Miss Saigon Bistro in Coral Gables is the most authentic Vietnamese restaurant in Miami and has been in business for 23 years! Inside, I met David, who took me back to the kitchen, where they were making tons of traditional Vietnamese dishes.
Back at our table, we started with a light Saigon beer before diving into the pork ribs. They were juicy, fatty, and sweet. I loved the sweetness and the spring onions!
The crispy spring rolls came with a honey-colored Nước chấm dipping sauce. They were refreshing and super crispy when wrapped in lettuce with mint and hot sauce!
Then, we went for the sweet chili basil chicken wings. It was like sweet and sour fried chicken with a bit of chilies. It reminded me of Korean fried chicken! It was even better with the mint!
Next were the summer rolls, which contain pork, shrimp, rice noodles, mint, and lettuce. I loved the peanut dipping sauce and the freshness of the ingredients!
We followed that with the sizzling crepe, which contains pork, shrimp, onions, curry, and bean sprouts. It’s similar to the fried spring rolls but has a creamy element to it. The pork and shrimp mesh together really well!
Next was the steamed rice flour crepe with ground pork and dried, crunchy mushroom. We had steamed and fried bologna on the side and a thick, fish sauce. I got a bit of everything and drizzled the sauce and vegetables on top. The bologna with the pork and crepe was really good! It was fresh, soft, and good for the heat! I loved the contrasting flavors and textures. It reminded me of a shrimp dumpling!
Next was our main course: shrimp with mixed vegetables, mom’s style! It was beautiful and had cilantro on top and the tomato-based sauce (which contained fish sauce) on the bottom. It was so fresh and crunchy. The shrimp was huge, and the sauce was so flavorful! I also loved the broccoli, carrots, bamboo shoots, green tomatoes, pepper, onions, and mushrooms. It was also super filling even though there were no carbs!
Then, we had two noodle dishes: a pho with oxtail, meatball, tendon, and tenderloin; and well as the Miss Saigon Rice Noodle, which had crispy spring roll, grilled pork, grilled shrimp, noodles, lettuce, and bean sprouts. They both looked unreal!
The Miss Saigon bowl had such a nice sauce in it, and the textures were amazing. The spring rolls had soaked up the sauce. It’s the dish I always get when I go there. You can also have it with dark meat or white meat chicken! The shrimp in it are huge!
Then, we had the pho, which was all beef. We added basil, culantro, hoisin sauce, siracha, jalapenos, and sprouts. The beef broth was beefy and super tasty. We added in the fresh ingredients, mixed it well, and dug in. I loved the density of the beef balls. The vegetables were so fresh. I also loved the tripe in it. It’s the ultimate beef noodle soup!
Next was Vietnamese coffee with condensed milk and a dessert with mung beans, Vietnamese Jell-O, and coconut milk and ice. The coffee was like a French dip coffee with condensed milk on the bottom. It was like a super creamy, sweet, and rich café con leche!
We mixed up the dessert, which reminded me of a cendol from Malaysia. It was delicious and refreshing. It’s not like ice cream and isn’t heavy.
My dad loved the crepe and the summer roll, but I loved everything!

It's better if you don't slurp it.
It's better if you slurp it.
Good afternoon, everyone. I hope you're all doing amazing.
This is David Hoffman from David's Bin here coming at you from Coral Gables, Miami, Florida, my hometown.
Today my father and I are here at Miss Saigon.
Miss Saigon is the most authentic Vietnamese restaurant in Miami.
It's located out here at Paseo de Gerada, which is like a restaurant row.
And they've been in business for 23 years, serving some of the most traditional, authentic Vietnamese street food.
And they also have a ton of other dishes like pho.
They have the Miss Saigon bowl, which is like a noodle bowl with like a spring roll, pork.
I mean, it's amazing. They also have like barbecue ribs, Vietnamese style, lots of spring rolls.
I mean, it's going to be amazing. Are you excited?
I'm super excited, super hungry. Did not have breakfast today.
Me either. All right, let's go inside Miss Saigon.
David, pleasure.
Thank you, sir.
What are we doing today?
We're going to do you some family style Vietnamese.
This is the dish my mom makes at home.
So we serve it to the customer here.
It's very traditional.
This is my second home here.
