Well, how are we doing?
What if I told you that we were gonna make a dish
that is a sheet pan meal?
This dish is something I created
out of necessity and sheer desire.
We're looking at 45 grams of protein per serving.
You get two meals out of it, super beginner-friendly,
minimal dishes, and it's delicious.
Got great macros, we're talking fiber, protein.
We got carbs in there.
It's got so much great texture.
There's a nice crunch to it.
There's a chew to it.
You get your greens with it.
This is a comfort dish in uncomfortable times.
Let's do it.
First things first, I'm the realist.
♪ You already know ♪
Second, we're gonna need, for the sheet pan itself,
oh, I have three onions.
You know what that means.
Wait, oh my God, there's onion peels flying everywhere.
No, the onion peels.
Why must I be like Icarus?
Why must I always fly too close to the sun?
Don't answer that.
That was a rhetorical question.
All right, we'll take our tainted onion.
Broccoli, garlic.
Let's clean our broccoli.
Cut them into reasonable size.
If need be, you can use two sheet pans,
depending on how much you wanna make,
three, whatever you want.
This is super customizable.
If you wanna add other vegetables, be my guest.
You could do asparagus, cherry tomatoes.
Oh boy, I'm starting.
Oh God, okay, the onions got me.
Oh boy.
Oh, I'm okay.
Sheer jam.
It was the onions, it was the onions.
It actually was, it was the onions.
It was the onions.
Now, while these are in the oven,
we're gonna wanna check them pretty regularly,
make sure they're not absolutely roasting in there.
I mean, they will be roasting, but you know what I mean?
Burning, they're not burning in there.
I'm gonna do it into little chunks like that.
Finally, we're gonna add our potato gnocchi.
These were three bucks.
This was three bucks.
All right, so these are the ones I'm using.
You can use whatever gnocchi you want.
Most gnocchi is vegan, you can double check.
It's mostly just potato.
So like this whole container is 18 grams of protein.
Let's open this.
Many of you probably didn't know
that you could roast gnocchi.
Yes, you can.
It's so cool because the texture is totally different.
Instead of it just being like, you know,
like chewy, pillowy gnocchi,
it becomes like crispy on the outside
and really tender and fluffy on the inside.
I cannot recommend enough,
which is why we're here right now.
I'm gonna add olive oil, salt, and pepper to this
just as a starting point.
Cause really like we're gonna get a huge punch of flavor
from the sauce that we're gonna make.
All right, you guys, you guys look good.
Yeah, you look real good.
Let's toss you in the oven.
I'm gonna check on them at about the five minute mark
and move them around,
get them evenly coated and evenly baking, roasting,
whatever, and then we'll take it from there
and see how they cook.
Let me cook.
We've reached the five minute mark.
Let's check on the roasted veggies.
These are looking good already.
Wow.
Good job, you guys.
We just wanna move them around.
Back in you go.
Ooh, yes.
That's what we wanted.
That is what we wanted.
Shut that off.
Give my sweat mustache a break.
Man, it's hot in here.
This is perfect roasted broccoli.
This is it right here.
It's perfectly crispy on the outside,
but it's chewy on the inside.
It's crunchy, delectable.

We're gonna go ahead and make our sauce.
We got tomato sauce.
We got white beans, sun-dried tomatoes.
Now I'm gonna give you a little option.
Sun-dried tomatoes are expensive
and they are a huge flavor infuser.
If you get them in oil, like this one from Trader Joe's,
this is gonna be about $4.
Alternatively, because we got options here, baby,
you can get dried ones like this, and these were $2.
So this is half the price.
Let these sit in boiling water for like five to 10 minutes,
and it's a little bit of an affordability,
it's a little bit of an affordability budget hack.
I'm gonna let you decide what you wanna do.
I've already got these guys, so we'll use them.
Sun-dried tomatoes in oil, yes, they're more expensive,
but they do come with a superpower,
which is sun-dried tomato oil.
The flavor enhancer of the century.
It's just a, it's like if you soak olive oil
in roasted garlic, add it to sauces,
add it to sautes, add it to whatever, delicious.
All right, and for this sauce, we've got tomato sauce,
white beans, sun-dried tomatoes, in or out of oil,
nutritional yeast, which I buy in bulk, cheaper,
smoked paprika, red pepper flakes, some fresh thyme.
