Join us on a captivating journey through the art of crafting Libelle Sparkling wine with Halter Ranch's Winemaker, Kevin Sass. Named after the German translation of "dragonfly," Libelle is a tribute to a painting created by proprietor Hansjörg Wyss' father for his beloved wife, Alice Halter.

The disgorging and the dosage process are the final steps in our Lee Bella Pickpool Blanc
sparkling program. The bottles are taken out of the cages neck down and they're put inside a
carousel. That carousel has liquid nitrogen that's at negative 29 degrees celsius. At that point,
the bottles are taken out, they're turned upright, and they're put on a conveyor belt.
The conveyor belt works its way down the system and the first step is to get the crown cap off.
The bottle is turned diagonal, the crown cap is taken off,
and an explosion occurs of all the yeast that comes out of that neck.
The bottle is then put upright, it goes to the next spigot, puts in a little bit of a dose of
sugar, and we use that to kind of level and balance the sparkling wine. After that, the
wine is topped back off to 750 milliliters and then it's turned upright. The next step is the
cork gets put into the bottle, followed by a cage. The bottle is turned upside down to mix
that dosage into place and then eventually is dried off. The final step in the process is
labeling. The bottles are taken, they're set down in the conveyor belt, a machine comes back and
tightens down that foil on top of the cage. The label is then applied, that beautiful Lee Bella
label, and ultimately the bottle is put back into storage for another two to three months
and then finally into your hands for enjoyment.
