So, little Miss Memphis has a birthday coming up next Monday.
So today, we're gonna make birthday cupcakes for Memphis.
I know it's a little bit early, but don't worry, you'll get them on your birthday.
♪♪♪
Are you helping Memphis? Are you helping? Are you helping to make your own?
And you can't eat! What are you doing? You can't eat all that stuff yet!
You got to wait! You got to wait!
We got to make cupcakes, ok?
Alright, we are making cupcakes for Memphis'es birthday.
We are making sweet potato apple coconut cupcakes.
Or something like that.
Ok, the first thing you're gonna need to do is preheat your oven to 350F.
Memphis, you cannot steal all the ingredients.
We got to put them in the cupcakes!
Ok, in a large bowl, you can either use a mixer or you can use a bowl and mix it by hand.
Whatever you need to do.
We need a half a cup of heaping sweet potato, mashed.
So, I boiled the sweet potato and then I mashed it.
You want to lick that?
She's like, oh I do! You want to lick that?
How about you Shelby? Want to lick it?
Oh, it's good stuff!
Then, you need a half a cup of unsweetened applesauce.
They're like, we will lick that too.
Want to clean this dish?
How about you? Want to clean this dish?
How about you Shelbers?
I know it's gonna be your birthday, but you still have to share.
Shelby's like, I think I will have a little bit of that.
You like applesauce?
She's like, I like applesauce!
Not a big fan of apples.
Then, about a quarter of a cup of grated coconut flakes.
Want to try some of those before I put them in here?
Here!
Is it delicious? Here Oakley, you want to try this?
She's like, oh I sure will!
How about you Shelby?
Want to try some of that?
Oh, that's great!
Alright!
Then, one tablespoon of coconut oil.
I don't think you guys want to drink coconut oil.
And, one tablespoon of honey.
Made in Michigan honey.
See, if you put the oil in your tablespoon first and then the honey, check this out.
Instead of the honey sticking to it, it comes right out because you put oil on it first.
Alright, now that all those ingredients are together, we're gonna mix them together for just a second.
Like I said, just mix it together for a second.
Doesn't need to be very long.
Now, we're gonna add three quarters of a cup of whole wheat flour.
We're using whole wheat flour because we're baking these.
Whole wheat flour will help them to rise a little bit.
If you want to use oat flour instead, you can.
But, they're gonna be a very dense cupcake if you do that.
Two tablespoons of uncooked oats.
I know Shelby likes these.
You like uncooked oats?
How about you Shelby?
Oakley's like, oh I wanna try that.
Come here Shelby.
Oh, she's like, I like uncooked oats.
And then, one beaten egg.
Now, we're gonna mix it all together.
This is going to make a very thick type of batter.
But, that's okay.
Wanna lick the beater Shelby?
Can all of you do it at once?
There you go.
Shelby's like, meh.
I'll eat it when it's all done, but I don't want the raw stuff.
So, that is about what it's gonna look like.
Like I said, it's kind of thick.
Almost dough like.
Now, I'm using a mini muffin pan.
I've sprayed it with just a little bit of Baker's Joy, so it doesn't stick.
You can use little muffin cups.
But, I usually just use this and scoop them in there.
It works out pretty good.
We're gonna fill these up.
You can fill them almost to the top.
They're not gonna rise a whole lot, but they will rise a little bit.
So, you don't want to fill them all the way to the top.
So, probably three quarters of the way.
There you go!
Now, we're gonna pop them in the oven for about fifteen to twenty minutes at 350F.
When they're done, just like a regular cake, you'll be able to stick a toothpick in the middle of them and it will come out dry.
So, that's what we're gonna do next.
What you think? Wanna try some raw batter?
Oh my goodness!
Best stuff ever!
Oh my!
Is it good?
She's like, whoa! That's pretty good!
Alright! One more bite!
One more for Oakley!
One more for Memphis!
One more for Shelby!
Good stuff!
Alright! Let's get baking!
So, there is the finished product from the oven.
Now, you can either give them to your dogs just like this.
Or, you can make a little bit of frosting.
Now, we actually made a little bit of frosting.
I'm gonna show it to you here.
You can't eat it yet! You gotta wait!
What we made is a peanut butter apple frosting.
To make this, you need about a half a cup of peanut butter and about a quarter of a cup of applesauce.
You just whip it together.
Basically, what that does is it makes the peanut butter not so thick.
It makes it so you can actually use it like a frosting.
Take your frosting and frost your little cupcakes!
The girls are like, can we try frosting?
We love frosting! I bet you do!
There you go! Frosted cupcakes!
Wanna try just the frosting?
Considering it's your frosting, I can dip my finger in it.
What you think Shelby?
Alright! Now, we're gonna let them try them!
If you really want to make them festive, you can use a little bit of sprinkles on the top.
I'm actually only doing this on one of each of them. Just for fun!
What you think Oakley?
You want one?
She's like, I want one!
Yeah?
Since it's Memphis'es birthday...
Well, since they are for Memphis'es birthday, we're gonna let her try hers first.
And...
It's gone!
She's like, that was amazing!
Alright! Now your sisters get one! No! Those are for your sisters!
Alright! One for Oakley!
Good stuff?
And one for Shelby!