This is your second home? I thought the kitchen started.
No, it's okay.
Awesome, awesome.
Do mom style.
Mom style?
Yes, very traditional.
Vegetable and some tomato for the base.
What are you doing today?
Mixed vegetable, mom style.
I mean, it looks amazing. Lots of vegetables.
You have this delicious like tomato, like almost like a soup, right?
Yeah.
Tomato has been like bursted out there.
He put some water, some super hot water, and then it's just a bunch of vegetables.
So it's ribs, right?
Ribs.
Ribs sauce and some onions.
No, caramel sauce.
Caramel sauce, okay.
Yeah, it's sweet sugar. We melt it down with a special sauce that we put in there.
But there's no sauce.
It smells a little sweet, right?
Yeah, and then we put onion, ginger in it.
Onion and ginger?
Yeah.
I mean, this looks amazing. I haven't tried this dish before.
So it becomes a little thicker, right?
Yeah, we went into it caramelized.
So now he's going to make a quick appetizer.
It's chicken wings with basil sauce.
So he added bell pepper, onion, and basil.
And what sauce is this sauce?
It's a chili sauce.
That's a chili sauce. Oh, it's in me.
Can't breathe in here.
Pretty salty and spicy.
Just like my sister and all the ladies in my life.
Alright, so that's it for the kitchen, guys.
We saw how they made three incredible dishes.
I've never tried any of these.
I've tried their pho.
I've tried their Miss Saigon bowl.
But none of these.
I've never tried any of these.
And he told me the chicken wings, I'm going to love them
because it's like sweet and sour.
And the ribs, they just look stupendous.
Whoa.
Alright, guys.
Look at this spread.
We have nine dishes.
Nine incredible dishes.
They all look delicious.
A lot of them are street food.
So like in terms of street food,
we have the spring rolls, the summer rolls.
We also have over here like crepe.
We have a steamed crepe, a crispy crepe.
Then we have the shrimp with vegetables,
with the chicken wings.
We have, what else?
We have the pho, the Miss Saigon bowl.
And then we have right here the ribs.
The ribs, I mean, the aroma smells like sweet and sour.
I mean, that one and this one are just like incredible.
You can smell it like a mile away.
I know, I know.
It looks so good.
So what we're going to do is we're going to start off with this.
But before that, we're going to try some Saigon beer.
So from the city of Saigon.
Cheers.
Nice light beer.
Yeah.
So in case you guys don't know about Vietnam,
it's Southeast Asia.
Ho Chi Minh City is Saigon.
So they changed the name.
Obviously, that's the capital of the country.
I have actually never been to one of the ones I'm missing.
So I have to go one day.
Next on the schedule.
It's next on the list.
Yeah, when they open up.
And with this kind of food, I'm there with you.
Yeah.
So we're doing like street food.
So look at this.
It looks beautiful.
I think you should put one of these on top.
You think so?
Yeah.
He was saying that you should always put some veggie on top.
Grab it.
Mmm.
Oh, wow.
Nice and juicy.
Nice fat.
Mmm.
And sweetness to the rib.
These are tiny pork ribs, right?
Mine didn't have a bone.
So I just ate the whole thing.
He just ate the whole thing.
Well, what he did is he also added that
because he gives you some more meat.
Correct.
Mmm.
I love the sweetness.
This is another big chunk right here.
So you're going to grab it with that.
I always put veggie on top, right?
Yeah.
So this is a spring onion, right?
Mmm.
Delicious.
Wow.
Yeah.
So again, it's pork ribs with like a sweet sauce
that's like literally on the bottom.
Like lazy sauce, right?
And then they also threw chunks of pork inside.
So they give you some more meat.
It's very refreshing.
Just a huge appetizer.
So I think we should hold off, you know?
Or I think...
I'm not holding off.
Here, here, here.
Too good to stop.
Mm-hmm.
So next up, we're going to try some crispy spring rolls.
Mm-hmm.
Ooh, super crispy.
So the way you do this is you grab a roll, right?
Mm-hmm.
And you dip it into this.
I don't know exactly what sauce this is.
It's an amazing sauce.
We're going to find out.
It looks a little, almost like honey.
Should we put some of this green?
No, it's straight.
After, after.
Mmm.
Mm-hmm.
