From light beef soups and chewy rice paper rolls to rich, Michelin-recognized crab noodles and refreshing avocado desserts, the exploration highlights the bold flavors, varied textures, and authentic market experiences that define the local gastronomic scene.
They say Da Nang is where the sea meets the soul.
A city caught between mountains, ocean, and the smell of something stewing.
And on this trip, Da Nang didn't just feed me.
It tangled me in its noodles.
Because here, carbs aren't optional.
They're destiny.
And I really tried to pace myself, but the noodles?
They had other plans.
First thing I want to eat in this city.
So you can either get the Uy Beef Noodle Soup or the Special Uy Beef Noodle Soup.
Let's go for the special.
So today I really wanted to go to the city of Uy
because I really wanted to eat Bun Bo Uy in the original city where it's from.
But hey, making it to Da Nang?
Not too shabby.
And this is unlike any other Bun Bo Uy I've ever seen in my life.
So this is the special Bun Bo Uy with a ginormous beef rib,
with pig trotters, what looks like meatballs.
Scallions in a very light color broth.
Let's try the soup.
Oh, it's so good.
It's so good.
Slices of lime in here.
Noodles, of course, are some of my favorite things in the world.
And Pho and Bun Bo Uy are my favorite Vietnamese noodles.
Grab some herbs and greens, put it in.
This broth is so light, but at the same time, immensely beefy.
Even better with the added lime.
This bowl of noodles is almost overflowing with meat.
The beef is nice and tender.
This is definitely the lightest Bun Bo Uy I've ever had.
Very, very light.
The broth is almost like that of Pho.
And look at how easily that beef came off the bone.
What?
Oh, that's tender.
The noodles are nice and chewy.
Soaked up that wonderful beefy flavor from the broth.
Let's add some chilies in here.
I like it better with some heat.
There's some hot oil.
I'm gonna add that too.
And I also want to add some of this, some vinegar.
All right, let's try this now.
It's great.
Love the added heat in this delicious bowl of beef soup.
This is delicious.
Of course, I'm just a huge fan of this dish.
I don't know much about how the locals prepare it,
but this is the first Bun Bo Uy I've had without any blood.
I don't see any blood cubes in here.
Not complaining.
I mean, this is amazing.
Just an observation.
Beef ball.
Like a really tender beef ball.
This is so good, especially with the added vinegar.
And of course, check this out.
This bowl of noodles comes with a nice, big, fatty piece of pig trotter.
One bite of that, you're getting the best of all the pieces.
There's lean meat in here, there's fat, there's skin.
This thing just adds so much nice richness in your mouth.
So the owner of this establishment, he's from Hue,
and he tells me this is the best seller.
I'm telling you, this beef rib, incredibly tender.
It's so, so tender.
The meat breaks apart easily in your mouth.
This and the pig trotter, both so good.
Chase it with the noodles.
That's chewy to the last strand.
Like I said, it's definitely lighter than the Bun Bo Uy I've had in the U.S.,
but there's some crazy good flavors in this bowl of noodle soup right here.
I sought this place out.
This is one of the highest recommended places for Bun Bo Uy in this city,
and I can definitely see why.
Oh man, it's like 1 p.m.
Waited all day to make sure my first bite of food are these noodles.
Yeah, I could easily do another five bowls of this.
And this is gonna be a kind of a short day.
I only have about less than four hours to kind of explore the city
before heading back to the boat.
So after this, I saw another restaurant while I was heading to this one
that looks overflowing with people.
So I'm gonna head there next, and then I'm going to a market,
like the biggest food market in the city.
Probably get another bowl of this over there.
Usually a hot bowl of soup, then walking out into like a pretty much a sauna
will feel not great.
But I'm just so happy right now after a bowl of that.
All right, let's see if I can find this restaurant I passed by.
Oh, this juice place looks great.
This is the place right here.
I drove past this place, and I saw all the people in here that looked it up.
They're saying if you come late for lunch, you're not getting a table.
Look how many people are still here.
This is way past lunchtime.
Okay, this gotta be good.
The pictures look amazing.
I bet you this place is awesome.
So that was about a 10-minute walk.
I'm already drenched.
Like I said, it's a sauna out there.
So it's pretty cool.
This place has like a unlimited herbs and greens bar right in the middle,
so you can grab whatever you want.
And it's rolled rice paper.
Okay, wow, cool.
There's English on here.
Great.
You can either get it with grilled pork, boiled pork, or beef shin.
I'm gonna do grilled pork and beef.
There's sprouts, there's cilantro, there's basil.
There's pretty much everything you want to eat with your rice roll.
And people are just getting ginormous platefuls of this stuff.
I really don't know what's good.
Get some cilantro, some lime, some mint, some basil, little sprouts.
This is all I got.
I think it's definitely gonna take me a little bit of cool down here.
I'm so excited for this.
I got a blueberry soda and a Pepsi.
Man, I just want ice right now.
Oh my gosh.
It's so hot, the table is burning hot.
This is actually pretty good.
