Hi everyone, welcome to Cook Stacey Cook.
Have you tried Taiwanese Egg Pancake before?
Today I will show you how to make this easy, savory and fulfilling breakfast item.
Let's get started.
These are all the ingredients we need.
You probably already have them at home.
A complete list of the ingredients is in the video description.
In a mixing bowl, add all-purpose flour, cornstarch and salt.
Mix these dry ingredients and then add a little bit of water and stir it to make a batter.
Add the water a little bit at a time to prevent clumps.
After you added all the water, the batter looks like this.
I put half of the green onion I prepared to the batter and the other half to the eggs.
If you like green onions, you can add more.
Also add a touch of oil.
Give it a little mix.
Now beat up some eggs.
I use 4 eggs here.
Season the eggs with a bit of salt.
Add the rest of the green onions to the eggs.
Mix them together and we are ready to cook.
Use a non-stick pan over medium low heat.
Pour just enough batter to cover the pan.
Always stir the batter before using it.
Rock the pan to spread the batter evenly.
If there are any holes, just pour a few drops of batter to fill them in.
Pan fry until all the batter solidifies.
Then pour some eggs over pancake.
You can put more eggs if you like.
This recipe is very flexible.
Drizzle a little bit of oil around the edge and put the lid on for about 1 minute.
Look, the bottom side is golden brown.
Now we can flip the pancake over.
Pan fry until both sides are golden brown.
This is a very simple breakfast pancake.
You can roll it out like this and serve.
If you like more crispy edges, pan fry both sides a little bit longer.
Sometimes I also add ham and cheese.
Wrap them inside the pancake just like we did earlier.
Let it pan fry a bit more to melt the cheese.
And you have delicious ham and cheese egg pancake.
Another favorite in my house is to add mayonnaise and Taiwanese dry shredded pork.
Roll it up and breakfast is ready.
Pair this up with my favorite coffee and this is a beautiful start to my day.
I hope you give this a try.
Let me know if you like it.
I will see you next time.
