Melt-in-Your-Mouth Chicken Thighs! 🔥 Everything Baked in One Tray.

Let us begin with one tablespoon of oil in a pan, then add two tablespoons of butter and let it melt gently. Mixing the two is a lovely little trick because butter alone burns easily at high heat, but the oil raises that burning point, so you get all the rich buttery flavor without any bitterness. Now take one kilogram of chicken thighs and lay them into the pan skin side down. Always place them away from you as they go in so any hot fat splashes away rather than towards you. And while we are here, tell me something, which city, state and country are you watching from today? Please drop it in the comments below. I genuinely love reading them and it never stops amazing me how far this little kitchen reaches around the world. Now, crackle over some salt and pepper and let them cook for four to five minutes. Do not touch them, do not move them, just leave them completely alone. This is the hardest part for most people, but that stillness is exactly what gives you crisp golden skin. Every time you lift or shift the chicken, you interrupt the browning and it starts again from nothing. The skin side is beautifully browned now. Flip them over, turning each piece carefully and season this side with salt and pepper too. Seasoning in stages like this, rather than all at once, builds far better flavor because each layer gets its own chance to season properly. While that is cooking, let us cut 400 grams of potatoes into cubes. Take your time here, there is no rush at all. Try to keep the cubes roughly the same size because that way they all cook evenly and finish together. And it is one of those small habits that quietly makes a real difference. Potatoes came originally from the mountains of Peru and Bolivia, grown there thousands of years ago, and Europeans were deeply suspicious of them for a long time simply because they grew underground. Now they are one of the most eaten foods on the entire planet with thousands of varieties. There is no need to peel them either if the skins are nice and clean, as that is where a good amount of the fiber and nutrients sit. A sharp knife makes this whole job easier and safer because a blunt one slips rather than cutting. Back to the chicken, and it is perfectly browned now and about halfway cooked through. That is exactly what we want at this stage because it will finish cooking properly in the oven later. If you cooked it all the way through now, it would end up dry by the time it comes out. Remove the thighs and set them aside on a plate. Do not wash the pan, whatever you do. All those golden brown bits stuck to the bottom and the rendered chicken fat left behind are pure flavor, and they are about to make the potatoes taste incredible. Now add the potatoes straight into that same pan and cook for four to five minutes until they take on a light golden color. This is exactly why we keep the pan as it is because every cube is now soaking up all that chicken flavor rather than sitting in fresh, clean oil. It costs you nothing, and it makes the dish taste like it took twice as long. Now let us chop one medium onion. Take your time with this one, too. Onions are one of the oldest cultivated foods on Earth, grown for over 5,000 years, and they were valued so highly in ancient Egypt that workers building the pyramids were sometimes paid in them. They quietly build sweetness and depth into almost every dish in every cuisine around the world. If your eyes sting, chilling the onion in the fridge beforehand genuinely helps and leaving the root end intact until the very last cut holds all the layers together neatly while you work. The potatoes are nicely browned now. Add the chopped onion into the pan and cook for two to three minutes, keeping everything moving with your spatula. Stirring regularly here matters because the onion is much finer than the potato and will catch and burn far more quickly if you leave it sitting still. Now let us make the marinade. Into a bowl, add two tablespoons of tomato paste, one and a half tablespoons of olive oil, one tablespoon of honey, and two tablespoons of soy sauce. Take two cloves of garlic and press them straight in using a garlic press. A press crushes the cells far more thoroughly than a knife ever could, which releases more of those aromatic oils and gives you a stronger, more even flavor throughout the marinade. Now take a lemon, cut it in half, and grate the zest in first before squeezing in the juice. Zesting before squeezing is the sensible order as it is far easier to grate a firm whole half than a squashed one. That zest holds all the fragrant oils and brings a brightness the juice alone cannot give you. Add one tablespoon of oregano and a good crackle of black pepper, then mix everything together well. You will notice there is no salt going in and that is deliberate because soy sauce is already very salty and adding more would tip the whole thing over. Now brush this sauce generously over the chicken thighs on both sides, working it right into every corner, then let them rest for 15 minutes. This resting time really matters. It gives the marinade a chance to properly settle onto the surface and start working its way into the meat and the honey in there will caramelize beautifully in the oven later, giving you that gorgeous glossy finish. It also lets the chicken come back towards room temperature, which helps it cook far more evenly. And while we wait, if you are enjoying this recipe, please give the video a like and hit subscribe. Now take three cloves of garlic and slice them. Slicing rather than mincing is a deliberate choice here because sliced garlic stays much milder and sweeter