Please note that this should not be instant oats, but regular oats,
which require a little more cooking time.
We need just 60 grams of fresh spinach and a bunch of cilantro, 20 grams.
If you don't like cilantro, feel free to replace it with parsley or dill.
One clove of garlic goes in here too, and a small piece of fresh ginger.
It will give our flatbreads a tangy note and make them even healthier.
Ginger great for stimulating blood circulation, warming you up, and aiding digestion.
And send the peeled piece to the rest of the ingredients in the blender.
By the way, you don't have to throw away the skin. You can add it to tea. It's also very aromatic.
And blend everything until it's a completely smooth, bright green puree.
Look how beautiful it turns out.
All the color and all the benefits remain in this puree. Nothing is lost during cooking.
Pour this green magnificence into a deep bowl.
Add a pinch of salt. I start with about half a teaspoon.
It's better to use sea salt. They have more beneficial minerals.
Now we start adding our oat flour, little by little, in portions.
This way the dough will be more uniform, without lumps.
And mix the dough with a spoon. At first it will be sticky and uneven,
but we'll knead it a bit and it will become more elastic.
By the way, which city are you watching from? I'm very interested to know where my viewers are.
You know, oat flour is truly a gift for our health.
It's packed with beta-glucan, a special type of fiber that gently lowers bad cholesterol
and helps our heart work better. Plus, oats give us long-lasting energy.
After breakfast with these flatbreads, you won't feel hungry for hours.
If you don't have oat flakes or want to experiment, you can easily replace them
with buckwheat flour. It's also very healthy and has a nice nutty flavor.
Or try whole wheat flour, or even a mix of rye and oat flour.
For a gluten-free version, buckwheat or rice flour work wonderfully too.
The main thing is to keep the proportions the same.
One cup of flour replaces one cup of flakes. So choose what works for you and enjoy.
When almost all the flour is incorporated, pour in a tablespoon of olive oil.
Extra virgin olive oil contains healthy omega-3 and omega-6 fatty acids,
which are essential for heart and vascular health.
Just a couple of minutes and it will become soft, pliable, and stop sticking to your hands.
The oil does its job.
Kneading with your hands is also a kind of massage
that calms you down and helps relieve tension after a long day.
To prevent the dough from sticking, dust the counter with a small amount of oat flour.
Place our green ball and roll it a bit in the flour.
Form the dough into a thick log like this and cut it into equal pieces.
I got six pieces, just enough for six flatbreads.
The most convenient way is to first cut the log in half and then each half into three parts.
Roll each piece into a neat ball.
The work is quick and very pleasant.
You can call the kids to help. They love playing with dough.
It's such a cozy family moment, isn't it?
I remember teaching my daughter to roll these balls when she was little
and now she helps me all the time.
Cooking together creates the warmest memories.
And you know, when kids are involved in cooking,
they're much more willing to eat it later, even healthy green pancakes.
Roll each ball in oat flour again.
This will make the flatbreads easier to roll out and they'll get an appetizing crust.
Use a rolling pin to roll each ball into a thin circle.
Try not to roll them too thin, about two, three millimeters,
so the flatbreads remain soft inside.
See how nicely they roll out?
The dough is very obedient and pleasant to work with.
If you want them a little thicker, that's fine too.
They'll be more like pita bread.
And if you prefer them crispier, roll them thinner, almost translucent.
Cooking is all about adjusting to your taste.
The main thing is that they cook evenly,
so try to keep the thickness the same across the whole flatbread.
If the dough suddenly starts sticking to the rolling pin or the counter,
just dust with a little more flour.
Don't worry, extra flour won't hurt here.
Sometimes the humidity in the kitchen affects the dough.
On rainy days, it might need a bit more flour.
Roll out all the flatbreads and stack them.
You can layer them with parchment paper so they don't stick together.
This way, they'll wait their turn perfectly while you finish rolling the rest.
And if you're not planning to cook them all at once,
you can even freeze them at this stage.
Just put parchment between each one, wrap well, and they'll keep for up to a month.
Then on a busy day, you can just take out as many as you need
straight from the freezer and cook them without even thawing.
Cover our prepared flatbreads with a towel and let them rest for 10 minutes.
This is an important step.
Well, our flatbreads are almost ready.
They've rested, now we can fry.
Place a dry non-stick frying pan on the heat.
No need to add oil.
We're making a healthy dish.
Why add extra fat?
Fry on both sides until golden brown spots appear,
about one to two minutes per side over medium heat.
I always use a clean towel to flip the hot flatbreads and avoid burning myself.
It's convenient and safe.
My grandmother's method, by the way.
Look how beautiful.
The flatbreads are ready.
They're golden, soft, and incredibly aromatic.
And the smell in the kitchen is just like a fairy tale.
My husband always comes running to the kitchen when he smells these frying.
Honestly, they disappear from the plate faster than I can make them.
Even my picky eater son, who usually avoids anything green,
grabs them without asking what's inside.
That's when I know the recipe is a real winner.
Healthy flatbreads are ready.
While they're hot, I like to brush the tops with a little olive oil.
It gives them extra shine and makes them even tastier.

I have many recipes.
You'll find everything from hearty breakfast options to light dinner ideas there.
And trust me, once you start making your own flatbreads,
you'll never want to go back to store-bought.
They're fresher, healthier, and made with so much more love.
And now, the secret weapon.
Let's make an incredible sauce.
Put two tablespoons of thick Greek yogurt in a bowl.
Greek yogurt is rich in protein and calcium,
and it has little sugar, unlike regular yogurts with additives.
Squeeze the juice of half a lemon.
Try to keep the seeds out of the sauce.
Lemon gives us vitamin C and a pleasant tanginess.
Mix the yogurt with the lemon juice.
Add salt to taste, and a generous pinch of freshly ground black pepper.
Freshly ground pepper is much more aromatic than the pre-ground kind from packets.
It has these wonderful essential oils that only release when you grind it fresh.
If you don't have a pepper mill,
you can lightly crush whole peppercorns with the flat side of a knife.
It works in a pinch and still gives you that amazing fragrance.
Press in two cloves of garlic.
If you like it spicier, add three.
The garlic in the sauce will release its aroma, but won't be as sharp as when raw.
And the main highlight, three pickles.
Not the marinated kind, but pickles.
They give that rich, tangy flavor.
Pickles retain beneficial bacteria that aid our digestion, just like in sauerkraut.
Finely chop them into small cubes and add them to the sauce.
The finer you chop, the more evenly the flavor will spread.
Mix everything thoroughly.
The smell alone makes your mouth water.
Let the sauce sit for 10 to 15 minutes so the flavors can meld together.
For freshness and aroma, add a little finely chopped dill.
Dill is also very healthy.
It's calming and helps with bloating.
So, what do you think of this sauce?
In my opinion, it's simply divine.
Thick, spicy, with crunchy bits of pickle.
The perfect complement to our green flatbreads.
It's incredibly aromatic and just melts in your mouth.
Finger-licking good.
And the best part?
There's no mayonnaise in the sauce, just natural yogurt and spices.
What score out of 10 does this recipe deserve?
Look what a beautiful, bright, and healthy dish we've made.
And it's surprisingly simple to prepare.
You can eat these flatbreads for breakfast, dinner, or even take them on a picnic.
And store-bought bread doesn't even come close.
