Okroshka is a cold soup of Russian origin. This recipe serves 4 people. The classic soup is a mix of mostly raw vegetables (like cucumbers, radishes and spring onions), boiled potatoes, eggs, and a cooked meat such as beef, veal, sausages, or ham with kvass, which is a non-alcoholic beverage made from fermented black or rye bread. Okroshka is usually garnished with sour cream. Later versions that appeared in Soviet times use light or diluted kefir, whey, vinegar, mineral water, or even beer instead of kvass. I will be using this recipe with buttermilk. Okroshka is mostly served in summer because the soup combines the refreshing taste of kvass and the lightness of a salad. Okroshka is always served cold. Sometimes ice cubes are added to served portions to keep the soup cold in hot weather.
Hi guys! Welcome to my channel! Hello everyone!
Today I'm going to show you a super easy and a quick soup recipe.
It's a traditional Russian cold soup called okroshka.
It's made with raw vegetables and buttermilk.
But traditionally it's actually made with kvass
and I will be posting that recipe in the next few weeks.
So make sure you check that out as well. Now let's get started.
We're going to need horseradish, green onion,
ham, cucumber, kefir or buttermilk, sparkling
water, radishes, I've got boiled potato and two boiled eggs.
Cut all your vegetables into nice bite-sized pieces,
we're going to start off with our
cucumber, do
the same with
our radishes,
place
everything
into a bowl.
What I love about this soup
is that you can prep everything way in advance, so once you've
prepped all your vegetables, mix them in,
we're not going to season them at all, we're
going to place them in the fridge
and just before serving you would take a
bunch of the vegetables put it in a plate and add them your kefir and
mineral water and season it well
so we're going to serve one portion and the
rest I'm going to keep it tomorrow