So we take lettuce wrap.
You put it here.
Then you put the mint.
I guess you dip it, right?
Mm-hmm.
Wayne just added some of the hot sauce.
I'm just going to add mine on top, right?
You want some too?
Okay, okay.
Okay, let's do it.
Mmm.
Mm-hmm.
The mint and the lettuce, it takes away the time.
Mm-hmm.
It's freshening up the bite.
Yeah.
This brings it to a different level.
Mm-hmm.
Lettuce wrap with mint.
I love the crunch because of the, you know, crispiness to it.
The friedness.
Inside is basically vegetables, right?
And the heat.
I love this heat.
So this is almost like red pepper flakes.
And it's like a, almost like a paste, right?
So I'm going to dip it in here.
And she already put the hot sauce into it.
Look at that.
It's a crunchiness also.
Additional crunchiness.
Mmm.
Oh yeah.
I love this.
It's almost like a watered down honey-ish sauce.
And next up we have the chicken wings.
Sweet chili basil chicken wings.
Soak up all that sauce.
Vegetables also maybe on top?
Not this one.
Let's try lettuce.
Mmm.
Like sweet and sour fried chicken, right?
A little bit of chilies.
Mmm.
I can see myself eating this and...
I can taste the basil too.
I can see eating myself this, eating in Vietnam, on the street.
This is street food, definitely.
This is street food.
This is the ultimate street food.
Mmm.
Very good.
Actually tastes very similar to like Korean fried chicken, in a way.
Because they have so many varieties there.
This is amazing.
I mean, if I go too much on this, I'm going to, I'm going to fill up too fast.
But, you know, you have a little bit of spiciness, a little bit of sweetness to it.
Crunchy.
Amazing appetizer.
And it comes with, I think, like 10 wings.
You should try it like this.
Yeah?
Mmm.
So my dad thinks I should grab some of this.
Yeah.
This is mint, right?
Mmm.
Right?
Mmm.
So it is like a combination of both, right?
So a little mintiness.
Love the basil.
It's super fresh.
It's a leaf, right?
Mmm.
This chicken.
Mmm.
This is addictive.
Like this one.
So far, everything's been addictive, baby.
Mmm.
So next up, we have the summer roll.
So it's pork, shrimp, rice noodle, mint, lettuce.
And then you have the peanut dipping sauce here.
But if you want to, you can add some of the spice.
We'll do that after.
For me, the best part about Vietnamese food is the peanut.
Peanut sauce all day.
Ready?
Mmm.
So fresh.
I love the mint.
Mmm.
The rice noodles, super soft.
I'm going to say it's a delicious spring roll.
Summer roll.
Yeah.
Summer roll.
It's refreshing.
It can be 100 degrees outside, and this will refresh you, definitely.
Mmm-hmm.
And then what we'll do is...
It's so good.
It's so good that it's also addictive.
Yeah.
My dad is a dollar food.
Mmm.
This is actually what they put into the Saigon bowl.
They mix it out.
They mix it throughout.
Definitely turns it up a notch, right?
But this is the best.
So next up, we're doing the sizzling crêpe.
That's right.
Sizzling crêpe.
So what's inside the sizzling crêpe?
We have shrimp, pork, onions, bean sprouts.
Okay.
Just look at it.
Look at that.
So you got the spring onions, pork, shrimp.
It's nice and crispy.
And you said you use curry here.
Is this curry?
No.
In the crêpe to create a color.
No eggs.
So in the crêpe is curry to create the color.
So there's no egg here.
Wow.
This is like a monster.
It's a rice flour.
I mean, it's a monster.
And this you would eat on the streets of Vietnam.
That's right.
And that's it.
One dish.
So it's very interesting how you eat this.
You don't just cut and eat.
What you do is you cut it in four pieces.
Then you put lettuce on your plate.
Put the mint on top.
Then you put the crêpe on top of that.
And then what we do next, dad, is we just wrap it like this.
I guess you just...
Go big.
Try to...
Exactly.
Try to fold it.
Oh, my God.
What is this?
Oh, wow.
It's very similar to the fried spring roll.
When we put it in the lettuce wrap.
But this is better.
Yeah, yeah.
So it's creamy.
So many flavors.
I love how the pork and the shrimp bounce off each other.
