Good morning!
Welcome back to another video.
Today I'm going to be sharing another what I eat in a day, but we're going to do a color
challenge, which means I'm going to be eating only one color for the entire day.
I would not recommend you do this on a regular basis, but it's just a fun color challenge.
And if you haven't seen my previous videos, then I've done blue, green, I think I've done
pink as well.
I'll leave them linked in the description box below, but I love doing these every once
in a while and also explaining to you what some of the benefits are in certain colors
of fruits and vegetables.
So today's color, if you couldn't guess already, is yellow, and it was actually the most highly
requested color on one of my previous videos.
Yellow fruits and vegetables actually contain a phytochemical called bioflavonoid, and this
is sometimes referred to as vitamin P, which is something that helps to break down and
process vitamin C. So you'll also notice that a lot of yellow fruits and vegetables are
very rich in vitamin C. When you think about fruits like lemons, bananas, just fruits in
general tend to be very rich in vitamin C, and that's really essential for glow and immunity
and health.
So things like pineapple, for example, are very, very healing and anti-inflammatory.
Something else that I've kind of noticed is that yellow foods that have a very vibrant
and strong color tend to be very anti-inflammatory.
So for example, like I mentioned, pineapple is very anti-inflammatory.
I remember when I got all four of my wisdom teeth taken out at the same time, eating a
bunch of pineapple really helped me to heal faster.
And things like turmeric, which are very anti-inflammatory for your skin and for your health in general.
So without further ado, let's get to eating some yellow.
All right, I had to tie my hair right after the intro because it's so hot.
We're right in the middle of summer, it's September in New York City, and it is not
only hot but also very humid.
So I think I'm feeling a smoothie bowl.
You guys know I love making smoothie bowls regardless, but I think I'm going to make
something yellow, probably something with a little bit of turmeric in it and tropical
fruits.
But I only have bananas, I think, and I think I have some mango, which is actually orange,
but I may be going to be able to hide it in the smoothie if I add a little bit of turmeric
too.
So let's get blending.
I almost forgot.
I love waking up every morning and having a little bit of lemon water.
It wouldn't be a YouTube video without it, am I right?
I was not prepared and don't have any milk.
I'm just going to make some pistachio milk in my almond cow machine, and I thought I
would show you how I make it because it's super easy.
So these are some pistachios I soaked overnight.
They're just raw pistachios.
I put them in water in the fridge, and then I'm going to put them into this cup and fill
that up and then put the cap on and blend with water.
I put the cover back on, and you're going to see how fast this is.
You just push this button, and it's done, and that's it.
Now you have your milk, and you don't even have to strain it with a nut milk bag or anything.
It all gets trapped in here.
So yeah, it's super easy, and I love doing this when I don't have milk on hand.
It's a little green, but it could pass as yellow, right?
So there's the milk.
It actually does look kind of yellow to me.
We're going to make a smoothie.
I'm obviously going to use some banana.
I'm going to use frozen banana, some mango.
It's going to be kind of a lame smoothie today.
I'll be honest, these mango pieces, most of them are a little bit more orange than yellow,
but since I don't have any pineapple on hand, we need to add a little bit something more
to the banana, so I'm going to add a little bit of mango.
There it is.
It's time to decorate the smoothie bowl.
I'm going to use some coconut flakes, as always.
I have some yellow fruit here.
These are just little plums that I picked up at the market last week, and then I have
some nasturtiums.
These are a little bit more orange, so maybe I'll leave them out, but time to top.
Oops, I dropped a leaf in there.
Here's our finished smoothie.
It's definitely a little bit more orange than the nasturtium petals, but the smoothie itself
is quite yellow.
I added a couple things, which I'll tell you about while I eat this.
I added a little bit of turmeric, or tumeric, or tumeric.
People say it different ways.
I say turmeric.
I don't know what the right way is.
If you know, let me know in the comments below, but as you can see, the color on its own is
actually a little bit orangey, more so than yellow, but when you add it to food, it actually
comes out as a very vibrant yellow, because usually you don't add too, too much.
