Join me for an afternoon of cozy fall decorating in our guest bedroom at our little farmhouse on the northern plains of Iowa. I'll be making a hearty, homemade marinara sauce for guests, and I’ll also be sharing lots of little ways how you can help your guests feel warm, welcomed and relaxed at your home during the season of autumn. I'm so glad you've stopped by for a little visit and hope all is well! Visit our homeschool channel here! https://youtu.be/khEV1YTQJTA

Marinara Sauce Recipe: Fresh Tomatoes (San Marzano or paste tomatoes are perfect for making sauce yielding a less watery sauce. Juicy tomatoes may provide more water in the sauce, but if that’s the case you can just cook it on the stove longer! We used a mix of San Marzano’s, Amish Paste, Bradleys and Hungarian Hearts, pretty much what we have left growing in the garden:)

If you’re using canned tomatoes, then I recommend using whole peeled tomatoes for this recipe! You’ll need 2 (28) ounce cans.

Ingredients:
5 lbs Tomatoes, halved or quartered with seeds and core removed. (I can’t make the time to peel tomatoes so I use an immersion blender at the end and they disappear into the sauce. Besides, tomato peels are a great source of antioxidants!)
Or 2 (28) ounce can of tomatoes
¼ cup of good extra virgin olive oil
1 large onion
6-10 cloves of garlic
1 tbsp garlic powder
1 tbsp granulated onion or onion powder
1 tsp dried oregano
1 tsp dried thyme
2 dried bay leaves
1 tsp dried parsley
½ tsp cumin
1 tsp salt and freshly ground pepper
¼ cup balsamic vinegar
2 tbsp sugar, plus more for when you roast your tomatoes
An additional 1tbsp of good extra virgin olive oil
Parmesan rind
½ cup of fresh herbs, chopped (I used fresh basil and Italian Parsley)
Optional: an herb bouquet of fresh thyme, rosemary and oregano

If using fresh tomatoes, preheat the oven to 350 degrees. Line two baking sheets with parchment paper. Spray with a little cooking spray. Place your halved, (or quartered) cored and seeded tomatoes on the baking sheets. (Small tomatoes I halved, larger ones I quartered.) Drizzle tomatoes with a generous amount of olive oil as well as 1 Tbsp of sugar, a little bit of salt and mix with the tomatoes. Roast for about 25 minutes.
Saute onion in ¼ cup of olive oil on low to medium heat for about 8-10 minutes or until softened. I love to season as I go, so if you like, you can add a pinch of salt and pepper into your onions. Add your roasted or canned tomatoes, stir, and add all of your dried spices plus salt and pepper. Let simmer for about 5-10 minutes, or until you finish chopping your garlic. Next, add your fresh garlic, balsamic vinegar, sugar and olive oil. Stir and let simmer for about thirty minutes (45 if your sauce seems too watery.) During the last 10 minutes of cooking time, add the parmesan rind and bouquet of herbs, if using. When finished cooking, move pot away from heat. Remove your bay leaves, parmesan rind, and bouquet of herbs. Blend with an immersion blender until the skins disappear. Voila and Bon Appetit!
