We're all looking for quick and easy lunchbox fillers for our kids' lunches. Now I'm going to
show you this is a speculoos slice. Speculoos, that's a fun word to say, but it's pretty much
a cookie spread slice. Super duper easy. First, what we've got here is 250 grams of cashews.
They're going to go straight into our food processor. Then we're going to add two packets
of dried bickies. Any dried bickies will do. Straight into the food processor. This is a
fun one. You could get the kids involved to make this as well because it is so easy. There we go.
Now all I want to do is pop on the lid and blitz it till a fine crumb.
Now what I want to do in my pot over here, medium heat, I'm going to add in 125 grams of butter,
some of our biscuit spread, the whole jar. That really delicious biscuit flavour
is going to help bind our slice together. So the speculoos cookie spread, it's caramelised biscuit,
there's spices in there, it's just a beautiful biscuity flavour that's going to really add to
our slice. Now what we want to do is melt the cookie spread and the butter together
until it's nice and smooth. Alright, our cookie spread and our butter has melted together. We've
got a beautiful smooth consistency which is what we want. Now we're going to add in our biscuit
crumb and the cashews that we blitzed together straight into the pot. Yes. And then all we have
to do is give that a good mix around just to coat all the biscuits, all the cashews in that beautiful
spread. Oh, it smells so good. Then we bring up our slice tin and we pop all of the mixture
into the tin. Lovely. And then we just use the spoon just to flatten it out, press it down.
Alright, that's looking good. So in the fridge that will go hard and crunchy and fudgy and
delicious. Now over here I've got some chocolate because we need that chocolate layer on top.
So just 250 grams of any chocolate. I'm using a milk chocolate here today and all I want to do
is just melt that together. I've just got it over some boiling water, bain-marie style. You can do
this in the microwave if you want. We just want to melt that till it's beautiful and smooth.
Alright, look at that chocolatey melty goodness. That's looking nice and smooth now. That's done.
I might just get a tea towel for this. I don't want to burn myself. And all we want to do
is get all of that delicious chocolate out on top of the slice for that beautiful chocolate layer.
Beautiful. Now just use your spatula just to smooth it over the top,
making sure you cover every inch of the slice. Alright, that is looking delicious. My speculoos
slice. All we have to do is pop it in the fridge now to set and then we're ready to slice it up
and enjoy. Our speculoos slice has set. That was a mouthful. Now we can lift it out
and reveal. It's a bit of fun, super simple guys, just using that beautiful biscuit spread.
A little tip for cutting the slice, tip it upside down and now place it onto your chopping board.
You'll find you'll get a much cleaner cut and the chocolate won't break. Alright, now I like
to cut around the edges just so it's nice and neat. Now I call these little, little chef's
treats. Alright, now we'll just get some nice slices. So like I said, great for the kids lunch
boxes, maybe just a little piece or take it around to a friend's for afternoon tea. This will last in
an airtight container in the fridge for five days, so make it a few days ahead. Have a look at that.
You can see the beautiful chunks of biscuit and cashew through it. The chocolate top all held
together by that beautiful biscuit spread. Absolutely delicious. Onto our little fancy
plate here. Pile it up. Super simple, super delicious. This one's not going in the plate,
it's going in my mouth. You won't lose with this speculoos slice. Give it a try.
