We did lots of traveling in the last few months to wrap up the sport events for
my younger son and we are slowly settling back to our old schedule and old routine.
I also took a break from posting videos on both of my channel here on Scandish Home and on my
other channel Handmade Home and it was a nice break. It is really nice to be back. I missed you all
and it was a great reset and just a time to reflect and step back to see the big picture
and yeah it was a very well worth that rest. And now I'm getting back to the old routine.
First of all I created this corner in the kitchen and the whole inspiration for that was this
mixer because I don't like to keep this on the island because it's in the way and on the other
side of the countertop I wash the dishes and I have the dishwasher there and we preparing sandwiches
and sometimes the four of us in the kitchen so and I don't bake every single day so I needed a
designated spot. However I didn't have a tall cabinet to store the mixer so I had to get creative
and I put that dresser that was empty anyways and I just put it into the corner where I can
put this mixer and it can be there and it's not in the way and the perks of that I was able to
put on hooks everything that it comes with that all the attachment and I also bought this two
small it looks like a hook but it's to dry the glasses and it works so well. I got this at Daiso
and it's very practical and it doesn't take up extra space.
The garden started to produce a bunch so I can make breakfast something that it's from my garden
that is very delightful. Zsolt is taking his vitamins and it's just a morning get ready.
I have this dish often in the mornings sometimes on the afternoon just for a quick snack.
I chopped up some zucchinis you can shred them if you want to but I like it when it's a little
bit more crunchy. I added some bread crumbs that are gluten-free a little bit of a gluten-free
flour about one tablespoon and I bought this little handy pan this small size. I know it's
gonna be a good addition to my tools in the kitchen but I didn't know how helpful it will be
especially if you're creating gluten-free things it's just harder to keep them in shape and this
little pot just makes a perfect pancake shape and just any kind of things that I want to fry
and I use it a lot more often than I thought I will because just a quick warm up it comes
very handy as well. For that salty pancake you can add some sour cream and cheese on the top
some shredded cheese but I cannot have any dairy so I just put some ketchup and I have the muffins
ready so I'm putting them on this rack so it can get cold faster
so
my friend needed some rosemary leaves to dry so I'm going to pick some for her because the time
she's going to stop by it's going to be super hot it's around three
third-ish or so and we have the highest temperatures at 4 p.m.
She is planning to dry them and just make tea out of it and as for next I want to organize
this little cabinet or drawers that I have this little dresser we used to have all the
wires and such in there but I was able to put this into that built-in that George made a couple
of years ago so it freed up some space and I'm able to keep these in the other drawers in the
kitchen but I thought it's more handy to have this in this area because this is where I bake
I have the pantry close by I have the mixture here so it just makes more sense to keep
all the things together here that are alike like everything that it's baking and such
a quick watering to my plants I like to put them into the sink and just give them a quick shower
we also celebrated our 27th wedding anniversary with George and for that we didn't go out to eat
but we went to a farm to pick some peaches blueberries and blackberries and we had
it's called a harkin
yesterday I picked some large ones in there I think that was the rock
look at that
so many peaches
that's right perfect
wow this is like a dream
this is actually going really fast
I know
and it's everywhere just so many
did we buy so that would be 80 that is about 80 85 pounds of peaches so I got some bags
in the freezer already I think I have four of them or five and I'm curious to see how many I
will need for these I think mainly I'm just going to freeze that maybe I'm going to freeze dry some
but I think freezing will capture the best the texture and the flavor for the peach and I don't
think I want to make any gems with that the price was really good because everything the figs
the blueberry blueberries and the peaches they were all 250 per pound so I mean with the peaches
it added up very quickly I would say but it was very easy to pick them and now I know they ripe
so it's gonna be delicious it's just like I had to calculate that and that I need to process these
today and yeah all has to be done today I'm just I'm not going to wash them because I'm going to
peel them so easy to take it apart and then I'm just going to peel it and it's almost like it
comes up in one piece and I'm going to prepare a baking sheet and I'm going to put a wax paper on
it so it doesn't stick to it as I'm freezing them also I was thinking it would be really
nice to have some grilled peaches with some vanilla ice cream I think that is
something it's very delicious together
get some wax paper I also made some strawberry no this is actually raspberry jam so I picked
the berries yesterday at the farm so we went back today as well that smells incredible
so I only used maple syrup and I cooked that for a while so it's very thick but I still gonna put
into the refrigerator so it's kind of like a quick jam and I made the same from the blackberry and
those blackberries guys it was this big like huge and but they go bad very quickly so I just turned
them into jam they still chilling a little bit now is the warmest in the kitchen when we get the
sunshine so it starts on this side and it goes on and we get the sunshine on the afternoon so it's
it's like no matter what time of the day we get some sunshine in the kitchen which is nice
but it can get really hot I wanna eat some peanut butter jelly sandwich so I'm going to use the
