaspoon of cornstarch. Because if the frozen shrimp isn't treated properly.
It will easily release water. This will cause the shrimp to shrink.
Become dry and lose its sweetness. Well use 1 teaspoon.
Of cornstarch. Mixed with 2 tablespoons of water.
Whisk this until dissolved. This will be used later to thicken.
The sauce. So our stir fry won't be dry.
Add a little cooking oil to this bowl. To prepare the seasonings for later.
So they don't stick to the bowl. I recommend using 1.5 teaspoons.
Of oyster sauce which is half a tablespoon. Then 1 teaspoon of dark soy sauce or premium
soy sauce. Using these will make it look like restaurant style.
Then 1 teaspoon of sugar. This spoon holds about 6 grams.
This is the oyster sauce bottle. And this is the dark soy sauce bottle.
If you don't have these you can substitute with regular soy sauce.
But these will taste better. Now let's stir fry.
Heat a pan and add. 1 tablespoon of cooking oil.
Wait for the oil to heat up. Remember to use plenty of oil.
Restaurants use a lot. This makes the dish glossy.
Now add half of the minced garlic. Save the other half.
Also add the white parts of the spring onions. Remember to save the other half of the garlic.
Then stir fry quickly until fragrant. Once it's very fragrant you don't need to brown it.
Lower the heat to medium. Add the broccoli.
Stir fry until the broccoli is coated with oil. Make sure the broccoli is evenly coated with oil.
At this point add. 1 eighth teaspoon of sugar.
And 1 eighth teaspoon of salt. Mix well.
I want to emphasize this point. The secret is.
That once the broccoli is coated with oil. Then you stir fry it.
This way even if the broccoli is kept until the next day it will still be crisp.
That's the secret. This step means you don't need to blanch it.
As you can see. Once it's evenly coated with oil like this.
And the garlic is also fragrant. Then add 1 third cup of water.
Which is about 80 milliliters. Turn the heat up to high.
And cook for about 1 minute. After 1 minute check.
You'll see the stems. The broccoli stems starting to look tender like this.
And the florets are tender meaning they are cooked.
Here. This is what cooked looks like.
Don't overcook it. Open the lid stir and if the liquid is slightly reduced like this.
Transfer it to a plate. It's cooked now.
This is because well stir fry it again later.
Don't overcook it or it will become mushy and lose its flavor.
Add 2 teaspoons of cooking oil to the pan. The pan is still hot.
Add the remaining garlic. Don't wait long.
Add the shrimp immediately. For the shrimp.
Don't stir fry. Just spread them. Into a single layer in the pan like this.
When you see. Them turning reddish orange then you can stir them.
This way the shrimp won't release water. Retaining their sweetness and tender texture.
And the shrimp meat won't become dry inside.
Now add the cornstarch mixture from earlier. To maintain the meat's sweetness.
And it doesn't dry out the shrimp meat. Inside.
Now I will add the flour mixture from earlier. Ready to stir fry and serve.
When we add shrimp like this it will coat them in a layer.
Keeping the shrimp tender. Restaurants often add baking soda too.
But for home cooking I don't recommend it.
Now let's add the broccoli. And the green onions.
You can see the broccoli. It looks cooked.
Because it will continue to cook after being removed from the heat.
At this point well add the seasoning mixture from earlier.
And stir everything together. This way the shrimp and broccoli.
Will be well seasoned. And this stir fry method won't release excess water.
Ladies and gentlemen. See how vibrant green it is.
No water released at all. Finally ill add the remaining green onions.
Give it a quick stir and it's done. Plate it up.
A quick and easy meal for rice. Fragrant and nutritious.
But if you don't know how to cook it. Your broccoli might turn brown and unappetizing.