and holds its shape as it cooks, whereas finely chopped garlic releases far more of those sharp, pungent compounds. Garlic has been cultivated for over 5,000 years across ancient Egypt, Greece and China, valued as much for its medicine as its flavor. And Roman soldiers ate it before battle, believing it made them stronger. Back to the pan and those onions are lovely and translucent now. Add the sliced garlic in and cook for just a minute, keeping it moving. Garlic burns remarkably fast, far quicker than most people expect. And once it turns bitter, there is no rescuing it. Now take two small carrots or one large one and cut them into thick slices. Take your time here as well. Thick slices are the right call for this dish because they hold their shape through the long bake instead of falling apart into the sauce. Carrots were originally purple and yellow and the orange ones we all know today were developed much later in the Netherlands. They are wonderfully rich in beta-carotene, which your body converts into vitamin A. And that is genuinely good for your eyes and skin. Add them into the pan and cook for two to three minutes. And by the way, quite a few of you have asked about the tools I use. So all the knives, chopping boards and pans I cook with, along with the camera gear I use to film these videos, are linked down in the description below. Now it is time to season. Add one teaspoon of salt, one teaspoon of smoked paprika, one teaspoon of oregano and a good crackle of black pepper. Mix everything together well and let those spices warm through in the pan. Smoked paprika is a wonderful thing made from peppers dried slowly over smoldering oak fires in Spain, sometimes for weeks. And that is where all that gentle smokiness comes from without any real heat at all. Oregano is one of the great Mediterranean herbs. And unusually for a herb, the dried version is actually stronger than fresh. So a teaspoon goes a long way. Now take one large eggplant and cut it into chunks. Start by slicing it into thick rounds, working your way down the length of it and then cut each round into pieces. Take your time with this one. There is no rush at all. Eggplants are botanically a fruit and in fact a berry, which surprises most people. They came originally from India, where they have been grown for thousands of years, then traveled through Persia and the Arab world into the Mediterranean, which is how they ended up in so many of the dishes we know today. The name comes from the early European varieties, which were small, white and shaped rather like eggs. And in Britain, we borrowed the French word aubergine instead. There is no need to peel it because the skin holds most of those deep purple antioxidants and it softens completely once cooked. You may have heard that eggplant needs salting to draw out bitterness. And while that was true of older varieties, modern ones are bred to be much milder, so you can skip that step entirely. Keep the chunks a decent size because eggplant shrinks noticeably as it cooks and small pieces can disappear altogether. Add it into the pan and cook for two to three minutes. Eggplant soaks up flavor like almost nothing else, so it will drink in everything around it. And that spongy texture is exactly why it works so beautifully in a dish like this. Now take one large tomato and chop it. Take your time here. There is something quite calming about this part. Tomatoes had a curious start in Europe, arriving from South America in the 16th century and being refused as food for almost 200 years because people believed them poisonous. They were grown purely as decorative garden plants, admired in the flower beds, and nothing more. Part of the fear came from wealthy families eating off pewter plates, which reacted with the acid in tomatoes and caused lead to leach out. So people naturally blamed the fruit rather than the plate. Add it into the pan and cook for a few minutes, letting it soften and melt down into everything else, bringing all those flavors together into one rich base. Take one large zucchini, cut it in half, and then into slices. Zucchini is such a generous vegetable, light, full of water, and it has this brilliant way of soaking up all the flavors around it while adding a soft, tender bite. Interestingly, although it is strongly associated with Italian cooking, zucchini as we know it was actually developed in Italy in the 1800s from squashes originally brought over from the Americas by explorers. Squash itself has been grown in Central America for thousands of years, long before it ever reached Europe. Like the eggplant, it is technically a fruit rather than a vegetable, and if left to grow, it becomes a marrow, which is really just a zucchini nobody picked in time. Try to keep the slices a similar thickness so they cook evenly and do not cut them too thin or they will disappear into the sauce entirely. Add it into the pan and cook for a few minutes, letting it soften just enough while keeping a little of its shape. Now take one medium bell pepper and cut it into cubes. Take your time getting them roughly even as it makes the finished dish look so much better. Peppers came originally from Central and South America, where they had been grown for thousands of years before Europeans ever arrived and they were carried around the world by Spanish and Portuguese traders. Within a century, they had spread all the way to India, China and Africa, which is remarkable when you think how central they are to those cuisines now. Sweet bell peppers contain no capsaicin whatsoever, which is exactly why you get all that flavor and color without the slightest hint of heat. Unlike their chili cousins, add it into the