raspberry jam that I ate and I love these jars my friend bought this for me and she bought a
strawberry one as well and it just it just elevates the experience even further and I love this peach
with the little leaves but anyways so yesterday we picked some blueberries and I just want to
show you how big they are I mean some were even bigger than this it was like almost like a mini
apple when I bite in that but we didn't pick blueberries today because yesterday I went there
at 6 p.m so we had a bunch of friends there it was really fun and it was still hot but you know
6 p.m it's more reasonable because today we went there I think it was around two o'clock
so it was really hot so we decided we're just going to pick up the peaches and we're gonna go
back on another day to pick some blueberries but today I just want to focus on the peaches
putting the flowers into some fresh water these are the flowers that I got from Zsolt for our
wedding anniversary so I want to keep them fresh as long as I can I don't know what's the name of
this flower that was in the bouquet but I separated that because this is one of my favorites it can
stay dry like that so you don't have to put them into water I usually like to buy them
on the fall I find them at Trader Joe's and I think they look so pretty
usually I like to make this with some organic hot dog but today I'm going to prepare this with some
ham and I'm preparing this for my sons because we going to visit them at the camp
they actually my older one is volunteering there my younger one is just participating with all the
fun and we're going to drop off some food for them and one is going to be gluten and dairy-free
the other one will be just gluten-free and so if you find some gluten-free tortillas and just
put some ham in there and then you fry them in some avocado oil they become crispy on the outside
but it melts in your mouth in the inside it's incredible this is my absolute favorite and my
family really enjoys it as well okay if you wanna have some type of a dish where you wanna put things
and you don't want to worry about if they bring them back I mean my boys are really good with
that but I don't want them to stress about it when it's already busy to stress about where to put
the dish and so I ordered this paper once off of Amazon it comes with a clear top and I ordered
that years ago because if we have to take something to the church or I just want to give something to
the neighbors or just a little something something this is a really good size box and it comes with
wax paper so it has a nice liner it makes it nice the one that I put cheese in this is how it turned
out I think it looks amazing and it's crunchy on the outside so I made some without cheese that's
how I know I wouldn't bite into that I mean I would like to but I can't but it's it's got this
beautiful you can see that cheese is melted and it's crunchy on the outside so
this is really good and the one without the cheese so one without the cheese it's a same concept it's
really crunchy on the outside but it's got the ham inside and usually I make a hot dog in there
I like to use the beef bun but I just switched up for the ham and what is in the oven oh the
bread okay so I made some cold cuts I'm going to make some sandwiches and it's gonna be so nice
to stop at there because there's another moment why we want to stop at there it's a very proud
moment so that's gonna be fun to be there for that and at the same time I can drop off some
food I already packed into this box and then for reference like I can put four of them in there
I don't know if you can see that but yeah it's good so I can put four of them in there which is
a perfect amount if you want to be super extra secure with that you can put a rubber band around
that but it holds up really well and I can write on it so I can write the name so make sure it
doesn't get mixed up since it looks the same as the other one so I just going to use a chalk marker
and put the name on it the other thing that it's kind of getting intense it's my garden it's
I felt like last week I felt like oh okay I'm on top of it doing well and then damn all of the
sudden cucumbers started to produce and all the plants just went haywire and green beans
they're doing amazing this is the first year I have some green beans but I think I'm going to
have it every year because having them from the garden it's a different story it tastes so good
it's really soft and tender so the other thing that it's new and it's from my garden are these
black I think called some kind of black rose or something these tomatoes and I had them for a very
long time on the plant because I wasn't sure when am I supposed to pick them because they didn't
come in green they already started out like an eggplant like this dark and I was like is it
supposed to be like that when I pick them or should I let them grow but eventually I figured it out so
I actually I picked some from the bushes because it was ripening very slow because this year
I changed a bunch of things how I cut back on the tomato so to have more fruits but smaller
instead of have fewer and bigger ones so this is the stash I have right now so I got a couple
of them that turned green so I don't know what's the story with that but I have these and these are
the ripe ones that has like a reddish lighter color and it's kind of softer so these are the
ones that I love the most I think it's the early girl so this is a good kind to have where we live
I think we have the 8b or how it's categorized I want to make and can some food with that
it's a Hungarian food like we use lots of peppers and tomatoes and we just pour some egg over that
and I have some peppers that are the same color as well so I got a couple of fun things going on
but I got a tons of these little itty bitty ones and I don't know what happened I was supposed to
have one bush of this one and somehow I turned out to have two so I set aside a few for my friends
as well and I'm trying to stay top of that the picking so they can ripe inside instead of outside
