Today, I'm sharing 3 incredible (and super simple) summertime dinners- I wanted these recipes to be fresh, satisfying and really easy to accomplish with minimal cooking. We have a sheet pan salmon Niçoise salad, where you roast all the cooked ingredients on the same sheet tray and then just assemble before serving. Next is a build-your-own sandwich tray (that involves no cooking at all!), and we're jazzing it up with 2 lovely flavored mayos- a pepperoncini mayo, and a red pepper chipotle mayo. Lastly, we have an antipasto chopped salad that you'll make over and over again this summer. And we have a sweet treat bonus "no recipe recipe" at the end.
