For donuts:
1/2 cup water
1/2 cup milk
6 TBL butter
1 TBL sugar
Pinch of nutmeg
1 cup flour
3 eggs
For Glazed Honey:
1/3 cup powdered sugar
1/4 cup honey
1/2 tsp lemon juice
Oil, for frying
For Queens Dinner:
One batch of Tangy Carpaccio
One batch of Crisbee Donuts
Vanilla ice cream and mango sorbet, to serve
For donuts: Place water, milk, butter, sugar, and nutmeg in a medium pot. Bring to a boil. Add the flour and whisk constantly until a paste forms. Cook on low until it pulls away from the sides and a thin film is on the bottom of the pan. Place in the bowl of a stand mixer and allow to cool.
With the paddle on, add the eggs one at a time. Once the egg is incorporated, you can add another egg. Once all eggs are in, beat for another minute. Place batter in a piping bag.
On a parchment-lined sheet, pipe out circles. Once you’ve piped out your dough, place in the freezer for 15 minutes. Then, you can cut around to separate the pieces. Un-fried donuts can be frozen until you need them, if you allow them to come to room temp for 10 minutes.
Heat a pot of oil to 375 degrees. Fry donuts a couple at a time until golden on both sides. Drain and allow to cool slightly.
For glazed honey: In a small bowl, whisk together sugar, honey, and lemon juice. Dip donuts into the glaze and allow to drip slightly. Serve alone, or with Tangy Carpaccio and some ice cream to make Queen’s Dinner.
