Wrap up your stations. We're making tea-smoked armurock liver.
You'll need half a cup of strong tea, but surely you don't need a recipe for that.
Here's what you need for your flavor dust.
Put all this stuff in a coffee grinder until it's a delicious black powder.
We're gonna use it in a second.
Here's what else you need.
First, season that armor rock liver with that delicious flavor dust.
Place it in a zip-top bag with your aromatics and your tea.
We're gonna cook this sous vide for quite some time,
which sucks, 'cause I'm hungry now.
Oh well.
When it's done, reserve those cooking juices and pat your meat dry.
Now put your juices in a pan and add pomegranate juice, chicken broth.
And a little bit of sherry vinegar.
Cook on medium-high heat until it reduces to a nice syrup.
Then you can turn off the heat and add a little bit of butter.
Season to taste with a little bit of that flavor dust.
As for your liver, cover that red boy in flavor dust. I mean, totally cover it.
Then you can slice it good and thick. Ooh.
Serve it with that yummy sauce, of course.
Okay, sweet. I can eat now. If you're not a gull like me, use chopsticks.
Mmm, smoky and t, e, t e.
Yummy.
