Look from Seoul, you probably think every chicken stir-fry tastes the same.
No, you could not be more wrong.
This bad boy is on a completely different level.
Today, we're gonna be making chicken and green beans,
one of the greatest chicken stir-fries of all time.
It takes just 15 minutes with basic ingredients you might already have,
but it tastes like something straight out of a restaurant.
Plus, it's a healthy dinner option, so please give it a shot.
Trust me, once you try, I'm 100% sure you'll become a staple in your dinner rotation.
For this, you'll need some chicken, green beans, garlic, ginger, and onion.
That's it. Super simple, right?
Honestly, ginger and onion, these are totally optional,
but I can't compromise the flavor for simplicity because of my hangry bird at home.
So let's put in a little bit of extra effort.
And if you wanna make this dish look more fancy,
then grab one mild red chili.
It will add a vibrant pop of color to your dish.
Alright, let's prep the chicken first.
Take one pound of boneless, skinless chicken breast,
and cut it into nice bite-sized pieces.
Today, I'm using chicken breast, but if you wanna use a different cut,
go ahead and use that.
Any cut of chicken or even other proteins will work perfectly in this recipe,
so feel free to play around with what you have.
Trust me, that will all turn out amazing.
Now, let's marinate our chicken.
To the chicken, add half a tablespoon of soy sauce,
one tablespoon of Shaoxing wine,
a quarter teaspoon of white pepper,
a quarter teaspoon of baking soda,
one tablespoon of neutral oil,
one tablespoon of cornstarch,
and give it a good massage.
Super simple, right?
But this simple marinade will make your chicken unbelievably juicy and tender,
so do not ever skip this step.
By the way, we have all the instructions and a list of ingredients on our blog.
So please visit here if you need a written recipe.
This time, let's prep our vegetables.
Take one pound of fresh green beans or string beans,
trim off the ends, and cut them into bite-sized pieces.
Just so you know, I'm using fresh green beans today,
but frozen ones will work just fine.
Or you can even use other green vegetables.
So like I always say, just use what you have on hand.
Trust me, it's all gonna taste amazing.
Next, smash three cloves of garlic and finely chop them.
And then, grate a small knob of ginger.
About one teaspoon will be enough.
Once that's done, dice half an onion into nice bite-sized pieces.
Like I said earlier, these aromatic vegetables are optional,
but they build layers of flavor that take the dish to a whole new level.
So I highly recommend using them.
What? You wanna add some green onions?
Look at you.
You've got some serious taste.
I'm so proud of you.
Last but not least, thinly slice one red chili.
If you can't find a mild red chili like this,
then just use a red bell pepper.
No problem at all.
Alright, before you start cooking, let's make the sauce.
In a small container, add one tablespoon of soy sauce,
two tablespoons of oyster sauce,
one teaspoon of dark soy sauce,
one tablespoon of sugar,
one tablespoon of Shaoxing wine or any cooking wine,
one teaspoon of chicken bouillon powder,
a third cup of water,
one tablespoon of cornstarch,
and give it a good mix.
That's it. Couldn't be any easier, right?
Alright, we're set. Let's get cooking.
In a large wok or pan,
add one tablespoon of oil and heat it over high heat.
Once it gets nice and hot,
add your marinated chicken,
spread it out in a single layer,
and then let it sear for about one minute
or until the bottom gets beautifully golden brown.
You know what?
This is where all the flavor starts to build.
So make sure to give it enough time to get some nice browning.
Once the bottom turns beautiful golden brown,
flip and cook the other side for about three to four minutes.
When the chicken is nice and golden brown all over and cooked through,
remove it from the wok and set it aside.
Now, in the same wok, add two tablespoons of oil
and heat it over high heat.
Once it's nice and hot,
add in the green beans and spread them out evenly,
just like we did with the chicken.
And then let them sear for about one minute
or until the bottom gets nice and browned.
Trust me.
This is how you get that amazing smoky flavor.
Now, stir-fry green beans for about three to four minutes
or until they reach your desired texture.
If you wanna speed things up,
here's a pro tip.
Add a splash of water,
cover it with a lid,
and let them steam just a little bit.
It's a great way to cook them through faster
while keeping that vibrant green color.
What? You wanna know this kind of tip more and more?
I'm so glad you brought that up
because everything you need is in these two books.
Trust me.

Once they've reached your desired doneness,
add the garlic, ginger, onion,
and saute those for about 30 seconds.
And then to that,
add the chicken, sauce,
and stir-fry everything together for about one minute
or until everything is nicely coated in the beautiful sauce.
That's it.
Nothing complicated, right?
All right, let's turn the heat off.
And then add one teaspoon of toasted sesame oil,
red chilies,
and give it a final mix.
How about that?
Ridiculously simple, right?
So please give this a try.
You definitely won't regret it.
All right, we're almost there.
Let's transfer it to a serving plate
and serve it with a bowl of warm rice.
And there you have it,
our chicken and green beans.
You wanna know how it tastes?
All right, let's call our taste tester.
Claire?
As always, it looks super delicious.
Let's give it a try.
Let me try the green bean first.
Cheers.
It's good.
It's still crispy and delicious.
The savory taste of the green bean
and the saltiness of the sauce
harmonize really well,
so it's really good.
Shall we try the chicken this time?
Shall we try the chicken?
It's nicely coated in the sauce.
Cheers.
It's so good.
Mmm.
So good.
To be honest,
I'm not a big fan of green beans.
But this is really good.
Plus, the prep is not that hard.
It's just so good.
I'm not a fan of green beans.
