This might be the softest lemon cake you'll make. Fresh, moist and really easy to make.
First, rub the lemon zest into the sugar to release natural lemon oils and more lemon flavor.
Then add butter and cream together for about 2 minutes or until light and creamy.
I'm using salted butter today but unsalted butter works perfectly too,
just add a small pinch of salt. You can also use margarine or baking spread if that's what you have.
Now add just a little vegetable oil. Whisk for another minute until everything is nicely
combined. The butter gives us the flavor while that little bit of oil helps keep the cake really
soft. Next, add 2 eggs. Whisk for about 2 minutes. Once everything looks smooth and creamy,
we're ready for the next step. Now add the natural yogurt and vanilla.
Whisk for another minute until smooth. The yogurt gives this cake a really soft,
tender crumb without making it heavy. Do not worry about the curdling texture.
Sift in the flour and baking powder. From here I'm going to mix gently by hand.
Fold everything together until it's almost combined.
Try not to overmix the batter, that's important if you want that soft texture.
And now the fresh lemon juice. Fold it through gently until the batter is smooth.
And that's our lemon cake batter ready. Transfer the batter into a lined baking pan
and gently smooth the top. Bake for around 30 to 35 minutes.
For the topping, I'm keeping it really simple.
Mix powdered sugar with a little lemon juice until you have a smooth, slightly thick glaze.
Add the juice gradually so the glaze doesn't become too thin.
Pour that over the cake while it's still warm.
And if you want even more lemon flavor, add a little lemon curd on top.
Just look at how soft that is.
The crumb is really tender and moist and that fresh lemon glaze works perfectly with it.
Simple, fresh and so good.
