Afghanistan's meat obsession is real, and today my friend Bilal Kamal and I are experiencing it from morning to night. We start in Kabul Old City with kalla pacha at Faizi Kalla wa Pacha Restaurant — slow-simmered sheep's head and trotters that just might be one of the world's greatest breakfasts. Next, hot out of the tandoor oven, we eat samsa — flaky Afghan baked meat pies — at Samarqand Sambosa Tandoori. Then we drive to the base of the Hindu Kush mountains to Paghman Valley, where locals escape the city for rivers, fresh fruit, lush green trees, and incredible food. Sitting riverside at Hamesha Bahar, we finish with rosh — fall-apart lamb stew cooked with potatoes and onions — for the ultimate Afghan countryside feast!
