Brine: 1/2 cup kosher salt 1/2 cup brown sugar 1 cup boiling water 6 cups ice Cola, as needed
Turkey: 1 whole turkey breast, bone in 2 TBL margarine, melted 2 tsp rubbed sage 2 tsp dried thyme 2 tsp black pepper Old carrots, celery and onion, roughly chopped
Gravy: 2 TBL turkey fat 2 TBL flour Turkey Drippings+ Enough low-sodium broth to equal 2 cups 1 cup red wine 1 tsp Worcestershire sauce 1/2 tsp sherry vinegar
For Brine: in a large container, combine salt and sugar in boiling water. Stir until dissolved. Add in 6 cups of ice. Pour on the soda until you have 1 gallon of liquid.
For Turkey: brine turkey in the cola solution for at least 6 hours, no more than 8. Drain and set aside. Combine margarine, sage, thyme and pepper. Set aside. Place a pile of old veggies in a large dutch oven. Place turkey on top of the veggies and pat dry. Brush with herb butter. Place in a 500 degree oven for 30 mins.
After half an hour, tent with foil and bake at 350 or until meat reads 160 degrees on a meat thermometer, a couple hours. Set aside on a plate to rest.
For Gravy: Drain pot of veggies and drippings. Place in a gravy separator. Pour off turkey juices and reserve 2 TBL of turkey fat. Add enough broth to your turkey juices to equal 2 cups. Place in the dutch oven and cook a few minutes with flour.
Once flour begins to brown slightly, pour in red wine. Whisk until lump free. Add broth and turkey juices. Reduce for 15 minutes on medium heat or until slightly thickened. Season to taste with sherry vinegar and Worcestershire sauce.
Pour finished gravy in a boat and serve with carved turkey.

Cola brined turkey. Trust me it works.
In a very large container or bucket combine brown sugar
and salt. Pour on some hot water and stir until dissolved.
Add lots of ice. Then you want to pour
in your cola until you have one gallon of liquid.
Then you can dunk in your turkey breast and soak
for at least six hours. No more than eight though.
After you wash your hands make some herb butter.
Here's what you need. Mix all these ingredients up and set aside.
Now go to your crisper drawer
and grab some not so awesome carrots celery
and onions dump them into the bottom of a large dutch
oven place your drained turkey breast on top of that and pat it dry
then you can brush it with
your herb butter this large boy is going to get
a sweet tan place it in a roaring hot oven for 30
minutes then you can tent it with foil
and turn down the heat cook until it reads 160 degrees on
a meat thermometer a couple hours
then you can take it out of the pot and let it rest a while
while we make gravy. Drain the veggies out of your juices and
pour them into a gravy separator.
Pour out the liquid and set your turkey
fat aside. Now pour on some low sodium broth into
your juices until you have about two cups.
In your Dutch oven combine a little bit of turkey fat and some flour.
Whisk it together and cook it a few minutes. Once it gets toasty
pour in some wine. Scrape the bottom and whisk out all the lumps.
Now you can add your broth mixture
and cook for about 15 or so minutes until it
gets the consistency that you want. I don't like mine too.
You can season it to taste with salt,
but I like cherry vinegar and Worcestershire sauce.
Now it's ready to serve! Pour it in a
nice gravy boat. Carve your turkey while you're at it.
Ain't she pretty? Now for the money shot.
Gravy! Super juicy, super tasty,
thanks to sugary soda. Yummy!
