12 Video Views·Apr 19, 2026 #vanlife Hi my name is Emi. I'm born in raise in small town just outside Quebec City, this is where my lovely accent come from. My #vanlife story starts in September 2018. After a long-term relationship that I was trying for more than a year to rebuild, I decided it was time to end this toxic relationship once for all. This is where I decided to move away from this man that I was still in love with. I put all my belongings inside my SUV (GMC Jimmy) and moved six hours from where I was living. I didn’t know where I would sleep, didn’t know where I would work but I knew I needed to make a drastic move. At that time, I told myself I will only sleep in my car for a month while looking for a place to rent. What I didn’t know is that one month became another month and another month. In the end, I end up sleeping in my car for a full year. Even if people will consider this the lowers time of my life, this experience was the best thing I couldn’t have done with my life. I took that year to focus on myself, decide what I wanted, and most importantly what I didn’t want. That year made me also realize that for so long, I was chasing the wrong dreams. I was chasing what society wanted me to be: to have a big house, a steady job, kids, get married… None of those dreams was making me happy. In September 2019, while I was actively looking for a van, I received a phone call that someone had found my cat (Kelly). After, trying for hours with no success to communicate with my ex-boyfriend (who was taking care of her), I decided to drive the six hours to go pick her up. Without going into too much detail, it turns out he wasn’t able to take care of her anymore. So I brought her in a cat kennel for a couple of days until I found a van we both could live in. I put all the savings that I had accumulated while living in my car and bought my van (a 2011 Ford Econoline that I end up adding a hightop) In the beginning, It wasn’t so glamour. My cat and I were sleeping on a mattress on the floor of the van. We both had to adjust. Now, my cat loves this lifestyle as much as I do; she looks at the window while I’m driving and she loves exploring new places. Since then, my cat Kelly and I are have been living full-time in my self convert van.
Ready for the backcountry? Here we go. The trail is a little bit bumpy.
All right we're gonna go check this campsite. See if we like it.
I think we have the whole campsite here for ourselves. So I think it's gonna be this one.
Which side I'm taking? There you go. So I think we're gonna have to redo the campfire. We have
the lake over there and I'm gonna have to level the van too as well. We're not very level.
All right kitty let's go. Let's go explore the lake. Not the grass. What's going on there?
You have all this all for yourself kitty. Wanna go by the water? I almost say you want to go by the
ocean because this lake is so big. So you feel like an ocean almost. And I'm glad that it stopped
raining just in time. Maybe you would jump a couple trees. You're crazy. All right come here.
All right so we are in a place with um oh one bar is self-reception.
But I'm still because I think it's been off for a while. So I think it's just maybe a little
glint or whatever. Maybe I'm gonna be able to text someone. But I do have this um it's called
Garmin inReach mini. It's a satellite cell phone if you want. Satellite device whatever you want to
call it. So if something happens in the backcountry in the place where I do have not any cell reception
which like right now it seems to be one bar sometimes zero. So if something really really bad
happened I you know I can do several things. I can text someone. So I can text my boyfriend, my
friends. They're all in Vancouver Island and be like you know um my van broke down uh can you bring this
part or can you just help me I'm in this part. So this will tell exact location where I am to the
person that I'm texting. Um so this is awesome but also awesome if it's got like really big emergency
I don't know my van fell off of a cliff. Hopefully it will never happen but I'm like you know bleeding
not able to get out of the van. Something I need emergency right right now. There's a SOS button
so I can push this and get um get help. So I should have charges uh before I went to the
backcountry. I kind of forgot but I'm gonna do that right now. So if um we need to contact someone
and if you go for on a little hike or something you can bring that with you. It's amazing.
All right that should be good. All right for my recipe tonight I need to soak some cashew.
Some raw cashew. Um to stuff them and I'm gonna need to uh blend them. So I'm just gonna put
already in the blender. I'm not gonna measure. Half a cup maybe. All right I'm gonna let that
soak until I'm ready to cook. So behind my seat here I always have a bear spray. You know
in case that a bear decides to open the door in the middle of the night.
So I keep that and I'm gonna bring that outside because we are pretty much
pretty far in the backcountry. So just to be on the safe side. And to be honest with you I'm not
super worried about bear although they are still active even if it's in the winter.
But we do have a very good population of cougar in Vancouver Island and I am a thousand times more
scared of a cougar than a bear. A bear most of the time they are just scared of you. They leave.
But a cougar they're like a cat. They're like Kelly. They like to sneak behind a tree
waiting for you type of things. You know what I mean? So yeah keep that in case.