There's chilies, there's fish sauce, there's some sort of peanut sauce right here.
You might see people just kind of pouring the sauce into the little bowls.
Some fish sauce, gonna mix in some chilies.
That's a lot of chilies.
He thinks I made a horrible mistake.
That's a lot of chilies.
I know, I like chilies.
So people are just wrapping it, the meat, the veg.
It's a little tricky because I gotta film at the same time,
so I have to hold my camera with one hand.
I'm just gonna try to do it with my chopsticks.
So the rice paper on the outside is crispy,
and the inside, this is the chewy rice roll.
Okay, this is ultra ultra thin rice rolls right here.
So I think this goes inside.
So I'm just gonna put the rice roll on my pork.
Put the thin soft rice rolls inside.
I'm gonna dunk the thin rice rolls in the sauce.
Put it on top.
Oh my gosh, this is so crazy looking.
Here, I'm gonna dunk this in the sauce as well.
Add a little fish sauce and chilies.
Greens goes on top.
I need two hands, this is so hard to roll with one hand.
This is the worst wrapping job ever.
End of the day, going in the same place.
This has gotta be one of my favorite things in Vietnam so far.
Oh, I love this so much.
So much, so much.
First of all, I think half a slice of pork is more than sufficient.
That pork, one of the greatest things you ever put in your mouth.
It's so tender and fatty.
And the top, oh my gosh, that crispy layer of skin.
When you crunch down on that,
you feel like your soul left your body for a little bit.
That was just the most perfect combination
of ultra fatty melt in your mouth and ultra crispy.
Let's do that again.
See if we can do a little better this time.
Just dunk the rice roll into the fish sauce and chilies.
Everyone's looking at the amount of chilies I have.
I don't care, I like it spicy.
You just own it, you know?
Do what you like.
Add some greens, some sprouts.
I think half a pork belly would more than suffice,
but it's so hard for me to break this in half right now.
I'm just gonna go ahead and put a whole piece in here.
And there's gonna be a lot of meat in this rice roll.
Wrap it up.
Again, a horrible wrapping job.
I now know why everybody's just getting a mountain of veg and herbs.
The rice rolls are gloriously chewy.
Such a wonderful crunch from the veg, the sprouts, the cilantro.
Oh my gosh, this is so flipping amazing.
I mean, everything about this is amazing.
The rice roll's delicious, the pork is great, the veg, the herbs.
Everything's fresh and amazing.
The sauce is good.
Ah, this is a thin little one right here.
It's refreshing.
Got some lettuce, some cucumbers.
What a way to eat.
Dip the rice rolls in the fish sauce.
Dip the meat in that brown sauce, which is really savory, by the way.
Add some lettuce, some cucumbers, little herbs.
There we go.
This one looks halfway decent.
I think I'm getting better at this.
That pork is so glorious.
I see on the menu they have pork and beef.
Even by not having the beef, I'm gonna go ahead and recommend you get the pork.
I can't see the beef being better than this.
I'm so happy I saw this restaurant from the cab.
100% must try if you're ever here.
Actually, this whole city.
Ah, I'm so mad I only have a few hours.
There's so many amazing looking places to eat.
All right, I gotta hurry up and eat and then head to the next place.
Welcome to Kang Market.
I've heard so many good things about this place.
This is one of the biggest markets in the city and it has, well, pretty much everything.
There's fruits, there's produce, there's houseware items, there's sauce, there's spices.
There's incense.
I think that the fish and produce portion of the market, you gotta be there earlier in the day.
And this market in particular is known for having just an enormous amount of food.
This is the market food court and there is everything.
There's spicy snails, there's barbecue, rice rolls, there's drinks, there's coffee.
This is definitely a little hidden food paradise.
Right in the middle of this market.
I don't even know where to start.
I have no idea what I'm doing here.
So I sat down.
Everyone's eating these rice cakes.
These are called, I think, bambyul.
Different little rice cakes.
And when you sit down, they give you like a mix of them.
On top, some fried onions and some meat cakes as well.
Look at this.
Really interesting little rice cakes.
So I just got a mixed platter right here.
Let's try it.
So these ones are a little sweet.
They put a little bit of fish sauce on here for you.
This one on top is a little fried quail egg.
And all this is sitting on top of thin, soft rice noodles soaked in fish sauce.
That's delicious.
The fried egg is good.
It's nice and crispy.
The rice roll is so soft and chewy.
On top, fish cakes, sausages.
A little sausage right here.
That's really nice and peppery.
So just an assortment of sausages on top of the rice roll.
Whoa, this sausage is super vinegary.
This looks really interesting.
This looks like a steamed rice cake with something in the middle.
Whoa, it's bean paste in the middle.
It's a little crystal rice dumpling.
It's just ultra chewy.
And this one in the middle is a little shrimp.
Like a super umami-filled, briny little shrimp.
This is a plate of food with such an interesting array of textures.
You got the chewy rice cake, the spongy sausage, the shrimp in the middle, the crunchy onions.
This is delicious.
I wanted some snails though.
