Here's what I eat in a day. I have Celiac Disease and I eat a lot of plant based foods at home but I don't use labels to describe my diet.

Hey guys!
Welcome back to my channel.
Today I'm sharing what I eat during the day while I'm at home working and coaching clients.
So the first thing that I do when I wake up is I pour myself a large glass of water to
rehydrate my body.
I also spend some time feeding and playing with my new dog.
This is Mickey.
We've had him for almost three months now and he's so much fun and a learning experience
for us because we've never had a small breed before.
And then I make my warm lemon water.
You guys know I do this every morning so here I am making myself a glass and a glass for
Matt.
And I use a juice from half of a lemon for each of us.
While I'm drinking my lemon water, I like to spend at least ten minutes reading and
journaling and writing my to-do list and just getting ready for the day ahead.
Doing this helps me stay motivated and focused throughout the day.
So after that I go and get ready for my day and I do my hair and makeup and get dressed
and then I make my breakfast.
This morning I was having a smoothie for breakfast so I put some spinach in the blender with
a cucumber, a mango, some lime juice.
I'm going to be doing a new smoothie recipe video very soon.
It should be up next week.
And then I added three tablespoons of hemp seeds for some protein and finished it off
with some water and some ice.
And I like having smoothies for breakfast because they're great if you're running late
or if you need to make something that you can take with you on the go.
I always make a really large smoothie and drink it while I start working for the day
and I normally am still drinking it by the time I have my first client.
Lunch always varies for me depending on the day and what type of leftovers I have.
So I'm going to speed this up and go a little bit fast but this day I was making a salad.
I prepped some quinoa and black beans earlier in the week.
And so I just washed off some greens.
I got this huge bag of organic greens at Costco which I thought was really great because it
was a really good deal.
So I'm rinsing those off and building my salad.
I cut up some cucumber.
I also put some, like I said, quinoa, some black beans and then I tossed that, put some
flax oil and lemon juice.
I also had some cilantro that I put in there and avocado.
And then I sprinkled some nutritional yeast flakes on top and some crushed red pepper.
I'm a really big fan of using leftovers in salads for lunch for the next day.
I'm going to try just making it as simple as possible.
And I didn't have a snack this day but I had this chai decaf iced tea and I forgot to bring
my camera with me so here's a picture of that.
For dinner I made one of the tasks that is for Ruby, the plant based cooking school that
I'm in.
So this is my mise en place.
I'm slightly behind in this school so I'm trying to catch up as fast as possible.
And I just made that with this organic red lentil pasta that I love.
This is a gluten free pasta.
So here I am sautéing the shallots and I also had to, I had to sauté this, the assignment
was to do it without using oil so this is a no oil dry sauté.
So I'm adding shallots to the pan.
I also added minced garlic and some wild mushrooms.
I just got a blend of mushrooms from Whole Foods.
And then once those were starting to caramelize and stick to the bottom of the pan I had to
deglaze the pan with some white wine which I did not show on video because I had to take
a photo of that for the assignment.
Here's what the finished dish ended up looking like.
I just tossed the mushrooms with the pasta and I added some peas.
I also tossed some greens and flax oil and lemon juice as a side salad.
And last but definitely not least I had these soft bake double chocolate brownie cookies
for dessert.
They are gluten free, dairy free, free of any allergens and they are amazing.
So thank you so much for watching this video.
I hope that you enjoyed and don't forget to subscribe if you're not already and I will
see you soon.
Bye!