It has a very strong, spicy taste to it, and then I also added just a crack of black pepper.
For lunch, I'm going to make something super simple.
I'm going to make a tofu scramble.
I've shown this recipe on my videos before, so I'll link a full, more detailed one below,
but I'm just going to show you really quickly.
Basically, you take some firm tofu, and you kind of crush it up.
You can do it with a fork if you want, probably neater than me using my hands here, but just
crumble it up to kind of these chunky pieces.
If you prefer it a little bit thicker, that's fine too.
You can leave it in chunks, and it's going to break down as you cook it as well, so leave
it a little bit thicker than you actually want it.
What I like to do is just throw all the spices in the pan, and then start cooking it, so
I like to start with turmeric, so this is for color primarily.
Just add a little bit of that, and you can just adjust this to your own taste.
I like to add onion powder, garlic powder, a little bit of cayenne, and nutritional yeast
for that savory flavor.
The key ingredient is this black salt.
Mine looks a little scary right now, but basically it smells and tastes like an egg.
It's very sulfurous.
If you don't have this, that's okay, but this is really going to help it give it that eggy
kind of smell, and then last but not least, I'm going to add some black pepper and a little
bit of pink Himalayan salt, and then I'm just going to put that over the heat.
You can add whatever else you'd like here.
My suggestion is with anything vegan, and particularly with scrambled eggs, make them
the way you would make your own eggs.
If you like to make your eggs with a little bit of spinach or onion or peppers, then definitely
add it to your vegan scramble.
It's all about mimicking the flavor, so just do exactly what you do with your regular eggs,
and do the same with your tofu scramble.
I'm going to bring this over the heat, and then cook it down, and it's going to become
a really nice yellow color.
This is how it comes out.
All I did was put it into a little bowl, and then I'm going to serve it with some gluten-free
toast as well.
I would normally add some, like, mushrooms and avocado, but neither of those things are
yellow, so I like to have it on toast, but yeah, I'm really good with avocado.
And the full recipe I will link in the description box, but it's a really easy way to get some
nice protein in, and it's yellow.
So that's my lunch, and I'll see you guys when I eat dinner, or a snack maybe.
I decided to have a little snack, and I had some yellow carrots in the fridge in the bag
of rainbow carrots that I have, so just to show you, this is a regular orange carrot,
and then the yellow one, so there's definitely a little bit of a difference.
They taste almost the same, and I just served it with a little bit of Anistan cheese.
It's a vegan cheese.
It's one of my favorites, and it's also yellow.
Yum.
For dinner, I decided to make something super quick.
I made a yellow curry, and then I added some lentils as well as some roasted corn, and
I served it with some turmeric quinoa on the side, so it's a little bit yellow in color
as well.
Honestly, this dish was really hard to photograph, and it didn't come out the nicest looking,
so I thought I would make another option just to be able to take some photos of another
dinner.
As an alternate yellow meal, this is definitely a lot more yellow.
I'm going to do some yellow baby potatoes, and then I'm probably just going to put cheese
sauce on top of it.
Sometimes I just have seasoned potatoes as a meal, but these are super cute in size.
I'm just going to cut them into little wedges and then put them in the oven.
The fries, they just came out of the oven, and I seasoned them with onion and garlic,
and then I'm going to put a little bit of this siate cashew queso on top, which is kind
of yellow.
It's a little orange, but I think it's going to show up a little bit more yellow, so it's
really, really good.
It's vegan, of course, and the ingredients are pretty amazing.
Yeah, all real food.
So that is everything that I ate today.
I hope you guys enjoyed this video.
I tried to keep things not only yellow, but also somewhat nutritious as well, which is
something that's challenging to do sometimes when you're doing a challenge like this.
If you like this video, you can watch some of my previous videos where I eat some other
colors, but I hope you enjoyed this one, and I will see you in another one very soon.
If you have recommendations for another color, I know there was one that was very popular,
a request for orange, so maybe I'll do that one next, but let me know what you think below,
and I will see you in another video soon.
Bye!
