Hey guys, it's Jasmine and welcome to my what I ate in a day video.
So for breakfast, I made a granola bowl. I start off by cutting up some fresh fruit.
I'm using blackberries and raspberries here but you can use whatever fruit you like.
In a bowl, I have some granola and some vegan vanilla yogurt.
To that, I'm gonna spread it out and then add the berries I chopped up earlier
along with some cute mini banana stars. I use a mini star cutter to make these.
And then I added some pecans along the side because I thought it looked a little bit plain.
And here you have your granola bowl. This is super easy and super yummy.
For lunch, I made some oven baked fries.
Here I am cutting up four yellow potatoes into fry-like shapes.
You could also use russet potatoes here as that would taste really good as well.
Toss them into a bowl and then I added some nutritional yeast.
I recommend adding about three spoonfuls of this.
And then added some garlic powder, paprika, dried basil, cayenne pepper,
and a little bit of pink sea salt. I basically just eyeballed these spices.
Put your potato fries onto a parchment lined baking sheet and then bake them in a 425 degree
oven for around 25 to 30 minutes or until they are cooked and tender.
Meanwhile, I'm going to be making a maple mustard and dill sauce.
I'm using this dill sauce that I got from Ikea.
I'm also going to add a little bit of maple syrup.
Mix that together. By the way, this dip is really good.
And I also served it with some ketchup. This is basically one of my favorite meals.
And for dinner, I made a buddha bowl.
To make the roasted barbecue chickpeas, I'm going to add one can of chickpeas
and your favorite barbecue sauce. Toss that together and then put it onto a baking sheet
lined with parchment paper. Spread it out evenly and then bake it at 425 degrees for 15 minutes.
In my buddha bowl, I have some diced tomatoes, the barbecue chickpeas, corn, purple cabbage,
cilantro, orange bell pepper stars, and it's all on a bed of rice.
Oh, I also served it up with a lime and some extra barbecue sauce.