pan, then pour in 200 milliliters of beef broth. Mix everything together and cook for a few minutes, stirring gently as you go and lifting all those tasty brown bits from the bottom of the pan. That broth is what brings all the vegetables together into one rich, savory base, and you will see it start to thicken slightly as it reduces. Now, remove everything from the pan and tip the vegetables into a baking tray, spreading them out evenly across the bottom. Take a moment to level them off properly right into the corners because an even bed means the chicken sits flat on top and everything cooks at the same rate. Lay the marinated chicken thighs on top, skin side up, arranging them so each one sits comfortably. Cover the tray first with parchment paper and then with foil, sealing the edges tightly. The parchment sits directly against the food so the foil never touches it and that tight seal traps all the steam inside, which is exactly what keeps the chicken so beautifully moist. Bake for 30 minutes at 180 degrees Celsius, which is 350 Fahrenheit. While that bakes, let us make a Greek-inspired salad. Take one cucumber and slice it, then add it into a salad bowl. Cucumbers are one of the oldest cultivated vegetables in the world, grown in India over 3,000 years ago, and they are around 95% water, which makes them wonderfully refreshing alongside a rich dish like this. Take one small red onion and slice it thinly, then add it in. Take your time getting those slices nice and fine as thinner slices mean the onion scatters evenly through the salad rather than overpowering anyone mouthful. Red onions are milder and sweeter than brown ones, which is exactly why they work so well raw. And that deep purple color comes from anthocyanins, the same antioxidants found in blueberries and red cabbage. They have been grown around the Mediterranean for thousands of years and were a staple of the ancient Greek and Roman table. If you find them a little sharp, a quick soak in cold water takes that edge right off while keeping every bit of the crunch. Take a handful of plum tomatoes and cut them in half, then add them in. Plum tomatoes have less water and more flesh than round ones, which means they hold their shape beautifully in a salad rather than going soggy and watering down the dressing. They are the same variety traditionally used for sauces and passata in Italy for exactly that reason. Cutting them in half rather than into pieces lets them keep their sweetness contained until you bite into them. Now take 10 to 12 black-pitted olives and slice them, then add them into the bowl. Olives have been cultivated around the Mediterranean for more than 6,000 years, and some olive trees alive today are genuinely over 1,000 years old and still producing fruit. The olive branch has been a symbol of peace since ancient Greece, and winners at the original Olympic Games were crowned with olive wreaths. They are full of healthy monounsaturated fats and bring that lovely salty depth that makes a salad feel complete rather than just fresh. Take one sweet pepper, cut it in half, and slice it, and you can absolutely use bell pepper instead if that is what you have. These long sweet peppers tend to be thinner-walled and slightly sweeter, which is lovely raw, and they slice into neat little strips that sit nicely among everything else. Add it in. Now, take some salad cheese and cut it into cubes. You can use feta here instead, and it is worth knowing the difference. Real feta is protected by law and must be made in grease from sheep's milk or a blend with a little goat's milk, which gives it that distinctive tangy, crumbly character. It has been made there for thousands of years and is even mentioned in Homer's Odyssey. Add it in. Take some lettuce leaves. I am using romaine today. Cut them and add them in. Romaine holds its crunch far better than softer lettuces once the dressing goes on, which makes it the right choice for a salad like this. It takes its name from Rome, though it originally came from the Greek island of Kos, and the Romans were the ones who spread it across their empire. For the dressing, add one tablespoon of olive oil into a small bowl, one tablespoon of lemon juice, salt and pepper to taste, and half a teaspoon of oregano. Mix it all together well until it comes together properly. Fresh lemon juice makes a real difference here, as it has a brightness that bottled juice never quite matches. Pour it over and toss the salad gently until everything is lightly coated, and dress it just before serving so the leaves stay crisp rather than wilting. Now, chop some parsley for garnish. I am using curled parsley today. Take your time, and a little trick is to gather the leaves into a tight bundle first, as it makes chopping much quicker and neater. Parsley is far more than decoration. It brings a clean, bright note that lifts all those rich, savory flavors, and it is packed with vitamin K and vitamin C. The ancient Greeks held it in such high regard, they wove it into wreaths for their champions rather than eating it. Back to the dish. Remove the foil, and just look at that! The chicken has taken on a gorgeous color, and the whole kitchen smells incredible. Scatter over some of that fresh parsley. Lettuce plate up. Look at how juicy that chicken is, the skin still holding its color, and the meat coming away so easily, sitting on a bed of all those beautifully soft vegetables that have soaked up every bit of flavor. Time to taste. Let us start with the chicken and vegetables together. Absolutely delicious! The chicken is so juicy and tender, and that marinade has given it a lovely sweetness against all those rich, savory vegetables underneath.