Wow.
Wow is the correct word.
Let's get the mint.
This is a wow flavor.
My new favorite.
Endless pleasure of eating here.
Super fresh.
And the thing is, the reason it's like that is because it's so hot, right?
So the heat in Vietnam is like Miami.
You're sweating all the time.
You eat this food.
You feel refreshed.
That's why they always have the lettuce, you know, and the mint.
That's the main reason.
So this is a steamed rice flour crepe with ground pork and mushroom, dried mushroom.
Then on the side, we have bologna, two different types, steamed and fried.
And then here we obviously have the sauce.
It's a fish sauce that they cook it and it becomes a little thicker.
That's why it feels almost like a honey, you know, consistency.
So the way we do it, Dad, is I grab, you know, piece here, piece here.
Just grab three, right?
Like that.
Then I grab bologna.
So just like this, right?
So I got two different bolognas, right?
I got the fried one and the steamed one.
And then next, what we do is we get the sauce, right?
So we just drizzle the sauce on top like that.
Beautiful.
And that's a few bites.
Oh, and we forgot to add some of the veggies.
Take this, right?
This is the bologna.
Fried bologna.
Vegetables.
Okay, so for this, chopsticks.
Chopsticks.
We don't use our hands for this.
Can we really eat it with chopsticks?
Yeah.
So grab some bologna.
Have to take it apart a little bit.
Yeah?
Yeah, because it might be sticking.
I'm like a pro at this.
I know you are.
So fresh.
Interesting taste.
Very like slimy.
Love the bologna with the pork.
So it's fresh.
It's soft.
Again, another like dish for the heat, right?
Wow, I like it.
So it's cucumbers, spring onions, and you said these are scallion.
Not...
Scallions.
Fried scallions.
So you put it on top.
You know, it reminds me of like a shrimp dumpling.
Very similar.
Funny because I don't even notice the mushroom.
So there's mushroom in there.
And it's like...
Crunchy.
Crunchy, right?
You know, it's a contrast of textures and flavors, basically.
And freshness.
That's what...
Another thing I love about this food is that every dish has mint and lettuce.
And vegetables, obviously.
Almost nothing doesn't have vegetables.
You guys are big on pork, right?
Big on pork, big on shrimp.
And here we are with the main course.
Shrimp mixed vegetable mom style.
So it's shrimp.
You got tomato.
You have mixed vegetables.
And then you have cilantro on top.
I mean, this looks like a beautiful dish.
It's huge.
I mean, it is the main course, right?
Super healthy.
I mean, if you...
On a diet, this is the one.
This and the spring rolls, like the summer ones.
That would be perfect.
So Wynn is telling us to use a spoon so you can get some of the sauce, right?
And then you have to get one of these.
You get some of the cilantro into the sauce.
So like that.
Get some shrimp.
Broccoli.
Sauce.
Let's do it.
Crunch.
Fresh.
Huge shrimp.
And love the sauce.
So it's tomato.
I think there's some fish oil in here too.
Wow.
Broccoli.
Lots of broccoli.
Lots of broccoli, carrots.
I think...
What else is in here?
Is that mushroom?
It is a fish sauce, definitely.
See, when you tell me Asian food, this is like...
This is Asian.
You have the flavors of it.
So crunchy.
And even though no carbs, super filling.
And then if you see right here, we also have bamboo shoots.
So bamboo, tomato, green pepper, onion.
I mean, the mix of flavors.
Freshness.
I'd say the ultimate no-carb dish.
If you like shrimp, if you like no spice.
Actually, you know what?
Maybe I'll add some spice, huh?
Maybe.
Little bit right there.
Boom, boom.
Let's jump on to the noodle dishes now.
Now we have two noodle dishes.
We have the pho of Miss Saigon.
That means it's really a combination of all different types of beef.
Will be inside your pho bowl.
Then we have beef axel, meatball, tendon, beef stripe,
sliced tenderloin beef.
And this one called Miss Saigon rice noodle.
They're gonna have a combination of crispy spring roll,
sliced grilled pork, grilled shrimp,
over a bed of noodle with nice combination of fresh salad on the bottom,
minced lettuce and bean sprouts with special dipping sauce.
It's tossed together.
