Thoa I VIETNAM STREETFOOD
hi everyone and welcome back to my channel with that just around the corner today we're going to
make banh chung the most iconic new year rice cake from northern vietnam banh chung has always been
my favorite because it keeps things simple and traditional letting each ingredient shine on its
own meaning no coconut milk no fish sauce the best part of the day no more 12 hours of cooking
just around one and a half hour using an instant pot let's get started we'll need 750 grams of
glutinous rice and 200 grams of mung beans wash them thoroughly a couple of times then soak them
in cold water for six to eight hours drain well and let any excess water drip out add one tablespoon
of salt to the rice and mix gently for the beans season with half tablespoon of salt
half tablespoon of pepper and two tablespoons of roasted shallots mix well to combine
we'll use about 270 gram of pork belly cut into nine slices marinate the pork with one tablespoon
half teaspoon of chicken powder one tablespoon of pepper and two tablespoons of roasted shallots
mix everything well and let it marinate for at least an hour since i'm in germany i could only
fry frozen banana leaves but they work just fine thaw the banana leaves and clean them thoroughly
with a dry clean cloth before using to make a neatly shaped square rice cake i created a mold
with dimensions of 12 centimeters in length and five centimeters in height we'll cut the banana
leaves according to the mold size in total we'll need six long seeds two square seeds and four
smaller seeds for the corners let me show you a quick demonstration for better visualization
here's an important tip for the four seeds using on the side place the rough side of the leaves
facing inward and the shiny side faces outward for the top and bottom layers of the cake use the
shiny side of the leaves as well this way the cake will have beautiful green color once cooked the
four smaller seeds are used to seal the corners of the cake preventing the rice from popping out
when cooking start by placing a fitted seat at the bottom spread the cup of rice evenly
making the middle slightly thinner than the edge this helps create an even shape when folded
next add half cup of beans in the center and place three pieces of pork on top of the beans
then cover the pork with the other half cup of the beans finally layer another cup of rice
over pork and beans making it evenly it is important not to press the rice down too firmly
leave the rice some room to expand as it cooks then cover the rice with the other square seed
of the banana leaf to finish fold in on the sides of the banana leaves as I'm demonstrating on the
screen then flip the cake and repeat the same steps for the other side carefully remove the mold
before tightening a good string this step is a bit tricky so if you find it challenging
I recommend treating it like wrapping a gift start by tying a cross to secure the center
then work on the remaining string to hold everything in place just remember not to
tie it too tightly as the rice will expand while it cooks before cooking place some
leftover banana leaves at the bottom of the instant pot lay the cake in then fill the pot
with hot water to the safety level set the cook function for 40 minutes once done to open the
pot immediately let it rest for 10 minutes then press the release valve to release the pressure
careful with the hot steam next turn the cake upside down to ensure the top side is cooked
evenly in water add water to the maximum level pressure cook for another 40 minutes just like
before let it rest for an additional 10 minutes after cooking once done we can take out the cakes
but be very careful as they will be extremely hot the smell of steamed banana leaf is simply
irresistible and wow the cakes are perfectly square shape now let the case soak in cold water for a
few minutes we are almost done for the final step place some weight on top of the case overnight
or for about eight hours to drain the excess water our Banh Chung deserve a good rest now
see you tomorrow for the bake review i have left the Banh Chung rest for two days now comes the
exciting part let's taste it the rice is perfectly soft and glutinous with flavors of the meat
mung beans pepper roasted shallots and banana leaf coming together deliciously
and it's perfectly paired with you mom our traditional pickled
carrot and radish i'll leave in the description box the recipe for you mom
for you to try at home i hope today you have enjoyed learning about our traditional New
Year's cake wishing you and your family a joyful and prosperous new year
