The creator explains the nutritional benefits of this ancient grain and demonstrates the mixing, shaping, and baking process to achieve a soft, chewy texture with a nutty flavor profile.
Welcome back to Mimi's Organic Eats. Today we're making kamut flour chocolate chip cookies.
This ancient grain adds a nutty and sweet flavor to baked goods.
Plus it has a little bit of added protein and a little bit extra nutrients.
So let me show you how to make these just a little bit healthier but still delicious
chocolate chip cookies. So if you guys haven't ever baked with kamut flour before you're in
for a treat. This ancient grain will add a nutty and kind of sweet flavor to baked goods. I
absolutely love using it in cookies. I also love using it because it has added protein and
just a little bit healthier than your traditional all-purpose flour. Not all kamut flour is created
equal though. I've tried so many different brands and the one that I swear by is the food to live.
If you guys are new to kamut flour baking I highly recommend buying that one. I'll link
it in the description for you guys. So first we're going to preheat our oven to 375 degrees.
So I'm going to use my fan mixer today but if you guys want to use a hand mixer that's okay too.
So first we're going to add in our butter and you just want to make sure that this is really soft.
Next we're going to add in our cane sugar. Then our dark brown sugar. So if you guys only have
light brown sugar that'll work too. The dark brown sugar will just give these cookies a little bit
richer flavor which is something that I like paired with the kamut flour. And then of course
we're going to add in some vanilla extract. And now we're just going to mix this on low until
combined and there's no butter chunks. Next we're going to add in two large eggs. Then we're going
add in our milk. So you guys may be wondering why there's milk in these cookies when there's also
eggs. If you follow along you know I make eggless cookies all the time using milk but this recipe
has both. The kamut flour can sometimes need a little bit more hydration than all-purpose flour
so the milk is going to ensure that these cookies stay super soft and chewy. So then we're going to
add in our kamut flour. Then we're going to add in half a teaspoon of baking soda and salt.
Now we're going to mix on low until combined until we have a stiff cookie dough.
So now of course we're going to add in our chocolate chips. So this is a great base recipe
to just leave a plain chocolate chip. But if you guys want to add in some of your favorite nuts or
even a little bit of dried fruit or like pumpkin seeds that's also delicious in this cookie. I've
got a ton of flavor variations in my blog post which I'll link in the description. That way you
can make these cookies a little bit different every time. But today I just have some maple
walnuts from my friends at Old Dog Ranch. They make the best organic regenerative walnuts. You guys
have to try these and they're so good in cookies. I'm dropping everything today.
Now you're just going to mix on low until all your chocolate chips and other mix-ins are combined.
So now we're going to line two baking sheets with parchment paper. So then we're going to form the
cookie into 12 cookie dough balls. We're going to have six on each sheet. So with these cookies you
want to make sure that you're forming them into a disc that's about two inches in diameter. They'll
look like this. If you guys are using a cookie scoop and you're just scooping them out you're
going to have to flatten them and push them down a little bit with your hand. We don't want a ball
here. We want to have the round disc that looks like this. That way they're going to bake properly.
If you guys want to add some extra chocolate chips and nuts on top you can do that now.
But this part is totally optional. Now we're going to bake these at 375 degrees for about 15 minutes
or until the edges are golden brown. After the cookies come out of the oven I like to round them
out using a cookie cutter for perfectly round cookies. If you guys want to sprinkle a little
bit of flaky sea salt on top you can do that as well but this part is totally optional.
And now we have the most delicious kamut flour chocolate chip cookies. So my pug John John has
memorized my youtube video sign off and as soon as he hears me saying it he comes running into
the kitchen because he knows I'm about to eat something and so he's here for his cookies.
Say you came for your cookies even though I wasn't even done saying it yet. Okay should we say it
together so we can eat our cookies? If you guys enjoyed this video be sure to drop a like and