Mix it together because the dipping sauce on the bottom
with all the fresh ingredients, noodle.
You can add more if you want, but for now.
We do this for now.
I'm gonna go ahead and serve it.
So this is the Miss Saigon bowl.
This is the best.
I usually come here for lunch and I'll have just this bowl.
It is enormous.
But this one is actually the dinner portion,
so it's actually a lot bigger.
So we have the rice noodles, right?
Then we have the sauce throughout.
You have this big chunk of shrimp,
which they actually like cut in half and then, you know, split it open.
Over here you have some nice vegetables.
And then you have the spring onion.
And this is all pork, right?
So pieces of pork.
So what you do is you just mix.
Get some stuff.
If you like this.
Is it one big bite like this?
Yeah, it's a small bite.
The sauce.
The textures.
The spring roll.
What I love about this one is that it's soaked up that sauce.
You know?
So it tastes so different.
Wow.
What an amazing dish.
This is the one you have to have.
Like you have to try this one.
This is the one you always have when you come here.
Most popular dish.
Yeah, it's the most popular dish.
I mean, I've been having this for 20 years.
And it really hasn't changed too much.
And you can also ask for like.
I think you have it with brown.
Chicken.
Chicken, yeah.
So you can have like.
Darby chicken.
So my dad's telling me I should add a piece of mint.
So I'm just gonna grab a little.
Add a little mint.
You'll love it.
It just brings out a different flavor.
Add it right there.
Am I correct or what?
The spring rolls.
Right here, look at this.
Look at this piece of shrimp.
Right?
It's like a huge prawn.
I don't even think that's shrimp.
That's a prawn, right?
It's got all the flavor from the broth.
Yeah.
Yeah, because that's the same sauce we tried with all the dishes.
Which is that fish oily sauce.
They turn it into almost like a.
Like it's almost there with honey in terms of thickness.
It's almost like a watered down honey.
But it pairs well with every single dish.
Remember that.
In Asia, you gotta slurp those noodles.
Like.
Let me see you.
Let me see if I can do it.
Let me see your skills.
Yeah.
It's bad etiquette if you don't slurp it.
It's bad etiquette if you slurp it.
So here we go.
The Pho Miss Saigon.
This is the most famous dish coming out of Vietnam.
So basically.
Rice noodles.
Then you have the broth.
This is all beef.
So it's like basically every piece of the cow here.
And the way it works is that we're gonna add a lot of this stuff.
So we're gonna add basil.
Cilantro.
Which is not cilantro.
Hoisin sauce.
Which is like a sweet.
And a little.
A little sour right.
And then over here we have.
The.
Sriracha.
My dad loves sriracha.
Jalapeños.
And.
Sprouts.
So you add all that on top.
You mix it.
You eat it.
So I think we should add.
We should try the beef broth first.
Just to get the good taste of it.
And then we start.
Mixing all the rest of the stuff.
Mmm.
Oh.
It's beefy but.
Amazing.
Try it with some veggies.
Mmm.
Yeah I mean.
I wanted the weight but here.
Look at this.
You literally have.
The tripe right here.
Woo.
This is the stomach.
Oh.
Wonderful.
Yeah.
I'm gonna wait for that.
Yeah.
So let's mix everything in.
Basil.
Cilantro.
Right.
Then we have.
Hoisin sauce.
Sriracha.
Okay.
Like this.
Alright.
So just mix in a little bit.
You don't have to do too much.
You can put.
Throw more.
Yeah.
Like that.
Right.
Yeah.
Alright.
So next.
Grab a jalapeno.
Throw it in.
And.
Some sprouts.
Let's grab a few sprouts.
Beautiful.
Rice noodles.
Lots of beef.
Look at that.
You have tendons.
You have stomach.
You have beef balls.
I mean.
Look at this.
This is gonna be.
Insane.
Keep mixing.
Look at this.
There's the oxtail.
Oxtail.
Yeah.
Mmm.
Another density of the ball.
Mmm.
Oh wow.
Again.
Refreshing.
I love how they mix in the vegetables here.
And the stock.
The stock is so beefy.
Do you detect some sweetness?
It's sweet.
Mmm.
Alright.
Some stomach here.
Another try.
Mmm.
It's just the meat.
Mmm.
If you like beef.
