Hi everyone! Welcome back to my channel. Today's video I'm going to show you guys how to make
vegan Japanese curry. If you would like to see more savory recipe videos like this in the future,
please give this video a thumbs up and leave any comments down below. Let's get started with this
video. Peel and chop three medium carrots. Peel and dice one large rusted potato. Peel and dice
one fuji apple or gala apple. Peel and dice one large onion. In a large pot, start with
two tablespoons of water over medium heat. When hot, add onions and carrots. Saute until onions
are soft, about five minutes. Add a tablespoon of water or more to prevent sticking. Add one and a
half teaspoons of grated ginger. Three garlic cloves minced. Saute for one minute until very
fragrant. I added another two tablespoons of water to prevent sticking. The little bit of water helps
steam and cook the vegetables and any of the extra will just evaporate. Add four cups of vegetable
broth, one large rusted potato, one fuji or gala apple, three tablespoons of tomato paste,
one tablespoon Japanese curry powder. This is the brand that I used. I got mine from an
oriental grocery store. Not all curry powders are created equal. By this I mean the quality,
the blend, and the age of the spices. In my opinion, Japanese curry powder has more flavor
and is milder than regular curry powder. Use your favorite brand of curry powder if you can't find
the one that I'm using. One tablespoon vegan Worcestershire sauce. This is the brand that I
used. Raise heat to medium high and bring to a simmer. Then lower heat and simmer uncovered for
20 minutes or until potatoes and carrots are soft. This is what it looks like after 20 minutes.
Mix one tablespoon of cornstarch with one tablespoon of water in a small bowl then add
to pot and stir. Stir in one and a half cups shelled frozen edamame that has been thawed.
Then allow to simmer for two minutes to thicken the curry. Add a quarter teaspoon of salt and
pepper. You can also add more curry powder if you would like. Serve with rice, garnish with
crushed sesame seeds, and chopped green onions. Thank you guys so much for watching! If you