All right, this is something else that's really famous in this city.
Avocado ice cream.
I'm sure when Tom Brady was talking about his avocado ice cream, I'm sure he didn't mean this.
And I'm sure his version is not nearly as good.
This is ridiculous.
There's creamy avocado on the bottom of the glass.
Coconut ice cream on top.
What I thought was like fried garlic.
That's silly.
It's toasted coconuts.
And peanuts on top to give it a very nice nutty texture.
I mean this thing is extremely rich and creamy.
The avocado is delicious.
Like really, really creamy avocados.
And that goes very well with the coconut ice cream.
And then you add the extra toasted coconuts.
Even better.
It's rich and refreshing.
It's like the Vietnamese food gods high-fiving your taste buds.
This is really good.
I'm so glad I was able to give this a try.
Like really rich though.
You gotta be prepared.
I think after this I need a glass of water or a tea or a coffee.
So rich but incredibly delicious.
I just ducked into a coffee shop.
Every chance you get and cool down.
Look at this.
This is beautiful.
This is a Vietnamese black coffee.
That's tasty.
Oh this thing tastes powerful.
It's gonna make you feel like Jeff Fuel is pumping through your veins.
It's so nice to hold this icy glass.
There's not a lot of places here that has air conditioning.
I feel so good.
And right around the corner from this coffee shop.
Check this out.
This is a Michelin noodle restaurant right here.
So this is a Michelin Mombo Egg.
Look at this.
Beef tongue.
Slices of I think it's beef shank.
This is a crab meatball.
There's tendon in here and blood.
Again the broth color is is very light.
I think it's delicious.
I think it's really really good.
Oh there's so much flavor.
This is much richer than the first bowl of bamboo I've had today.
Wow.
This one tastes crabby too.
The flavor goes way beyond beef.
A little sweet.
It's definitely different than the very beefy bamboo I had.
I mean it's still beefy but at the same time like I said it's crabby too.
I bet it's gonna be tender.
Yeah super tender tongue.
Springy rice noodles.
I think the flavor is really nice.
I think the crab flavor adds another layer of umami to this dish.
That's really good.
This thing is so rich I feel like some vinegar is really gonna
brighten the flavors even more.
Yep that vinegar is really really nice.
Add some chilies.
Just for kicks.
Yep and there's the kicks.
Michelin bon bouille.
I've had Michelin pho before.
Never had this.
Like every single piece of beef is super tender.
I think that's like a common characteristic I noticed in my two bowls of noodles today.
The beef in both bowls fall off the bone tender.
This one has blood.
That tastes like irony.
Again really really different than the bon bouille I've had in the U.S.
Incredibly different.
You can see the crab even on the outside.
That's really crabby.
Tendon is always something I welcome.
I could eat this all day long.
If I lived here every day start my day off with a bowl of this.
So glad I got another bowl of this before I left.
I'm risking it a little bit.
It's about an hour from here to the meeting point where I need to be to get to the next city.
And if I miss that shuttle it's it's gonna be game over for me.
But this place like right two blocks from from the other noodle shop
was another place I had on my list and I figured it's so close I want to give it a try before I leave.
So let's just try to squeeze it in.
So this place is known for crab noodles.
And it looks like a lot of different toppings goes into these noodles as well.
I gotta finish this bowl in about 10 minutes or else I'm really in trouble.
Now I gotta hope I can find a cab that'll take me an hour away.
Wow oh this looks glorious.
Look at this.
A cube of blood of course.
This looks like some fried dough.
Fish cake.
Look at all this crab meat in here.
Oh and the super thick noodles.
This is a really thick thick bowl of noodles.
And for condiments there's calamansi, there's chilies, there's sprouts.
Let me just taste this as it.
Oh this is a thick thick broth.
This might be some of the crabbiest noodles I've ever had in my life.
Oh the broth is so thick and crab infused.
Oh my gosh this is like just a concentration of flavor.
Oh it's so crabby.
It's so thick and rich.
It really does need it needs vinegar.
Needs vinegar.
It's a calamansi.
Wow this is so thick and rich.
Oh man oh the crab flavor is just enormous.
There's shrimp in here.
There's pork.
Oh man these are some ultra chewy noodles.
Grab onto that rich broth very well.
This tastes like fish.
It looks like fried dough.
It tastes like fish.
A little weird.
A little bitter.
I'm not really sure how to feel about this.
There's a quail egg in here.
This is such an intense bowl of noodle soup.
I'm so glad I didn't leave town without trying this.
I mean this is infused with so much crab flavor.
Oh it's really something.
Wow I think I'll definitely need another coffee after this.
You know after I manage to catch my cab.
That was really good.
And it's been such a short but very fun day exploring the city.
I especially like walking around the food market.
There's still a bunch of more food I wanted to try but really just short on time today.
But what I had so far in this city loved it.
Some of the most unique bumble I ever had.
Super unique crab noodles.
I hope I get a chance to stay longer next time.
As always I'll place that went to list down below for you guys.
Thank you all so much for watching until we eat again.
See you later.