You can also use dried thyme, another budget saver.
I wanted to use fresh this time, time after time.
Drain our beans.
Tomato sauce, any way you can sneak in beans and stuff.
White beans are such a great one because they're like creamy
and they're not a super intense flavor.
They blend into things really easily,
gives you some extra fiber and protein.
They're a good source of magnesium, copper, folate,
get some good iron in there.
I'm anemic, so like the more iron I can get, the better.
Let's add in our smoked paprika, half a teaspoon or so.
Nutritional yeast, nutritional yeast is a great way
to get a bunch of protein and B vitamins,
especially, obviously you wanna make sure it's fortified.
It's a protein powerhouse.
It's a really sneaky way to get a ton of protein in.
And you can make it more cost effective for yourself
by buying in bulk, like I do.
Catch me in the bulk section.
I don't know, I don't know.
And between you and me, I'm gonna go ahead
and let some of that oil fall in there as well.
About a quarter cup sun-dried tomatoes.
All right, that's good.
Little oil in there too.
Maybe a little bit more,
just cause I'm gonna spoil myself.
I deserve it.
All right, and now let's blend this up.
Might need a little bit of water to loosen it up.
We'll see how the texture is looking and feeling.
I'm guessing we will need a little bit.
I'm gonna boil some water
because we're gonna wilt a little bit of kale.
And then we can use some of that water,
the hot water to loosen this as well.
So we got the base.
Got some hot water on hand.
This is where if we had boiled the gnocchi,
we would have just used the salted pasta water,
but we didn't, so we're not.
Ooh, you're too good to me.
Me?
Oh my God, that's so good.
I realized I didn't even add salt to that.
It doesn't need much.
This thing's got flavor for days.
Oh yeah.
So just add your kale in there.
Let it wilt.
This should only take a minute or two.
You just want it to turn nice and bright green,
like it almost already has.
And then I'm gonna strain this,
and I'm just gonna run some cold water over it
in the sink right there
just to stop it from cooking any further
because we don't want mushy, soggy, sloppy,
swamp thing hair kale.
And I'm gonna drizzle a little bit of sun-dried tomato oil,
or you can use olive oil over the top.
Look at this.
Look at this gorgeous thing.
It's beautiful.
It's stunning.
It feels like summer, and summer is coming.
I'm very proud of this.
I'm very excited about this.
I think I've earned eating it.
Oh yeah.
Bon appetit.
You know when you've done something just so good?
You've done something great.
I'm having that moment right now,
even though I already knew what this was gonna taste like.
You listen to me right now.
You make this, you make this immediately.
You need this in your life.
Just you trust me.
This makes everything feel kind of okay.
The gnocchi, tender in the middle, crispy on the outside,
pillowy, chewy, scrumptious.
The broccoli is perfect.
The kale is here.
The onions are kind of sweet.
And we got the garlic.
We're getting fiber and all the good stuff
from the beans and the sauce.
There's some heat to it.
There's a kick to it from the smoked paprika
and the red pepper flakes.
You know, I've been trying this out,
this whole like developing my own recipes
and offering them.
I have to say I'm very proud of this
for developing this little miracle recipe.
It's the perfect blend of getting away with something,
but also doing something really good for yourself.
Like it's so savory and indulgent
that it feels like you're being naughty.
It's full of stuff that's good for you.
Perfect.
Oh my God.
If you try it, let me know.
You can use the sauce for wraps too.
You don't have to have it with this as a pasta.
We can use it as a dip.
You know, you can kind of do whatever you want,
but this is all about this right now.
We did it.
I hope you guys had a fun time here today.
If you did, please like and subscribe
and let me know if there are any other recipes
that you'd like me to show you
or anything else more specific for a one-off recipe.
We want to see more sheet pan recipes.
Otherwise, give me your feedback.
I really hope you try this.
You deserve it.
Yeah, if you enjoyed this,
I made a $3, 45 gram of protein pasta.
It might be populating.
It's over here somewhere.
And then over here somewhere
is probably some more high protein recipes,
but thank you for being here.
I hope you had a good time.
I had a blast.
And now I'm about to go sit outside
and take in the wonder all around me,
unhinge my jaw like a snake to consume this.
So bye for now.
You're doing good.
