Simple, comforting, and full of natural goodness, this classic Chinese home dish is perfect for everyday meals, light dinners, and healthy eating. It’s quick to enjoy, nutritious, and loved by both kids and adults.
Hey guys! Today I'm sharing a super delicious home-style stir-fry using one bunch of celery.
It takes just a few simple steps to make and both kids and adults love it.
Once you learn this, you'll definitely need more rice for the family.
First, prepare a fresh, large bunch of celery.
Place the cleaned celery into a big basin, pour in enough water, then add 5 grams of baking soda.
Stir it well with your hands to fully dissolve the baking soda,
then let the celery soak completely in the baking soda water for 10 minutes.
While the celery is soaking, let's prepare the side ingredients and seasonings.
Grab a piece of marbled pork shoulder. It has the best texture.
Lean but not dry, fatty but not greasy.
First, cut the pork into evenly thin slices.
Next, take a piece of washed ginger and slice it thinly.
Peel a few garlic cloves and slice those thinly as well.
By now, the celery should be done soaking. Go ahead and wash it thoroughly by hand.
You'll notice that all the hidden dirt and tiny eggs trapped in the crevices have come out,
leaving the celery completely clean.
I want to remind you especially, always use baking soda when washing vegetables.
Baking soda is alkaline, so it effectively dissolves pesticide residues on the surface
and draws out dirt from tight spaces.
After cleaning with baking soda, the ingredients are much cleaner and safer to eat.
After rinsing off the surface impurities, change to a new bowl of water
and rinse the celery twice more until the water runs clear.
Then place it on a cutting board and cut it diagonally into small sections.
Once cut, transfer it to a plate and set it aside.
First, warm the pan, then pour in a little cooking oil.
Swirl the pan to coat it evenly with oil.
Add the sliced celery and stir-fry quickly over high heat.
This locks in the celery's moisture,
keeping it bright green instead of turning yellow and wilted.
Stir-fry for about one to two minutes until the celery turns from light green to deep green,
is just cooked through, and has a nice crisp tender texture.
Then take it out and set it aside.
Heat the pan again with a little oil left inside.
Add the sliced pork and cook slowly over low heat.
The pork will go from translucent to slightly curled,
with golden brown crispy edges, and the fat will start sizzling out,
filling the kitchen with delicious pork aroma.
Now it's time to season.
Add 20 grams of soybean paste, a little dark soy sauce, 3 grams for color,
and a pinch of white pepper, 1 gram, to remove any gamey taste and boost flavor.
Turn the heat to high and stir-fry quickly,
keeping the spatula moving non-stop to mix the sauce and pork slices thoroughly.
Watch as the red oil from the soybean paste
releases the rich savory aroma mixed with pork fragrance, fills the whole kitchen instantly.
Then add the stir-fried celery back into the pan, turn to high heat, and keep stirring non-stop.
You can stir-fry a little longer at this step to let the celery and pork flavors blend fully.
