Chinese Beer-Braised Chicken Feet | Sticky & Fall-Off-the-Bone

Asian cuisine recipes

Chinese beer-braised chicken feet — sticky and fall-off-the-bone. Trim the nails, halve the feet, and start them in cold water so the blood draws out slowly. Blanch with Sichuan peppercorns and cooking wine, then stir-fry with aromatics, three spoons of light soy and one spoon of dark soy. Half a can of beer (about 150 ml) lifts the off-smell and adds aroma; hot water to cover, then lid on low heat. Twenty-five minutes for a bit of chew, thirty-five for soft and tender — larger feet need more time. Finish in lard with garlic and xiaomi chili, then coat and plate.

INGREDIENTS
Chicken feet
Star anise, dried chili, ginger, Sichuan peppercorns, cinnamon bark, bay leaf
Cooking wine
Light soy sauce — 3 spoons
Dark soy sauce — 1 spoon
Beer — half a 300 ml can (≈ 150 ml)
Hot water (enough to cover)
Lard
Garlic
Xiaomi chili (bird's-eye)

STEPS
1. Trim the nails. Halve each foot through the joint.
2. Start in cold water. Blanch about 3 minutes so the blood draws out slowly (watch for the foam).
3. Add Sichuan peppercorns and a splash of cooking wine, then the rest of the spices: star anise, dried chili, ginger, cinnamon, bay leaf.
4. Drain and rinse.
5. Oil the wok, toast the spices, then in go the feet.
6. Season with 3 spoons of light soy and 1 spoon of dark soy.
7. Pour in half a 300 ml can of beer (about 150 ml). It removes off-smell and adds aroma.
8. Add hot water to cover. Bring to a boil, then low heat with the lid on.
9. Fire: about 25 minutes for chewy; about 35 minutes for soft and tender. Larger feet need more time.
10. Open the lid and reduce the sauce.
11. In a little lard, fry garlic and xiaomi chili until fragrant. Return the feet and coat well.
12. Plate. Soft, sticky, falling from the bone.

WHY IT WORKS
Cold water draws the blood out slowly — starting hot seals it in. Beer (half a can) cleans the off-smell and leaves aroma. The lid time is the real choice: shorter for chew, longer for soft; big feet just need more. A final pass in lard with garlic and chili wakes the sauce back up before you plate.
