The creator emphasizes enhancing traditional flavors through the use of fresh herbs, roasted pine nuts, and a combination of sharp cheddar and parmesan cheeses for a more savory, textured result.
Hey, what's up guys? Welcome back. Today I'm going to show you an old comfort food favorite that's done right.
Today I'm going to be making a delicious grilled cheese sandwich and tomato soup recipe.
So first up we're going to make our tomato soup. In a small sauce pot on medium to high heat you're
going to add some quartered up onions and a few cloves of garlic. Give that a quick saute just to
give them a little bit of color and then you're going to add your can of diced tomatoes. Give
that a few stirs and then you're going to add some roasted pine nuts, some toasted baguette,
and of course your herbs which will be basil and fresh oregano. Give that a few stirs. Season it
with a little bit of salt and brown sugar and then let this reduce for at least 30 to 45 minutes.
All right, so while you're waiting for your tomato soup to finish up cooking, grab a few
slices of bread. Here I have some sourdough that I sliced up. You can use any variety,
it's completely up to you. Drizzle a little bit of olive oil right over the top and then
give it a good rub down with some fresh garlic. It's going to give it a nice savory bite. Also
you're going to finish these off with a little bit of fresh parmesan cheese and that's going
to crisp up really nicely once you start to toast these. Give them a good flip and then
make sure you grate a good amount of the sharp cheddar cheese right over the top.
Sandwich these together and then set them aside until you're ready to toast them up.
All right, so once you're done assembling your grilled cheese sandwiches, you're going to blend
up your soup. So it's been about 45 minutes. I'm going to pour this into my Vitamix blender and
then blend it on the highest setting until it's silky smooth. You can also add various flavorings
at this point during the process, but just make sure it's completely smooth and thoroughly blended
once you're done. Once you are done, you're just going to set it aside and then start toasting up
Okay, so once your soup is blended and ready to go, get a small saute pan on medium to high heat,
add a little bit of olive oil to it, and then start toasting up your grilled cheese sandwiches.
They'll take about three to four minutes on each side. Just make sure they're nice and golden brown
before you take them out and the cheese should be completely melted in the center. And just
repeat the process for the other sandwich. All right, so once everything's ready to go,
ladle a few scoops of the tomato soup right into a shallow bowl. And then you're going to garnish it
with some picked herbs. Here I have some basil and some oregano, just the tiny leaves. And then
I'm going to drizzle a little bit of olive oil right over the top and some fresh cracked black
pepper. I'm going to cut up my grilled cheese and serve it right at the edge of the bowl.
And that's it guys. All there is to do is enjoy this delicious grilled cheese and tomato soup.
All right, there you guys have it. Delicious tomato soup. Has a nice little herb garnish
on there. These little crispy grilled cheese. I'm really excited for these. This is just,
you know, one of those dishes that like warms your soul. You know, it's a comfort food and
it's really simple to make. I'm super excited about it, so let me dig in. I gotta do the
grilled cheese dip. It's like a must when you have tomato soup and grilled cheese. So,
there goes. That is delicious. You know, it's funny, the very first flavor actually that I
can taste right away is the roasted pine nuts, which is just a great addition to the soup. It
gives it a lot of body and it's just a really good flavor. Sharp cheddar cheese is the best
for this recipe. Really nice tangy, little salty flavor. Very good crispy toast. A nice little
addition with the parmesan cheese on the outside of the bread. It's a very good grilled cheese.