So finally my fire is going a little bit better. I had a bit of a hard time to chop the wood.
My axe it just I think they call it a hatchet or something. It's just a smaller axe. It is a
mistake that I made when I purchased it. I thought that would help me because I have like weak
shoulder and I'm tiny and I don't have any good swing you know of this because of my shoulder.
So I thought that just a smaller axe and every time I use it I'm like I should buy another one.
And I don't know what happened but it opened. I have a lot like a case that go on top of it and
open inside my van. So it is absolutely the worst shape. It's not like I'm not gonna cut myself.
I can barely cut any wood right now. So I had to put the kind of like bigger size
wood chunk. So it kind of like was hard and I grabbed this inside my van and I'm just been like
hiding a little bit of air just to you know try to make it like a little better.
All right so I don't need a huge fire for what I'm gonna cook. I'm gonna cook on a Dutch oven
tonight but something kind of like a little bit different of what I usually do. I don't know that's
gonna be a really a trial because I've never done that and I'm not following a recipe. I'm just
following my instinct. So we'll see if I have a good instinct for that. But yeah I'm just
I'm gonna put a couple more pieces of wood. Chop a couple a little bit more pieces. I also burned
some stuff that fell on the trail there here. So they were unfortunately they were wet but
and after that I think we're gonna go inside and start prepping for lunch dinner because I didn't
have lunch and my Betty's making noise guys. It's just like if an animal is in the wood you're gonna
think it's a bear growling. No it's my Betty. I'm hungry. All right campfire is looking okay.
So we're gonna go inside and prep the dinner. I'm trying to make uh I could explain what would be
it's got so many so many words to kind of like describe this dish. So I think the best way you
could describe will be a potato and I'm gonna put some cauliflower potato cauliflower gratin.
I think it's quite French or at least I mean in my family I remember my mom was making that quite
often. Usually make with bechamel which is a milk creamy mixture look like a cream with milk
and uh she used to put some ham too as well sometime inside or it's it's it's a side dish
but today it's gonna be a main dish. So I'm gonna make that with uh cashew that's why I'm soaking
because you don't have to but I have like a kind of weak blender so it's better make more creamy
um but I don't know if I should kind of like boil the mixture a little bit inside and just finish
outside uh and I forgot to buy cheese where sometimes you put cheese on top but I do have
bread crumb so I'm gonna put bread crumb instead. I don't know like you can tell I'm not sure what
we're gonna eat but I have a feeling it's gonna be good so hopefully it will. All right where what
what I start with so the thing that I'm a little bit unsure about how to cook that if I should
lightly boil my potatoes before putting them and just finish the rest on the Dutch oven oh this is
too thick need to be thin. All right so I think I made I think I made my my I think I made my
decision um so I'm just gonna warm up everything in the pan a little bit so it's just gonna speed
up the time on the Dutch oven outside and just help me uh so I think that's gonna be it
put that in the pan and probably make a mess all right just add a little bit of water
and more spice and I'm gonna put that on the oven maybe 20 30 minutes we'll see
all right so it's been a couple minutes
oh I'm just gonna remove this and see what's going on inside
all right the potatoes are pretty much cooked but there's a tiny little bit too much water
so I'm gonna put it back and let evaporate a little bit and we're gonna put some bread crumb
and just caramelize the top or brown the top whatever you call it
I think it's gonna be decent
yeah potatoes need just need a little bit more time
all right check this out okay not too bad so my bread crumb didn't like burn
or get crispy but I'm still gonna eat it like this because I know the potatoes are cooked now
so sprinkle some green onion to make it look fancy very hot but I like it
I must admit that I overcooked the potatoes I think it was a bad idea to warm up things in
the pan first I should have just left it like this but it's good I'm gonna grab a plate
kitty again start my full flasher
what are you doing
she stepped some time on this one here there you go
they smell like campfire
and that's probably gonna be it for us guys I'm just gonna relax
read probably for the rest of evening my battery is getting super low I see the light
flashing right now so I think it's gonna be it I know I make campfire in the middle of the
afternoon and nothing at night is for also the reason that my camera is not good at night and
you guys not gonna see anything I buy a lamps to kind of help me but still really bad so
uh we do it in the afternoon and I was hungry or anyway so I'm gonna let you with miss kitty
obviously oh miss kitty is having a shower you clean yourself oh you gotta be all clean
yeah smell like a campfire you want to give them a little kiss you want to play
oh a little kiss upside down that's nice
you're playful what a cheese hotel
