Creamy Gnocchi & Ground Beef Soup 🍲

Ingredients:

500 g ground beef
1 medium onion, finely chopped
1 leek, finely chopped
2 carrots, grated
400 g tomato sauce or crushed tomatoes
750 ml chicken or vegetable stock
500 g gnocchi
150–200 ml heavy cream
50–80 g grated Parmesan, Regato, or cheese of your choice
2–3 tbsp fresh parsley, finely chopped
1 tsp paprika
1 tsp garlic powder
1 tsp Italian seasoning
Salt and black pepper, to taste

Instructions

Heat a little olive oil in a large pot and sauté the ground beef over medium-high heat until nicely browned.

Add the chopped onion and cook for a few minutes. Then add the leek and grated carrots and sauté until the vegetables begin to soften.

Add the tomato sauce, chicken or vegetable stock, paprika, garlic powder, Italian seasoning, salt and black pepper. Stir well and bring to a boil.

Reduce the heat and let the soup simmer for about 15 minutes, allowing the beef to cook through and the flavours to come together.

Add the chopped parsley and gnocchi. Cook for 2–4 minutes, or according to the instructions on the gnocchi package.

Finally, stir in the heavy cream and grated cheese. Mix well and simmer for another minute or two, until the soup becomes creamy.

Serve warm, topped with a little extra grated cheese and fresh parsley. 🤎


Apple Pie 🍎

Ingredients:

For the Apple Filling

6 apples, cut into small pieces
Juice of 1 lemon
150 g brown sugar
1 tsp cinnamon

For the Crumbly Dough

190 g melted butter
150 g brown sugar
1 egg
500 g self-raising flour

For Serving

Icing sugar
Cinnamon

Instructions

For the Apple Filling

Peel and cut the apples into small pieces. Add them to a saucepan together with the lemon juice, brown sugar and cinnamon. Cook over medium heat, stirring occasionally, until the apples have softened and the excess liquid has evaporated. Remove from the heat and set aside to cool.

For the Dough

Combine the melted butter and brown sugar in a large bowl. Add the egg and mix well. Gradually add the flour, mixing first with a whisk and then kneading with your hands until you have a smooth, soft dough.

Line a baking tin with baking paper. Use half of the dough to make the base, pressing it gently into the tin. Add the cooled apple filling and crumble the remaining dough over the top.

Bake in a preheated oven at 180°C (355°F) for approximately 60 minutes, or until golden brown.

Allow to cool, then dust with icing sugar and cinnamon before serving. 🤎
