Hey everyone this is Alessandro Bruxel from Home Chef Seattle. Today I'm going to be showing you
how to make some dehydrated and candied citrus slices using your oven. We're going to be using
some sugar which adds the candied shine element to it, but you can follow the exact same process
without the added sugar if you wish. These are a perfect garnish for desserts, cakes,
drinks, they can also be eaten as a snack. I hope you guys enjoy it and if you do,
please don't forget to press the like button below. Let's get started. Start by washing the
citrus fruits. Since we're going to be using it with the peel, we want to make sure that
they're nicely washed and preferably use organic fruits. Next, slice the fruits. Try to slice them
as thin as possible, about two millimeters in thickness. You can also use a mandoline if you
wish. The thinner the slices, the faster they will dehydrate. I'm using four different citrus fruits,
a lime, a lemon, a blood orange and a navel orange. Once the fruits are all cut, remove any seeds that
are left on the slices. Then add some sugar to a small dish. Line a baking tray with a non-stick
silicone mat, you can also use parchment paper. Lightly coat the citrus slices with the sugar
and arrange them on the baking tray. If you are only dehydrating the fruits without candying them,
you can skip this step. Next, cover the fruits with another silicone mat or parchment paper
and another baking tray to weight it down. Place it in a preheated oven at 250 fahrenheit,
120 celsius for 15 minutes. Once 15 minutes have passed, remove it from the oven, then
remove the top tray and top silicone mat. Dry any excess liquid between the slices with paper towel.
After this initial baking, the peel and rind of the fruits should have started to become
translucent. Lower the oven temperature to 175 fahrenheit, 79 celsius, and place the fruits
back inside. Dehydrate between two, two and a half hours, depending on the thickness and size of the
slices. Once the fruits are dry to the touch, remove them from the oven. If using different
kinds of citrus in one tray, like I am, you may need to remove the smaller slices first.
Carefully remove the slices from the mat and place them on a wire rack to cool. The fruits
will still be somewhat flexible at first when still warm, but will harden as they cool. I remove
my lemon and lime slices first as they were done, and then return the oranges back to the oven for
an extra 30 minutes. And these easy candied citrus slices are done. These make for great garnish and
are perfect to top cakes, desserts, drinks, but they're also great on their own or dipped in
chocolate. I hope you have enjoyed the recipe, please don't forget to like it, leave a comment
