When I need something quick, easy, and affordable,
these chicken quesadillas never disappoint.
But wait until you see what makes them so good.
All right, guys, so we're going to begin
by prepping our two pounds of chicken.
I'm using chicken breast,
but of course you can always use thigh.
And just make sure that they're nice and thin.
Okay, so now I'm just going to drizzle a little bit of oil.
Make sure that it is nice and rubbed all around.
And I'm just going to season with salt,
black pepper, and ground cumin.
Just make sure that it is all seasoned.
Make sure you press it down and just do it to both sides.
Can I hear?
I already have my comal set over medium heat.
It's nice and hot.
So we're just going to grab our pieces of chicken,
lay them down, and just allow it to cook
for three minutes per side until they're fully cooked.
Check your chicken and make sure
that it has an internal temperature of 165 degrees
and just remove it from the heat,
place it in a pan, and cover it with foil.
Okay, so once we have our chicken,
allow it to rest for five minutes
and then get ready to cut into thin strips.
Your chicken should be nice and juicy.
Now that we have our chicken,
we can get ready to make our quesadillas.
But before we do, we're going to make our sauce
that takes these quesadillas
from good to absolutely delicious.
So for that, we're just going to be mixing our media crema,
or you can use sour cream,
add two tablespoons of mayo,
two pickled jalapenos,
along with two tablespoons of its juice,
one tablespoon of chipotle en adobo,
along with that, all of our spices.
We're just going to give it a good mix.
In here, just taste it and adjust it if needed.
All right, guys, and now for the fun part,
putting our quesadillas together.
So returning back to my comal,
I have it set over medium heat.
And once it's nice and hot, add your tortilla.
And you're just going to heat up one side of the tortilla.
Once that side heats up,
add a little bit of butter to your comal.
Place it on the other side.
In here, we're going to add about one or two tablespoons
of our jalapeno sauce,
and just spread it all over the tortilla.
Now we're going to add our blended cheese.
I'm using queso Oaxaca and medium cheddar,
but of course, you can always add
your favorite melting cheese.
Now we're going to grab our chicken.
Now we're just going to fold it in half.
Give it about another 30 seconds.
And just like that, quesadilla is done.
So now we can remove it from the heat
and get ready to serve.
All righty, guys, and now for the best part,
the taste test.
Now, of course, I'm serving it
with a side of sour cream and pico de gallo,
but just like that, you can get ready to enjoy.
So I hope you give this recipe a try
and enjoy it just as much.
Cheers and enjoy.
These are seriously the best chicken quesadillas.
