This healthy, aromatic puree is made from dried jujubes, fresh ginger, and honey, offering a sweet and spicy flavor profile that can be used in various warm and cold beverages or as a nutritious topping for snacks.
Today I'm going to show you how to make a classic Korean tea using dried jujubes and fresh ginger.
This tea is called daechu saenggangcha. This is a must-have especially during the winter months.
Now make sure to watch to the end because I'm going to show you how to enjoy this tea in different ways.
Oh it smells so good. This is a really good aroma therapy that you can make for yourself at home.
Hi everyone this is Helen and welcome to Modern Pepper.
These are dried jujubes and in Korean we call that daechu and you could buy this at any Korean
supermarket or order it online and I'll have the link in the description box below. And for our
recipe today we'll be using about 110 grams of dried jujubes and we need about 65 grams of fresh
ginger called saenggang in Korean. Now make sure to rinse the jujubes really well in cold water
and rinse it two three times. And the same thing for our ginger just rinse the skin by rubbing it
with your thumb because we're keeping the skin on. Using a kitchen towel just dry off the rinsed
daechu and our ginger too. Just pat it to dry. All right so we're gonna cut our daechu down the
middle go around in a circle like that and then you want to split it open. We have to take the
seed out. This is the seed and then once you cut it open in half you just want to make some cuts
like so. It's a little sticky but we want to pre-cut this. Here is our last one so the other
option is you just go around it and turn and we're just going to score it four ways and then on the
other side like that and then you just kind of pull it back. This is another option. So make sure
to cut them all into similar sizes so it blends well in our blender like so and this is ready.
And for our ginger we just want to slice off sort of the dull ends like that and discard right here
and another piece right here. So we're gonna keep the skin on because the skin has so much nutrition
you could google it and read more about it but we're just gonna slice them thinly like so and
then we're gonna stack them and we're just gonna cut them into thin strips. So I know you're asking
so what does dried jujube taste like right? So it kind of has a spongy texture inside and it's
squishy and it also tastes like dehydrated apples so it has a sweet aftertaste but not too sweet
and the skin has this amazing cinnamon and also sweet apple skin taste. It is amazing and guess
what this is a really healthy snack so you could just eat it as is. It's not as sweet as a dried
fig but it's still sweet enough to satisfy your sweet tooth if you have any and we all do. And
we're gonna add our chopped up jujube into our blender and our fresh ginger and to this we're
gonna add one cup of water then put our lid on make sure it's secure and then at low speed we're
gonna just puree it. So we blend it for about good minute so our puree consistency should look
like this like baby food smooth. So we're gonna pour this into a small pot so make sure to scrape
everything out because you don't want to waste any of this. I mean it smells so good like I could put
my face in it. All right so we're gonna turn the stove heat on and we're gonna set it to medium low
and this part's really really important you just want to stand over it and just mix it
and we're just gonna slowly kind of cook this mixture on low medium heat for about good five
to eight minutes. Now it's really really important that you constantly stir this and make sure to
scrape the bottom continuously like so and eight minutes later our jujube ginger mixture is nice
and hot like that. All right we're going to quickly transfer this to a bowl again make sure
to scrape everything out of the pot so I want you to have a quick taste test. It's a little spicy
from the ginger but in a good way and the jujubes are so sweet. I'm gonna add a little bit of honey
to this but you might not want to because it's already really sweet and yummy and we need a
quarter cup of your finest honey and then I just want you to kind of fold and turn fold and turn
to mix our honey in with our jujube and ginger goodness. Oh it smells so good in here right now.
Okay and this is basically done so let this cool down for a bit and then we're gonna put it in a
So I'm gonna separate mine into two jars like so and here's the second jar so make sure to pack it
down and clean around the rim look at that. I like to separate into two jars so I could keep one in
the freezer and then the other one in the fridge as I eat through it and guess what this also makes
a really nice gift for someone that you care dearly about. So I have something to show you
look at this. This is my mom's recipe that I'm sharing with you but my mom look she made me like
a gigantic jar. Now you could also upgrade the flavors of this by adding just a small pinch of
cinnamon powder. You could also add less than a quarter teaspoon of your very finest vanilla
extract. That would be awesome. Now if you are lucky enough to get a strip of vanilla beans I
would add a quarter stick of that to this then like the flavors will be just out of this world
it's just will be extra extra extra yummy but for moi I like it the way I like it just simple with
these three ingredients so make it the way you like it. Here we have a big dollop of our jujube
and ginger puree and we're just gonna pour some hot water as easy as that and we're gonna throw
in two slices of our jujube and just give it a stir dunk our dried jujube in here
one piece of dried jujube as a snack and there you have it. Another way to enjoy this is with
your finest black tea and we're going to take the tea bag out and to this we're going to add a big
spoonful of our jujube and ginger mixture mix it well and then I have some warm milk that I'm
frothing up like so and we're gonna pour some so this is like your Korean London fog without the
London just mix it all up oh you know this is gonna be so good and add two slices of daechu
oh that is some seriously yummy Korean latte that you could have in the afternoon okay so this is my
other favorite way to have this so I have some of our mixture in here in a glass and to this I'm
going to add some sparkling water and then just mix it look at that so instead of soda I drink
this especially when I have like some indigestion or something where I want to have a refreshing
drink without all that extra sugar hope you try this at home and here's my other favorite way to
have this as part of my snack here I have my favorite Greek yogurt and to this I will put a
huge dollop of our jujube and ginger mixture and to this I would add some toasted pumpkin seeds
and a little bit of flax seeds on top like that and add two pieces of our daechu like so
and there you have it folks your healthy Greek yogurt with our Korean jujube and ginger puree
with our healthy toppings oh yeah this is really good it's kind of hot so make sure to blow on it
that's good now I'm just gonna kick back and relax and enjoy my daechu ginger tea yeah really
make this at home and enjoy it so I want to thank everyone for watching today and if you enjoyed
