Video Summary
AI GeneratedThis video demonstrates how to create a \"Hot Honey Bee's Knees,\" a modern, spicy twist on a classic Prohibition-era gin cocktail. By incorporating hot honey syrup and a pinch of salt, the creator transforms the traditional sweet and citrusy profile into a \"swicy\" (sweet and spicy) beverage that balances heat with acidity.
There's been a recent trend of people really enjoying sweet and spicy flavours brought together
and one of the key drivers of this has been hot honey. So hot honey is a great ingredient
but actually you don't see it often used in drinks and that is what we're going to do today.
So we're going to take a classic honey cocktail which is the bees knees,
slightly adapt the recipe, bring it up to date and this version, the hot honey bees knees,
really is exactly that. So stay tuned, stick around and let's make it.
If you've been following the channel this month you'll have seen some delicious sweet and spicy
drinks so far, also known as swicy drinks, not my term, I think it's a strange name but it kind of
works and so far we've explored the spicy jungle bird, the picante iced tea which is a non-alcoholic
drink and today we're making the hot honey bees knees. So a classic bees knees dates back right
to the 1920s, it's a prohibition era gin cocktail and the original specs call for gin, lemon juice,
honey and some recipes call for a little bit of orange juice in there as well and this is a
fantastic drink, very straightforward, not too complicated but I think it's a perfect foundation
to build those sweet and spicy flavors on top of which is what we're about to do. So into our
shaker tin we're going to start with our gin and I'm going with 60 mils here which is a pretty
heavy pour but actually this drink is really well balanced, it's not overpowered by the gin
because the lemon obviously is a big flavor as is the honey and also the sweet and spicy flavors
and then to this I'm going to go 22.5 of freshly squeezed lemon juice but before we do that I'm
just going to take off a big rind of lemon which is going to be our garnish which we're going to
express over the drink and then serve on the side of the glass which is already in the freezer and
we're going to juice this straight into our shaker. So that's going to equate to probably just over
half a lemon, I recommend measuring this in the jigger so 22.5 mils of that and then we're going
to go with this which is 22.5 mils again of our hot honey syrup. So this is really easy to make,
all you're going to do is dissolve the same amount of hot honey into boiling water,
mix the two together so it's a little bit more pourable because obviously if you're adding honey
to the drink that's going to be very thick, difficult to get the measurements right whereas
bringing it down with a little bit of water just makes it a little bit more manageable,
a little bit more consistent and it doesn't really have too much of an impact on the texture of the
As well as sweetness, this is obviously going to bring that nice coating texture. Spice, obviously
this is hot honey so it's infused with chili and this is a really interesting take which moves this
bee's knees away from the classic specs into a hot honey version. I really like to add a little bit
of salt here because I think it just offsets the acidity and sweetness, kind of bridging the two
together and making all the flavors really harmonize and then we're going to shake it over
lots of ice. I've been making videos for about four years now and I still don't know where to look when
I shake a cocktail to be honest. I'm gonna fine strain that into a nice chilled coupe, express that big
swathe of lemon we took earlier over the top of the drink to add even more of that citrusy flavor
and then that is gonna live on the side of the glass and within that we're gonna place a little
chili which really reinforces that this is a spicy drink and you can always take a bite of it if you
want to, I'm not going to, and there we have a really interesting unique take on a classic cocktail
which is the hot honey bee's knees, spicy. All right there it is, the hot honey bee's knees, cheers.
There it is, bit of heat, gin is the first thing you taste, the balance is bang on, the salt I think
brings it all together and that warmth from the hot honey I think works really nicely. The honey
flavor in the gin actually works surprisingly well, obviously this is a classic for a reason
but I think this riff, although it doesn't take itself too seriously, just lands really well. I think
it's a perfect take on a spicy drink, sweet and spicy and hopefully you give it a try. So if you
enjoy this kind of thing whether that's cocktails, coffee, iced tea, matcha or just creative drinks
