Strawberry Chocolate Yoghurt Bark

This is a lovely little frozen sweet treat you're going to want to make over and over again. It's a
strawberry yogurt bark and it is absolutely delicious. Let's kick off by getting our dark
chocolate melting on the stove. You want about 100 grams of dark chocolate. It's got all of those
beautiful antioxidants, which we love in health, and a spoonful of coconut oil, just a teaspoon,
to help the chocolate melt together a little bit. You can honestly do lots of different variations
of these sorts of barks. Strawberry is my favourite because you've got that beautiful
pop of sweetness from the strawberries, as well as lots of lovely vitamin C. And it's a great way
to get your fruit into your snack, but to balance it beautifully with things like yogurt and a
granola too. You want to be slicing the strawberries up thin enough so that when you actually lay them
into the tray, you're not trying to chomp through big frozen strawberries. You've got a nice,
lovely thin layer because it's a layered snack. That's melted beautifully. We'll turn that off
the heat and then we'll start our first layer with our strawberries. So by slicing the strawberries
around three mil thick or so, you'll have enough, as you can see, to lay the base of the tray.
So you can kind of go any direction and pattern that you wish, have a bit of fun with it,
but you just want to make sure that the strawberries are tucked in nice and tight
so that when you pour the yogurt layer on, you're not having too many gaps that
the yogurt's going to seep through and you've got that beautiful base with the strawberries.
There we go. So I've tucked enough of those strawberries in. Fill in a few gaps. A full
fat yogurt is what you want here so you have that lovely richness in it. Just put a few
dollops of the yogurt around the pan on top of our strawberries and then we're going to very gently
spread it over the strawberries so we're not turning them into a strawberry yogurt mash,
but a bark instead. We'll use our little spatula. This is a treat honestly for anyone, but it's one
I especially love to be able to whip up in an afternoon so that my children can come home and
have something absolutely delicious and exciting too. Healthy food should be exciting. That way
you're more motivated to eat it. There we go. So you can see it's not an especially thick layer
of yogurt and that's for a reason because we want this to essentially have a bit of a
snappability as such in the bark. Then we've got our gluten-free granola. It's a cacao coconut
granola and that's going to add in the crunch factor in this little snack. It's made with a
mix of really beautiful ingredients. We've got coconut, nuts, seeds, buckwheat. We have half a
cup or so of this. Just sprinkle it around and you can use a little bit more as you wish, but it
really is a lovely way to balance the snack. Because we're thinking about more than it just
being tasty and sweet, we want to have some energy in our snacks. So we'll get a little bit more over
the top. Pretty happy with that. Yum! Looking delicious. Now for our chocolate. A little drizzle
of the melted chocolate. It's essentially a frozen yogurt muesli bar as such, but more fun.
And we can drizzle our chocolate over the top. So you can see there's a really great balance
of different ingredients. So lots of variety, which is what we're after from a nutrition
standpoint. So we're going to get a little bit more chocolate over the top and then we want to
get it into the freezer for about four hours or so and then it'll be ready. Set to perfection.
Let me get it out like this so you can really see how it's become the bark. Which also means you can
cut it if you wish, but I just like to break it off to serve it up. So it means you can break it
off, keep it in the freezer like this, or if you're serving a few pieces up to some people
or your children or just for you, you can break off some nice big pieces of the bark, plate it up
and tuck in. There's lots of different colours, flavours, nutrients, got protein from yogurt,
some nice live cultures, good sources of grains from our gluten-free granola
and those delicious strawberries with the antioxidant-rich chocolate too. My favourite.
