This zucchini roll is my signature dish. So tender, juicy, and aromatic,
I make it every time. It vanishes from the table within minutes.
Today I'm going to share this amazing recipe with you. And I bet it'll be your new favorite.
Get 3 zucchinis, ideally young and fresh. Cut them into rounds about half a centimeter thick.
Put them in a colander. Add salt and mix well,
then let rest for 10 minutes to draw out extra moisture. So glad to have you here.

You're up today. It truly brings us closer together.
Let's get the filling ready while the zucchinis rest. Coarsely grate the carrot.
The roll gets a nice color and a hint of sweetness from it.
If you don't have fresh, use frozen grated carrots. They're just as effective and save
you time. For even sweeter flavor, add finely chopped red bell pepper. Coarsely grate the
onion. When you grate the onion rather than chop it, more juice is released and the filling comes
out better. Packed with extra flavor. If onion makes you cry, chill it for 15 minutes before
grating. That's very helpful. As it cooks, the onion softens and sweetens and mixes beautifully
with the carrot. To save even more time, use a food processor to grate both carrots and onions
in just seconds. Add fresh parsley and dill, finely chopped. They keep our rolls fresh and
summery. Fresh herbs bring any dish to life. And I can't skip the second question. Out of 10,
how many points would you give this recipe for its beauty, even before? Want to give it a taste?

While you're at it, squeeze the zucchinis to remove excess liquid. This is key so the base
firms up and doesn't fall apart. Squeeze thoroughly with your hands. You'll be amazed how much liquid
zucchinis produce. That's quite a bit. Even if it appears to be more work, don't skip this step.
It makes all the difference for the final texture. Subscribe so you don't miss new videos.
So much more delicious stuff. Coming, I promise.
Add 2 eggs. They bind everything. Holding shape beautifully. Use room-temperature eggs.
They mix more smoothly than cold eggs. Italian herbs for flavor, black pepper for heat,
crushed garlic for a pecan't kick. No Italian herbs? Use oregano, basil, and thyme.
They work just as well. If you love garlic like me, add another.
Cloak, it makes the filling even more aromatic and tasty. Ordinary becomes amazing when you
add these simple spices. Feel free to try other herbs too, like rosemary or marjoram.
They can give the filling a whole new exciting flavor. Add flour to bind everything together.
Mix until smooth with no lumps. You'll get a fragrant dough to form the base of our roll.
It needs to be thick enough to keep its shape. Spread the zucchini mix onto a parchment-lined
baking sheet. Spread into an even layer. Make it as uniform as possible so it bakes evenly
and doesn't burn in spots while staying raw in others. If you using a spatula is ideal here,
it lets you spread the mixture smoothly across the whole sheet. Bake in a preheated oven at
350 degrees Fahrenheit for 30 minutes until golden. Let's prepare the mushroom filling
while the crust bakes. I'm slicing the mushrooms thin and even so they cook quickly and soak up all
the pan's flavors. If you have different mushroom types, mix them. That adds more depth and
complexity to the taste. For example, champignons give a mild, delicate flavor, while shiitake or
oyster add a richer, more intense mushroom taste. Slice them all about the same thickness so they
cook at the same rate. Never wash mushrooms under running water. They act like sponges,
soaking up liquid. Gently wipe with a damp paper towel. Melt butter and olive oil in a pan.
This combo gives rich flavor. Now toss in the sliced mushrooms and fry over medium heat.
Hear that sizzle as they hit the pan. That's perfect cooking. Stir them in frequently at
the start. Let them brown on one side before flipping. That makes them more flavorful.
Season with salt and pepper. Mushrooms should get soft and golden, soaking up all the flavors.
They'll be juicy and irresistible. Fry mushrooms for seven to ten minutes
until it turns golden brown. In a bowl, mix cream cheese and some mozzarella.
Grate mozzarella coarsely. Coarse grating gives melty strands that make it creamy.
Use room-temp cream cheese for smooth blending. Perfectly smooth, no lumps at all. No mozzarella?
Use cheddar, provolone, or your favorites. Save time with pre-shredded mozzarella, but freshly.
Grated melts better and tastes more flavorful. After the two cheeses are fully mixed,
you'll end up with a creamy, rich mixture. It's ready to go in with the mushrooms. You can use
this cheese filling in so many ways. Use it for pasta dishes, or as a veggie dip. Meanwhile,
the mushrooms are done. Now stir in the cream cheese and shredded mozzarella with the mushrooms.
Stir it well until completely smooth. The filling becomes creamy, smooth, and super cheesy.
For even richer flavor, add a little parmesan too. When I first made this roll,
my husband was thrilled. He said it was the tastiest zucchini dish he had ever tasted.
The kids ate every crumb and asked for more. This is the roll I make for every holiday.
Take the base out, it's golden and firm. Make six equal portions. These are the rolls I'm
making for you. Slice it carefully so each piece is roughly the same size. A sharp knife works
best. This lets you slice neatly without ripping the bottom. If you want the pieces to be perfectly
uniform, you can measure it with a ruler before cutting. It gives the whole thing a really
polished look. Spread a layer of mushroom filling on each piece. Next, roll it up with care. Wrap
it snugly so none of the filling escapes. And the rolls keep their shape. If you like the recipe,
please give this video a thumbs up. Knowing you feel the same way means the world to me.

recipes you want to see on my channel. I need to know what you're into so I can make just the right
thing. The things you love. If mozzarella is unavailable, use any meltable cheese, cheddar
works well. Or another mild cheese. You can use sour cream or cottage cheese instead of cream cheese.
It'll taste a little different, but it'll still be tasty. Arrange the rolls on a parchment-lined
baking tray. Top it with freshly grated parmesan. Arrange the rolls with a little gap so the heat
can reach them evenly. Then the cheese turns golden and crisp around the edges. Bake it for
10 more minutes. Roast for a few minutes at 200 degrees Celsius, or 400 degrees Fahrenheit, until
crisp. Until the tops turn crisp and golden. In the meantime, the cheese melts down over the rolls.
It bakes up with a beautiful golden crust. You can't imagine the amazing smell that fills the
kitchen. Make this at home, and your neighbors will be dying to know what smells so good.
Perfect for a cozy family dinner or a get-together with friends. It feels fancy and celebratory,
