The Thai-inspired curry soup is one of my favorite dinners right now.
So I had to share this very simple and quick recipe with you.
I start with my vegetables.
You can use the vegetables you want.
Personally, I make it very simple with, to start with,
a carrot that I peel and cut into large slices.
And a half onion that I mince, not too fine.
I heat a pan with a little oil.
And when the oil is hot, I add my vegetables.
While the vegetables are slowly browning, I cut a little Chinese cabbage.
You can add it at the beginning of cooking, but for everything that is cabbage or mushrooms,
I prefer to add them later to keep some texture.
When the first vegetables are browned, I add the cabbage and let it cook for a minute.
Then I put my spices in it.
Sweet curry, garlic, turmeric, ginger and pepper.
You can use fresh spices with fresh garlic and ginger if you have any.
But I like to keep this recipe very simple by using spices in powder for once.
I then pour about 700 ml of water.
A cube of broth or salt.
I mix well.
Then I let it boil.
When the soup starts to boil, I turn off the heat.
And I end up adding half a can of coconut milk.
And a lot of lemon juice.
All that remains is to taste and adjust.
I'm going to add some lemon to have a very fresh taste.
Usually there is lemongrass in everything that is curry.
But since I never have any, I often put lemon instead.
To accompany the soup, you can choose to use rice noodles like these, which are flat.
Or rice vermicelli.
It is found in the spices of the world, but I also see it very often in large surfaces.
Today I decided to use the noodles.
Usually I'm happy to pour the soup very hot into empty dishes.
And to let the noodles rehydrate directly in it.
But for the photos I wanted very white noodles.
So I rehydrated them separately in boiling water.
All that remains is to serve.
The quantities are perfect for two people.
And the soup is better to taste very hot.
It is a simple dish and full of flavors that can easily be made a little fancier.
Well presented with a little parsley or coriander.

I hope you enjoyed the video.
I'm still adjusting the lighting of my new kitchen.
So I'm sorry if it's not as pleasant to watch as usual.
I do my best to fix it very quickly.
Don't forget to put a blue thumb and comment to support me.
See you next week for a new video.
So in the meantime, I kiss you and see you soon.
