Crunchy Cheesy Chicken Brioche Buns Recipe

Brioche-Style Dough

• 480 g all-purpose flour | 4 cups
• 240 ml lukewarm milk | 1 cup
• 15 g honey | 1 tbsp
• 7 g instant yeast | 2¼ tsp
• 1 large egg
• 30 g unsalted butter, softened | 2 tbsp
• 8 g salt | 1½ tsp

Creamy Chicken Filling

• 750 g boneless chicken thighs, cut into small cubes
• 15 ml neutral oil | 1 tbsp
• 15 g unsalted butter | 1 tbsp
• 120 g onion, finely chopped
• 12 g fresh garlic, finely minced | 1 tbsp
• 50 g red bell pepper, finely chopped
• 50 g yellow bell pepper, finely chopped
• 50 g green bell pepper, finely chopped
• 25–30 g spring onion, finely chopped

Seasoning

• 2 tsp smoked paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp black pepper
• ½ tsp chili flakes
• 1 tsp chicken stock powder
• 1 tsp salt, or to taste
• 60 g cream cheese
• 45 ml cooking cream | 3 tbsp
• 30 ml hot sauce | 2 tbsp
• 15 ml lemon juice | 1 tbsp
• 100 g shredded mozzarella
• 120 ml milk | ½ cup
• 80–100 g panko breadcrumbs | 1½–2 cups
• Neutral oil, as needed for deep frying
