How to make Russian Pancakes with Cottage Cheese | Sweet Cheese Cheese Recipe

I'm here with Milo today so guys today I want to show you one of the most amazing recipes ever. It's blintziki stuffed with cottage cheese so Tvarožny blintziki. These are literally one of my favorite things ever. I really really eat them every single time I go back to Latvia and I make them at home quite often for brunch. Now let's make the blini. In a bowl add your eggs and then sugar and salt and you want to whisk this on high speed until your mixture doubles. Then you want to add milk and sift your flour straight in there and then using a whisk mix it all again. Then add your oil and mix everything one more time and your mixture is ready to go. Make sure your pan is nice and hot and you want to add your first ladle on top and then swirl it around and cook it for a few minutes on each side. Your first pancake might not be good but just keep going and then you will have a stack of delicious blintziki. Guys and girls I have my recipe on my website at alizyummyfood.com. In a bowl add your dry cottage cheese or farmer's cheese then add sour cream and sugar and you want to mix everything together. You need to make sure that you use dry cottage cheese as it's not gonna work with wet cottage cheese. Mix everything together until you get nice smooth texture and then use a hand blender and blitz everything together until you sort of puree the cottage cheese so it becomes nice and even and very very smooth just like this then add freshly squeezed lemon juice and lemon zest this is completely optional you can keep it just plain and mix everything together i do really love the lemon flavor now take your pancake place it onto your board add one large tablespoon of your mixture and spread it around nice and even and then you just want to start rolling it up. I like a lot of filling inside my pancakes. So start rolling it up from the sides and the middle until you sort of come together to a huge pancake. How cute are these? So you want to repeat the process with the rest of your pancakes and your cottage cheese mixture. I really love these, these are so delicious, so creamy and you can freeze them and enjoy them for the next 3 months whenever you want. If you are planning to eat them straight away then I suggest you add a bit of butter with oil into your pan make sure it's nice and hot and you want to add your pancakes and crispy them from both sides until they're nice and golden and you'll see this beautiful color at the end so flip them around and cook them on the other side they're so yummy guys i can't even believe how delicious they are so serve them with some icing sugar or on its own with sour cream it's completely up to you i love to eat them with jam some extra berries and of course sour cream and they're very very very smooth inside very crispy outside it's better to eat them hot because they taste really good blini are eaten any time of the day anywhere and can be enjoyed at any time so yeah guys i hope you enjoyed this video and you make these thank you for watching
