Welcome to booze on the rocks.
My name is David Edwards, and it's great to have you here today.
We're going to make fairy cream.
Now this is an interesting cocktail and one I'm really not sure about
based on the ingredients I've seen.
Um, I was looking at, you know, cream cocktails and interesting
dessert style cocktails to do.
And this one kind of stood out because of those ingredients.
Now, let me explain the ingredients.
So you understand where I'm going.
You need some absence.
Now, this is a little bit of green tree absence.
It's 70% ABV.
It'll have as most absences do, uh, a lot of a nice black licorice flavor.
So if you don't like any of those flavors, this cocktail may not be for you, but the
rest of the ingredients may change that around enough.
And I am kind of curious.
Um, I need a little bit of a dark creme de cacao.
That means it's Brown versus what's known as a white, which is clear.
Now I'm using a little bit of Giffard.
This is 25% ABV.
For our white creme de cacao.
I'm using some McGinnis.
Now this is 15% ABV.
So there's quite a difference in the alcohol by volume.
And that also happens depending on who the distiller and manufacturer is.
And that will affect your cocktail.
So depending on what ingredients you're using, definitely, uh, be aware of that.
And definitely let me know which of these you would change to get
the flavor profile that you like.
You also need some heavy whipping cream.
I'm using a little bit of, uh, I don't know.
It just says whipping cream is made in Canada.
It's 33%.
Um, if you want a cocktail, it's a little thinner.
You're going to use something like a half and half, which is 50% milk and 50%
heavy cream, and that'll just give you a slightly thinner consistency.
Now this is a shaken cocktail.
So you're going to grab your shaking vessel and we're going
to start with our absence.
Now I have to admit this was given to me by Austin, a friend of mine, and you're
going to use a total of an ounce and a quarter, which is 37 and a half mils.
We're going to move to your second ingredient, and that
is the white creme de cacao.
Now you're going to use three quarters of an ounce or 22 and a half mils.
Now, interestingly enough, with the addition of the other ingredients,
this should start to lose.
What I mean by that is it should start going milky, but not every absence does
that, and the reason is it has to do with the alcohol holding the soluble
oils and everything in place.
Once you start adding water, it starts to disengage those soluble, uh,
AB atoms and it would start to lose or start to turn milky in color.
This is not doing that, which tells me it's made a little bit differently
than a more traditional style of absence.
Now we are going to use your dark creme de cacao.
And for this, we're going to use a half an ounce or 15 mils.
So your fourth ingredient is your heavy cream.
Now we are going to shift that to the exact same amount as the absence.
So you're going to use an ounce and a quarter or 37 and a half mils.
And this so far looks like incredibly, uh, unappetizing negative 10 out of
10 for looks so far, but I will take that with a grain of salt because
we have to shake and combine it.
Now we are going to shake this really good for, um, a good 10 seconds.
So you want to make sure you get our, uh, you want to make sure you
get a really good solid seal, give it a flip and shake it hard.
All right.
You're going to pop that off with the strength of 70% alcohol, and you're
going to put this off to the side and you're going to grab your favorite
glass that you're going to do this with.
Now I'm going to serve this up style.
This is a nice coupe.
It's, um, I think six ounces, which is 180 mils.
Yeah, that's about right.
But we are going to find strangers.
This looks really nice.
Now we are going to garnish this with a little bit of grated nutmeg, just like
so, and this is just enough to give you those flavors.
So you get some magic drinking, but it all, it'll hit the nose really nicely.
And this is fairy cream.
It looks much better than I thought I would.
Truthfully, this is easily seven and a half, almost eight out of eight out of 10.
Um, it's nice, uh, a light creamish color, get a beautiful layer of foam.
And of course the garnish on top.
Yeah.
Eight out of 10.
Immediately.
I get the nutmeg.
Holy cow.
That's got a kick.
Oh, that is good.
Um, the, and these flavors are the black licorice flavors from the, uh, the
absent, it doesn't kick in the head.
What it does give you is that strong punch.
So you're not getting the, the black licorice, but you are getting it in
combination with the chalk, the double chocolates, which mute that beautifully.
It's got a kick.
It's got a nice, smooth, creamy mouth feel.
Um, I'd say to attend, I would try a different absence though.
Maybe something like lucid, a little bit less, uh, ABV.
Cause I think that's 63%.
If I remember correctly, um, just to tone this down slightly.
But if you like coffees like this, I would definitely take a look, uh,
after the recipe card right over here.