This is like the ultimate beef.
Yes.
Noodle soup.
You know.
Wow.
And the amount.
Of noodles here.
Ridiculous.
Mmm.
I actually haven't tried the noodles.
The noodles are a little different from the noodles from the other bowl.
Mmm hmm.
They're a little thinner.
And also they're mixed in with the tripe.
So you get a good combination.
A little sliminess to it.
The sponginess of that.
See.
Oh yeah.
Right there.
Oh.
You're eating the tripe.
A lot of people don't like organs.
For me organs are my favorite.
Organs all day.
Mmm.
So what's that?
The Vietnamese coffee.
It's like an old French press.
Dripping slowly.
Strong Vietnamese coffee.
Serving with condensed milk.
It's a Vietnamese dessert.
Very refreshing.
It's three different colored beans.
Red.
Green.
Yellow.
Over coconut milk and ice.
So here we go.
Coffee and dessert.
Rainbow drink.
Jea Bao Mao.
Did I get it right?
Yes.
So as she said.
Red beans.
Then here.
Mung bean.
And then this.
Vietnamese Jello.
Over coconut milk and ice.
Coconut milk.
Super refreshing.
We love coconut down here in the tropics in Miami.
I mean this is going to be an amazing dessert.
I mean if you guys know about sweets in Southeast Asia.
It's all about like jellies and beans.
Red beans.
Huge.
In like China.
Also in Southeast Asia.
And they also mix in like jellies.
And really really cold.
They're never into like ice cream and chocolate.
Right.
It's more like this.
And here we have the Vietnamese coffee.
Which is like almost like a French drip coffee.
So right here is just the coffee.
Right.
Which is dripped down.
And then here is condensed milk with sugar.
So what we do is we take this off.
Right.
We finish.
Take it off.
And then mix it.
And then in the coffee.
Vietnamese coffee.
Your first time right?
First time.
Mmm.
It is like a cafe con leche.
But with condensed milk.
So it's super creamy.
It's very pleasant.
Yeah.
It's pleasant.
The word is pleasant.
Yeah.
It's like super.
Almost comfort.
Mmm.
Super sweet.
Rich.
It's rich.
It's sweet.
You got the sugar throughout.
Very smooth.
The condensed milk is another twist.
You know I never actually have like coffee with condensed milk.
It's like almost the first time.
I've had this a few times.
But this is the first time that I see it like this.
You know.
Condensed milk that.
Who wouldn't know.
So I have to finish it.
Gotta wake up.
It's only like 1.30 in the afternoon.
Mmm.
That's a rich coffee.
Woo.
Okay.
So the way we do this one.
Is you gotta mix it up.
Woo.
Yeah.
For sure.
Okay.
So the jelly is all.
Yeah.
I love that.
And this is.
Look at that.
And then if you want to.
You can just.
Mmm.
Oh.
I love the red beans.
Mmm.
This is almost like a chendol.
Chendol in Malaysia.
Similar feeling.
So do you eat the green.
Or you just have the green blended.
So.
Mmm.
It gives it taste.
I gotta eat.
Anything goes.
Mmm.
This is like.
Delicious.
Refreshing.
I personally love.
This type of dessert.
Which is so refreshing.
And it's.
It's not like.
Ice cream that fills you up like that.
Okay.
So.
We had.
Like 10 dishes.
Oh my god.
What an assortment of food.
I mean.
Everything is super refreshing.
Love the crunches.
The sweetness to everything.
Here.
A lot of pork.
Lots of beef.
Lots of shrimp.
And vegetables.
Your favorite?
The pancake.
To the crepe.
The sizzling crepe.
I think that.
And probably the.
Summer roll.
The summer roll.
Amazing.
Okay.
Yeah.
So for me I think.
Man it's hard.
It's like the pork ribs in the beginning.
Definitely.
Pork ribs.
Chicken wings.
The summer roll.
I love the Miss Saigon bowl.
The crepe as well.
Also the steamed crepe.
I mean.
I think every single one was very different.
Yeah.
Very diverse.
Some of them are fried.
Some of them are steamed.
That's the great thing about Asia.

Come down to Coral Gables.
Paseo de Giralda.
And come here to Miss Saigon.
And try some real authentic amazing Vietnamese street food.
