Braised Pork Ribs
Ingredient Measurements (Reference)
Pork ribs: 600g (cut into small pieces)
Scallion sections: 2-3 stalks
Ginger slices: 4-5 pcs
Cooking wine: 1 tbsp
Rock sugar: 25g (adjust for desired sweetness)
Star anise: 1-2 pcs
Bay leaves: 2 pcs
Light soy sauce: 2 tbsp
Salt: 1 teaspoon (or to taste)
White sesame seeds: a pinch (for garnish)
Cooking Steps
Put pork ribs in a pot, add water to cover them, scallion sections, ginger slices and cooking wine. Bring to a boil over high heat, skim off the foam thoroughly, then take out the ribs and drain the water.
Heat another pot with a little oil and rock sugar. Stir slowly over low heat until the rock sugar melts, turning from big bubbles to dense small bubbles and changing color to dark red (jujube red).
Pour the ribs into the pot and stir-fry until each piece is evenly coated with the sugar glaze. Add more ginger slices, scallions, star anise, bay leaves and light soy sauce, then stir-fry to release their aroma.
Pour in enough boiling water to cover the ribs. Bring to a boil over high heat, then turn to low heat, cover the pot and simmer.
Once the simmering time is up, pick out the spice residues. Add a pinch of salt, cover the pot again and cook for a few minutes to let the flavors soak in. Then turn to high heat to thicken the sauce until it can coat the ribs.
Sprinkle some white sesame seeds for garnish after serving.
