Welcome to another episode of... oh let's try that one more time.
Welcome to another episode of the Epic Family Road Trip. The Empty Nest Edition.
They say if a tree falls in the forest and no one's there it doesn't make a sound.
Look at the size of this tree and it's all, I mean the whole tree, the whole weight of the tree is
hanging over mid-air. And all the root system is over this way into the ground. It's very
it shows you how strong those roots are. You have such long strides.
These trees come down they really explode if you see that stump over there. Man that thing's
shredded. But uh we just went out to out to the Three Sisters at the end of the trail. It's about
a kilometer and a half, just under a mile. But it's a pretty good hike through old boardwalks
but also some creek beds and so on. Yeah to put your hat backwards the trees are so big
to look up at them. This is amazing. It is kind of hovering around what? Zero. Zero. So the
boardwalk is super slippery. Yeah. How much for ice? 32 Fahrenheit. Check this out guys. Unbelievable.
Six feet six four.
Oh thank you. So I'm going to ask you guys a question. Do you hike with walking sticks?
I don't really like to and that way I fall a lot. Peter doesn't but he catches me.
Walking sticks. I love them. I never go for a hike without them but
Carol sometimes uses them but most of the time not. It's personal preference. What do you guys,
what's your feelings? Leave a comment. Hiking is awesome as a couple because sometimes you
can go at your own pace, have a little space, some quiet, let your thoughts kind of go
and not talk. Just let yourself be in nature and put your thoughts upward.
Thinking of the kids a little bit but trying not to right now. Just trying to enjoy being out here
with the fresh air. It's so fresh it's almost overwhelming. All the oxygen. So this is the tree
we're here. Wow. So like I was saying, talking about just trying to keep your thoughts quiet
and your mind from racing and just enjoy being outside. The little things.
But I guess with Valentine's Day coming up, the kids away and all this fresh air,
I'm just super thankful. I'm thankful for all the kids do.
And for Pete for taking us on this journey. I love you Pete. You always think of us first,
never yourself. You make it so good for us and all of you. I'm thankful for you,
for your friendships and for just coming along with us. We have so many friends.
So much to be thankful for.
Kids, I love you. I hope you have a good Valentine's Day. I have a little care
package coming. Lots of sweets and hugs and kisses. Reality versus Instagram.
Sweating, breathing hard. It's fun. It's just epic. All right, we made it to the Knit Knot
Provincial Park. It's user-maintained, so there's nothing or nobody here. Free camping.
A couple of beautiful sights all along here, all along the river. We're going to probably pick this
one. It seems very peaceful and quiet. We're just going to position in the right spot. I'm trying
to figure out... this tree doesn't look too good. Maybe on that side of the tree. And it should be
a very quiet night. And this area is known for some big elk herds and we're hoping to see some
elk again. Setting up in the dark again, but I think we found a nice level spot, so we're happy.
This time the tent is actually dry. We've had a couple of really nice dry days
and that's always a nice thing.
You have Daniel's blanket and you have your blanket.
Sleeping in Caroline's room. That is such a good smell. Essential oil. Oh, smell that.
Smells like up north hot tub. Cedar hot tub. Western red cedar.
Make some kindling. Get a bit of a fire going tonight and then leave it but kindling for
tomorrow morning so we can get it going when it's chilly. So what we're making tonight is
jerk chicken. It's a very simple but delicious meal. So what we did was just
buy some store-bought jerk sauce and marinate it, the chicken, all day. 24 hours if you can
keep it refrigerated. And then you get the chicken out, heat up your pan, and just fry it. And then
what we'll do is chop it up into pieces. And you've got yourself some delicious Jamaican jerk
chicken. And Carol also made a broccoli salad which we'll show you. And mix those two together
and you got yourself a delicious camping meal. All right so I've chopped it all up nicely
and now it's just a matter of letting it simmer on low heat for as long as you can stand it
without wanting to get into it because it smells so good. Well guys I hope you enjoyed today. We
sure enjoyed it hiking down to the big trees and they were pretty spectacular. There's something
special about being surrounded in those big giants. But we're going to get into this Caribbean
jerk chicken and broccoli salad. I know it's cheating a little bit but we always use the
billows to get a fire going. But these little fans we got these from Big Tent Outdoors. But
check this out if you're trying to get your fire going in no time. Look at that. If the wood's a
bigger fence that we use for condensation in the tent you can just set that up beside the fire and
get it roaring. Thank you my love. So as you guys know I've been having a hard time keeping my cast
iron from rusting. So I kind of did some research and I found out that if you put it in a paper bag
it keeps the moisture kind of out like this. So everything I wrapped everything in it.
So you can see the rust isn't as bad and I put a paper towel in to keep airflow
and you put some charcoal to keep the moisture out. So far so good. Some of you saw my story of
it just being solid red. So this is a big big improvement. What's that moss? What is that? Oh a piece of wood.
Roots. Oh get that root. Good boy. Carol's making roast beef philly cheese stuffed peppers and we're
gonna do the roast beef over the fire. We're gonna cut some of these shoots off this old stump and
make kind of a spit for the meat. Let's give it a try.
You helping Linda? Take off the twigs yeah? Good. We're going to be offering these little guys
as well. It's a little bit different than the other knife. It's just a basic utility knife.
I'll let you know when these are available with the family road trip logo on them.
Okay that ought to do it. We'll get the meat on there and then I'll cut crosses.
Good spit for the meat. I'll use this for the cross bars. All right that's just a piece of
inside round roast beef and we made a little skewer for it. We're gonna get it over the fire.
Get some heat on it. So I just got a couple of rocks to prop it up. I need them to weigh more
than the meat. Then we'll just balance it up over the fire and we can always lower it closer or
raise it up based on where we position the rocks. I just left the dutch oven over there
so it can start warming up getting ready for dinner. I think the roast is almost done.
Maybe five more minutes. We'll start letting it rest and then we'll cut it up and put it in our
All right so we just took the roast beef off and we're gonna let it rest. I think it's cooked
perfectly. It smells delicious. It looks really good. So now we're just gonna prep the peppers
and get them ready to put in the dutch oven and cook up our Philly cheesesteak roasted red peppers.
Let's add a slice of provolone. Yes put one on the bottom and then one on the top right before
they're done. So you've got onion, mushroom, garlic, roast beef, provolone and red bell peppers.
Super simple. Wait. Okay. Good boy. Good boy. Delicious and it smells amazing.
Wow let's cut into it. Let's see what we got here. It's a piece of art. I don't want to mess with it.
So good. Good job man. That pastry was delicious. Flaky on the outside and molten in the middle.
There's Nutella with pistachios which was crunchy and flavorful. What a special treat
especially by a camp bar with a cup of coffee. Thanks for making it babe and happy Valentine's.
I love you.
We had an awesome sleep by the river there. Very very comfortable place to spend the night.
It snowed a little bit last night which made it very cozy. Just a skiff and now.
Yeah we're heading into town to go send a Valentine's hair package for the kids.
Super cozy and I hope you guys are having a good weekend with all your loved ones.
