Hello everyone. Today in my kitchen I am making one of my favorite Middle Eastern
classic hummus and falafel. Hummus, chickpeas, tahini, cumin, limon juice. Falafel,
chickpeas, fresh herbs and crispy outside and soft inside.
Be sure to rinse the soaked chickpeas several times with cold water and boil them in fresh water.
First we process all ingredients, chickpeas and ice in a food processor.
Then we add the tahini, cumin, limon juice and salt.
Once it reaches the desired consistency we add the olive oil. We check the taste and serve.
And we started making falafel. Soak the dried chickpeas in water for at least 12 hours.
Drain well. Do not cook them as raw soaked chickpeas create the authentic texture.
In a food processor combine chickpeas, onion, garlic and parsley. Blend until a coarse grainy
texture form. Avoid making it too smooth. Transfer the mixture to a bowl. Add salt,
cumin, red pepper, egg, flour, breadcrumbs and sunflower oil. Mix until the mixture holds together
but it's not too wet. Refrigerate for 20 minutes to allow the mixture to form up.