so I can produce as much as I can my favorite way to eat these little tomatoes is to peel off
the skin and first I just try that without blanching them but I ended up boiling some
water and dip them in there just because it's so much easier to remove them and it softens the
tomatoes a little bit sometimes the procrastination can make everything longer so I'm glad I actually
ended up blanching them so I'm going to fill up this jar with these peeled tomatoes that are
blanched I'm going to add some salt and basil from my garden and oh and some crushed garlic
and I'm going to pour over some um olive oil and it's delicious in salads and it's ready to be
cooked if you want to add it to some kind of stir fry or something and also it's delicious on some
pasta as well especially if you can wait for a day so all the tomatoes can absorb all the garlic
okay next I'm going to make some granola and I'm going to use three cups of oats
maybe two because that's gonna be a lot and I'm going to use some chia seed, flax seed
I'm going to use them as a whole because when it's already grinded it starts to become rancid
and I have some pecans and wait that's parsley I meant to bring the pumpkin seeds
they were very close in color so I'm going to use some pumpkin seed which is good for hair growth
and also against parasites if you eat five I think five or ten peas that should keep everything
at bay and and I'm going to use some of that as well I like the crunchiness of that but I also
love the variety of the taste I'm going to use some honey and cinnamon and ghee I like to use
ghee because everything just gets more crispy and with just more flavor in there than just using
any kind of oil so actually I ended up using three cups of the oatmeal and I used one cup of
mixture of all sorts of seeds so I had some pecan and pumpkin seeds and walnuts
one teaspoon of vanilla flavoring I added about one third cup of ghee and about half a cup of
honey and whatever popped into my mind I added some chia seeds some flax seed
oh and I added a little bit of cinnamon as well
so
once it's mixed together then I'm going to just squish it done and press it as hard as I can
to make it flat and I did a mistake I had a little bit thicker in the middle so it was
less crunchy on the middle part so make sure you even it out
oops
long sheet
these tomatoes that I made earlier are so good and even if I ran out of any
lettuce I can just cut up some cucumbers from my garden it's delicious with that too
if you can handle cheese I think feta cheese would be very nice with that or maybe
some olives as well I have some stew green bean stew that I made earlier I am super excited because
the cucumbers and tomatoes and the green beans are from my garden
I was enjoying those tomatoes so much I completely forgot about my granola
we're going to have 100 Fahrenheit tomorrow so this is going to be a perfect time to sun
ferment the little cucumbers I have from my garden and turn them into pickles I'm just going to need
dill salt garlic and some gluten-free bread
while I wash the cucumbers the granola got cold so I can
crush them into clusters and chunks and I can put that into jars
so I just realized I forgot the almond and the coconut chips so I think I'm just going to mix
that with the clusters I think it's still gonna be good I absolutely have to try this because
the smell in the kitchen is just so incredible this warm cinnamony toasted scent and I use this
dairy-free creamer but I had to add some maple syrup to it and it was so delicious
okay back to the pickles so I'm going to cut the end and then I'm going to make a straight line
across and turn that on the other way around and cut it again so the purpose of that it's still
kind of intact and connected together but all the fermentation will be easier and more even
and it can absorb all the dill flavor and the salt so it's just for the process
and this is something we made every single summer as I grew up so that's a cool memory and it's delicious
adding salt and then I'm going to pour over some hot water not scorching hot but pretty warm
and I didn't have fresh dill so I used a dried one and I'm going to put some bread on the top
you can use any type of bread that has yeast in it because the yeast will start the fermentation
and I have to put this outside on the sunshine so the sun can warm it up and the temperature
fluctuation like it's cooling off at night warming up during the day it will produce little bubbles
in there and that's why I don't close the top so it can escape from there when it's really boiling
and the fermentation is in full swing but we have a very faded sunshine because we have so
much smoke from the wildfires it's pretty smoky it's gonna be outside all day and tonight I'm
going to bring it in so it can cool off and tomorrow morning I will put it out again and
this is gonna be on for two days sometimes three days but I think two days is gonna be enough
because it's gonna be pretty hot so the boiling process and the bread will help to preserve the
the pickles or cucumbers and they will become pickles so it should be done in a couple of days
and then after that I'm going to put it in the refrigerator and it will last up until six months
it looks like the fire season here everything is kind of red and windy and spooky and tomorrow
it's gonna be over a hundred Fahrenheit so I'm not looking forward to it but I wanted to show
it to you guys so I ran out of arugula I need to buy more at the store so I cut up some cucumbers
and I added the little tomato sweat the one that I put olive oil garlic and basil in and that's all
it's left and it's all me no one ate from that yet so tonight I'm going to make another batch
because it's just so good it's so delicious it's so soft it's not as chewy as the fresh one but
it's still chewy enough that you feel the texture and it's just so tasty and it keeps
getting better as it's soaking in this olive oil and the basil and all the spices and such
thank you so much guys for watching and if you enjoyed this video don't forget to subscribe
