Hey everyone! Today we're making a classic northern Chinese comfort food,
green bean braised noodles. It looks simple, but getting it right takes a few tricks.
Noodles that are chewy and flavorful, tender, savory green beans, and rich, aromatic pork belly.
Right now is the perfect season for fresh green beans. They're packed with plant-based protein,
fiber, and vitamins. Pair them with pork belly for extra protein and iron,
add noodles for that satisfying carb hit, and even picky kids will gobble this right up.
Let's start with the ingredients. Pick fresh green beans that are bright green and plump.
Those have the best texture. Snap off both ends and pull the tough strings along the side so they
don't get stuck in your teeth. Soak them in lightly salted water for five minutes to wash away any
impurities or residue, then rinse twice and drain well. Break the beans into 1.5 inch pieces.
Breaking them instead of cutting helps them soak up flavor way better. That's an old family trick.
Next, grab some pork belly, nice and marbled with fat. Slice it thin so it renders out fat
easily, making everything fragrant without being greasy. Set those aside. For aromatics,
two green onions sliced, a few garlic cloves smashed, a piece of ginger shredded,
one star anise, a pinch of Sichuan peppercorns, and a few dried chili peppers.
These are what make the dish taste amazing. Add a little oil to your pan, spread the noodles evenly
across the bottom, and toast them over low heat. Gently shake the pan so they cook evenly. Once
the bottoms are lightly golden and crispy, take them out. This gives the noodles both soft and
crunchy texture. Leave the oil in the pan. Toss in the pork belly and cook over medium-low heat
until the edges curl, turn golden, and the fat renders out. That's when the flavor really comes
alive. Add the aromatics, a splash of cooking wine, and stir on high heat to release that
incredible savory aroma. Toss in the green beans and stir-fry on high until they're bright, tender,
and just starting to wilt. Before we keep going, making these videos takes a lot of work,

Now for the seasoning. 0.6 tsp salt, 0.4 tsp Chinese 30N spice, 3 TBSP light soy sauce.
Stir everything together until the beans are coated in that rich, glossy sauce.
Pour in boiling water just enough to cover the beans. Not too much, not too little.
Lay the toasted noodles evenly on top, cover, and simmer on low for 15 minutes. The noodles
will soak up all that meaty, savory sauce, and the beans will get nice and tender. When time's up,
open the lid, your whole kitchen will smell incredible. Top with fresh garlic and green
onions, then gently toss everything together with chopsticks so every noodle gets coated
in sauce and oil. Just look at it! Glossy noodles, tender green beans, crispy pork.
That's authentic braised noodles at its best. Each strand is flavorful and firm,
soaking up all the meaty and fresh bean flavor. The green beans are soft and sweet,
the pork belly rich but not greasy. This huge, satisfying plate costs less than $10 to make,
but tastes like restaurant-quality food. It's perfect for a quick weeknight dinner or a cozy
family weekend meal. Everyone will be going back for seconds. Alright, that's my green
bean braised noodles recipe. If you love it, save this video and give it a try. See you next time,
